2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

  • Brown 4 slices diced bacon in a pot; drain on paper towels. Add 1 cup diced onion to the pot and cook 3 minutes. Add 1 pound thawed frozen collard greens, 1 cup chicken broth and water to cover; simmer 20 minutes. Stir in the bacon, some butter, salt and pepper.

1 ½ quarts water
1 ½ pounds ham hocks
4 pounds collard greens, rinsed and trimmed
½ teaspoon crushed red pepper flakes
¼ cup vegetable oil
salt and pepper to taste

Steps:

  • Place the water and the ham hock in a large pot with a tight-fitting lid. Bring to a boil. Lower the heat to very low and simmer covered for 30 minutes.
  • Add the collards and the hot pepper flakes the pot. Simmer covered for about 2 hours, stirring occasionally.
  • Add the vegetable oil and simmer covered for 30 minutes.

There are many delicious ways to cook collard greens, but this is the way we do it in the South.

12 hickory-smoked bacon slices, finely chopped
2 medium-size sweet onions, finely chopped
¾ pound smoked ham, chopped
6 garlic cloves, finely chopped
3 (32-oz.) containers chicken broth
3 (1-lb.) packages fresh collard greens, washed and trimmed
⅓ cup apple cider vinegar
1 tablespoon sugar
1 teaspoon table salt
¾ teaspoon pepper

Steps:

  • Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.
  • Add onion to stockpot, and sauté 8 minutes. Add garlic and ham, and sauté 1 minute. Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Reduce heat to medium-low, and cook 2 hours or until desired degree of tenderness.

3 smoked turkey wings
12 bunches collard greens, washed and cut
1/2 cup diced white onion
1/2 cup diced green bell pepper
1/2 cup diced roasted red bell pepper
1 tablespoon butter-flavored oil
1/2 tablespoon salt
1/2 tablespoon sugar
1 teaspoon garlic powder
1/2 teaspoon smoke flavoring
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Boil the smoked turkey wings in a large stock pot with 1 gallon of water for 20 minutes at medium heat. Add the collard greens to the pot and let them cook down for 10 to 15 minutes. Add the onions, green peppers, roasted red peppers, oil, salt, sugar, garlic powder, smoke flavoring, black pepper and cayenne pepper and stir. Cook over medium heat until the collards are tender, about 1 1/2 hours.

2 pounds collard greens, rinsed
1 tablespoon canola oil
1 cup 1/4-inch diced salt pork
1 cup diced onion
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon freshly cracked black pepper
1 cup low-sodium chicken stock
1/2 cup water
1/3 cup white vinegar
1 teaspoon hot pepper sauce, plus more for serving (recommended: Crystal)

Steps:

  • Cut off and discard the tough stems and discolored leaves from the greens. Cut across the leaves into 2-inch ribbons.
  • In a large stock pot, over medium-high heat, add the canola oil and the diced salt pork, and cook until light golden brown and just crisp. Remove to a paper towel lined plate and let cool.
  • Add the onion to the pot and cook until translucent, about 5 minutes, then add the red chili flakes, black pepper, and the collard greens.
  • Stir every few minutes, or until greens have wilted down. Add the chicken stock and the water and cover. Cook for 30 to 45 minutes, then remove the lid, increase the heat to high, and add the vinegar and a teaspoon of hot sauce. Adjust the seasoning, if needed, then put it into a serving bowl. Sprinkle with the salt pork and serve with additional hot pepper sauce on the side.

5 -6 lbs collard greens
2 teaspoons canola oil
1/4 lb pancetta, finely diced
fresh ground pepper
1/2 teaspoon red pepper flakes

Steps:

  • Remove the coarse stems and center ribs from the collard greens, then rinse and drain the leaves.
  • Dry completely and coarsely chop.
  • In a small frying pan over med-high heat, warm the oil.
  • Add the pancetta and cook, stirring often, until browned, about 6 minutes.
  • Transfer to a paper towel-lined plate and set aside.
  • To cook on stove top--In a large pot, bring 4 quarts of water to a boil.
  • Add the greens to the pot, decrease heat to med-high, cover partially, and let simmer, stirring occasionally, until very tender, about 45 minutes.
  • To cook in slow cooker--transfer the greens to a slow cooker and add 4 quarts water.
  • Cover and cook, stirring occasionally, until the greens are very tender, 2 hours on LOW.
  • In any liquid remains, drain the greens before transferring them to a serving bowl.
  • Season with pepper and stir in the reserved pancetta and red pepper flakes; serve warm.

This makes for very tasty collards. THE AMOUNTS ARE GUESSES, and probably not good ones, but it wouldn't publish without them :) The secret to these is the broth. Use as much or as little as you like used in combination with water. One bunch of collards will also feed quite a few people, so that info is also a guess. The pot liquier is awesome for cornbread dunking.

1 bunch collard greens, cleaned and stripped of the dense stems
2 (14 1/2 ounce) cans chicken broth (or more)
1 large onion, roughly chopped
4 garlic cloves
1 ham bone or 1 salt pork

Steps:

  • Pile it all into a large stock pot, bring to boil and simmer till done, about 2 hours. Add as much stock/water as necessary, and replenish as necessary throughout the cooking. I really don't know how much, as I've never measured.

This recipe is so good it even makes canned and frozen greens taste like fresh. You could also use it for turnip greens and mustard greens. This is a mixture of both of my grandmothers' recipes.

1 bunch collard greens, washed and cut into pieces do not cut up the stems
1 large onion, chopped
1/4 cup vinegar
salt and pepper
3 hot peppers, chopped up
2 large ham hocks (also you could use a ham bone,smoked bacon about 7 slices or any other smoked pork product)
1/4 cup water

Steps:

  • Saute your onion in a large cast iron pot with just a touch of oil (1 tsp). Add your smoked pork product and let some of the juices start to flow from it (about 5 minutes worth of cooking).
  • Meanwhile mix water, vinegar, 1 teaspoons of salt, 1 teaspoons of pepper and the chopped hot pepper together. Pour into pot and stir.
  • Add the greens. Mix up after each handfull. Don't worry, the greens will come to the top but will reduce as the cooking wilts them.
  • Continue to stir until wilted; then turn to low, cover and let cook for about 2 hours stirring once in a while and tasting to see if you need more salt and pepper.
