ASIAN MARINATED FLANK STEAK
I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

- Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
- Add steak to bag, remove all of the air, and seal.
- Marinate for up to 24 hours, turning bag occasionally.
- Remove meat from marinade, and grill or broil to desired degree of doneness.
- Thinly slice steak against the grain and serve.
- To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
- You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!

Steps:
- Mix marinade ingredients in a container, and add beef. Turn the meat to ensure it is coated on all sides, and place in refrigerator. Marinate 4-5 hours or overnight, turning once or twice to ensure the marinade gets all sides evenly.
- Remove steaks from the fridge one hour before cooking to let them come to temperature. Preheat your grill to medium high with another section at medium low.
- Sear beef 3-4 minutes per side on medium high. Move to medium low to finish cooking until internal temperature reaches 145 degrees.
- Remove beef and let it rest, tented by tin foil for 5-10 minutes. Once the meat has rested, slice against the grain for serving.
- Serve with rice, julienned carrots and sliced green onion and vegetables of your choice.

- Remove steak from marinade and discard remaining marinade.
- Heat a non-stick skillet over medium-high heat; cook steak just until outside is browned and seared, about 1 minute per side. Remove skillet from heat and allow steak to rest before cutting, 3 to 5 minutes. Sprinkle sesame seeds over steak.

SOUTHEAST ASIAN STEAK SALAD
Steps:
- Tear romaine into pieces into a bowl. Halve cucumber lengthwise and seed. Thinly slice cucumber crosswise and add to romaine. Chill romaine mixture, covered. Mince shallot, jalapeño, and garlic (wear rubber gloves when handling jalapeño) and in a large bowl stir together with lime juice, soy sauce, 1 tablespoon oil, fish sauce, and sugar until sugar is dissolved.
- Pat steak dry and season with salt. In an 8- to 10-inch heavy skillet heat remaining tablespoon oil over moderately high heat until hot but not smoking and sauté steak 4 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 5 minutes.
- While steak is standing, stack mint leaves and thinly slice. Toss mint with romaine mixture and all but about 2 tablespoons dressing until combined well. Divide salad between 2 plates and slice steak. Toss steak with remaining dressing and arrange on salads.
ASIAN PORK STEAKS (MARINADE)
My Vietnamese fiance taught this to me. It has a strong flavor, so I serve it over a bed of rice with steamed veggies on the side. Regular Soy sauce works fine, but I prefer the low-sodium to ease the saltiness. You can fry, grill or broil the steaks, depending upon your taste. Very simple though! Prep time includes marinating, and cook time is for frying the steaks. --ETA-- I've made these as a dump recipe, and they worked great! I pour all the ingredients into a freezer bag, and when I wanted to cook them, I let them thaw overnight in the fridge. NOTE-- When you marinate them in a zippered bag, you only need half of the sauce to cover all the pork.

Steps:
- In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil, and Tabasco sauce; mix well to blend. Now add beer, and stir lightly to mix.
- Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish, and pour marinade over. Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over, and repeat punching holes.
- Cover with clear wrap or foil, and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.
- Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes for medium-rare, depending on thickness. Test for doneness by cutting into the middle of the steak.
