SIMPLE SWEET POTATO SOUP



Simple Sweet Potato Soup image

This delicious soup has only 6 ingredients. It was given to me by my boyfriend's mom who adapted it from another recipe. It can be as thick or thin as you like, and I like it quite thick. To dress it up when serving, drizzle some cream on top and float a lime twist or slice of lime on top. Delicious hot or cold.

6 medium sweet potatoes, peeled and chopped
1 tablespoon minced fresh ginger
2 cups chicken or vegetable stock
1 cup water, or as needed
1 lime, juiced
2 cups milk or cream, or as needed

Steps:

  • Place potatoes and ginger in large saucepan. Pour in chicken stock and water, and bring to a boil over high heat. Reduce heat to medium low, cover, and simmer until the potatoes have softened, about 30 minutes.
  • Puree potatoes and lime juice in a food processor, or with a hand blender until smooth. Return soup to saucepan and stir in milk or cream as desired; heat until warmed through.

A sweeter twist on potato soup. Posted for ZWT III. This is a great soup that I actually even like in the summer because it's got a light flavor. Very good and very sweet.

2 sweet potatoes, peeled and cubed
1 tablespoon vegetable oil, and
1 tablespoon vegetable oil
2 (15 ounce) cans corn kernels, drained
1 (15 ounce) can cream-style corn
1 garlic clove, crushed
3 celery ribs, diced
1 small red onion, diced
1 large shallot, minced
1 tablespoon tomato paste
3 cups vegetable broth
1 bay leaf
1 potato, cubed
1/2 cup milk or 1/2 cup cream
salt and pepper

Steps:

  • Preheat oven to 425 degrees.
  • Line the broiling pan with foil and spread the cubed sweet potato in a single layer and drizzle the first amount of oil over the potatoes.
  • Roast the potatoes for about 15-20 minutes, turn once
  • Heat the second amount of oil in a soup pan over medium heat and cook the onion, garlic, celery, and shallot until soft.
  • Add the tomato paste and stir until combined with vegetables.
  • Add the broth, cream corn, bay leaf and bring to a boil, add the baking potato and cover the pot and simmer 25-30 minutes or until the potato is tender.
  • Add the sweet potatoes, whole corn kernels, and cream or milk, stir well.
  • Season to taste with salt and pepper.
  • Note: you can certainly make this soup vegan by leaving out the cream or milk, it is just as good.

  • Rinse the potato slices in ample water and drain.
  • Place in a 2 qt covered saucepan and add the water, sugar, and butter.
  • Cover and simmer until very tender, about 30 minutes.
  • Do not stir during the cooking process.

  • Melt the butter in a large Dutch oven over medium-high heat. Add the onion, and carrots and cook for about 5 minutes or until the vegetables are tender. Add the garlic, and cook for 1 minute or until the garlic is fragrant.
  • Add the potatoes, cinnamon, nutmeg, the sprig of thyme, and cumin and stir to combine. Cook for another 2-3 minutes.
  • Add the chicken stock, bring to a simmer and reduce the heat to medium-low. Simmer for 30-35 minutes or until the potatoes are very soft and easily mash when pressed with a fork.
  • Remove the pan from the heat, remove the sprig of thyme, and use an immersion blender to puree the soup until it is creamy and smooth. Keep the blender blades submerged, and be careful not to splatter the hot soup. Alternatively, you can puree the soup in a regular blender in small batches. Again, be careful that the hot soup doesn't splatter and cover the top of the blender with a folded dish towel to prevent the soup from splashing out.
