Crazy Good Southern Baked Ham image

This is a mash up of two recipes with coffee added to give it a kick. It doesn't taste like coffee but I think it gives it a lift.

2 pounds boneless picnic ham, or more to taste
sea salt to taste
½ cup brown sugar
¼ cup sorghum syrup
2 tablespoons brown mustard
1 tablespoon brandy
1 tablespoon dry mustard
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
24 whole cloves
2 cups brewed coffee, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place ham fat side-up on a rack in a roasting pan. Score ham fat in a crisscross design; season with sea salt.
  • Mix brown sugar, sorghum syrup, brown mustard, brandy, dry mustard, cinnamon, nutmeg, and ginger together in a bowl for the basting mixture. Brush 1/3 basting mixture on top of ham and stick cloves into fat. Pour coffee into bottom of roasting pan.
  • Cook ham in the preheated oven, brushing with remaining basting mixture every 30 minutes, until an instant-read thermometer inserted in the center reads 165 degrees F (74 degrees C), about 2 hours total.

Southern Baked Ham image

This is the ham I use for the big holidays. Everyone looks foreword to it. My secret is that it's so easy. I pour the extra sauce in a small dish and use it for the ham--or my favorite is to pour it on homemade mashed potatoes. It's a VERY sweet sauce!

any kind ham (I suggest boneless and not fatty)
1 1/2 cups yellow mustard
1/4 cup honey
1 1/2 cups granulated sugar
1 1/2 cups light brown sugar

Steps:

  • In a bowl mix together mustard and honey well.
  • In a separate bowl mix together sugars.
  • Coat ham with mustard mixture.
  • Coat ham with sugar mixture.
  • Bake as directed on ham package.
  • Mustard and sugar will turn into a dark brown sauce. When that happens, start basting the ham every 15-20 minutes until it's done.

  • Remove the ham from the refrigerator and place in a roasting pan fat side up. Bake ham for 1 hour, or until the ham is warm.
  • Meanwhile, in a medium sized saucepan over medium heat, combine syrup, brown sugar, mustard, vanilla, ginger root, and cayenne pepper. Allow the glaze to bubble and simmer for about 10 minutes or until it begins to thicken. Allow the mixture to cool. After 30 minutes, remove the ham from the oven and brush ham liberally with the glaze. Allow the ham to cook for 15 minutes and brush with glaze again. Cook ham for another 15 minutes and remove from oven. Allow the ham to rest for 20 minutes and drizzle some of the remaining glaze over the top of the ham.
