FRESH APPLE CAKE

- For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
- Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
- Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
- For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
- Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.
APPLE CAKE WITH BUTTERMILK SAUCE
I wish I could tell you this cake is a "keeper"...but in our family it never lasts long enough for me to find out! I prefer to use Cortland apples when I bake this cake, but any firm baking apple will work.

Fold in apple, walnuts and coconut. Pour into a greased and floured 10-in. tube pan. Bake at 325° for 1-1/4 hours or until the cake tests done. Invert cake onto a large plate or platter. Deeply puncture the top of the warm cake with a skewer or pick., In a small saucepan, bring all sauce ingredients to a boil, stirring frequently. Immediately spoon 1-1/4 cups of sauce slowly over the top of the cake, then pour the remainder down the sides. Cool. Serve with whipped cream if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Beat white sugar and 1 1/2 cups butter together in a bowl with an electric mixer until light and fluffy, about 10 minutes. Add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next.
- Sift flour, salt, and baking soda together in a bowl. Add 1/3 of the flour mixture to the butter mixture; mix well. Pour in 1/2 the buttermilk and beat until combined. Repeat adding the remaining flour mixture and buttermilk, beating well after each addition, and ending with the flour mixture. Stir lemon extract into batter. Pour batter into prepared tube pan.
- Reduce oven temperature to 325 degrees F (165 degrees C).
- Bake in the oven until a toothpick inserted into the center of the cake comes out clean, 60 to 75 minutes. Cool in the pan for 10 minutes before removing to a cake platter or plate.
- Beat confectioner's sugar, lemon juice, 2 tablespoons butter, and lemon zest together in a bowl until glaze is smooth. Pour about half the glaze over the cake; let cool. Pour remaining glaze over the cake.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.
- Bake in the preheated oven for 75 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Pour glaze over cake and let stand for 1 hour before turning out.
- To make the glaze: In a saucepan, combine butter, 1 cup sugar, 1/2 teaspoon baking soda and 1/2 cup buttermilk. Bring to a rolling boil and pour over cake.

SOUTHERN APPLE COCONUT CAKE WITH A BUTTERMILK GLAZ
Steps:
- 1. Preheat the oven to 325 degrees/ 315 convection. Generously butter a 10" tube pan with a removable bottom. Line with a cutout of parchment paper and then butter again. Sprinkle with flour and remove any excess. Place the tube pan on a large cookie sheet. 2. PREPARE THE APPLES: In a large mixing bowl add the tablespoon of orange juice. Peel, core and chop the apples; toss in the orange juice. Set aside 3. MAKE THE BATTER: In a large mixing bowl, sift together the flour, baking soda, cinnamon and salt. Set aside. 4. With an electric mixer on medium speed, beat the eggs, sugar, canola oil and orange juice until smooth and lighter in color; about 3 minutes. 5. Lower the speed and slowly add the flour mixture. Beat just until smooth and incorporated. 6. By hand, fold in the coconut and pecans (make sure they are cooled). Gently fold in the apples. The batter will be very thick. 7. Spread the batter evenly into the prepared tube pan and smooth the top. Bake for about 1- 1 1/2 hours or until a tester comes out clean. Remove from the pan after cooling 15 minutes. 8. MAKE THE GLAZE: While the cake is baking make the glaze. In a large saucepan over medium-high heat, melt the butter and then stir in the sugar. Whisk in the buttermilk, baking soda and vanilla and bring to a rolling boil; stirring constantly for about 1 minute. Pour the sauce over the warm cake. Let cool 1 hour before serving. NOTE: You can bake the cake 1 day in advance (store wrapped at room temperature)-- then make the glaze and pour over the cake; let stand 1 hour before serving.

- Blend 3/4 cup brown sugar, oil, egg & vanilla in large bowl.
