My mother-in-law gave me this tomato gravy recipe. It's her very favorite breakfast. We-my husband, our two sons and I-also enjoy it for a light supper. Especially on a cold day, it's great with warm peach cobbler or bread pudding. -Laurie Fisher, Greeley, Colorado

1/2 pound bacon strips, diced
1 small onion, chopped
2 tablespoons all-purpose flour
1/8 teaspoon salt
Pinch pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 cups tomato juice
8 hot biscuits, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.

Handed down from my Grandpa who was born and reared in south Georgia. It is really a sauce (because there is no flour in it) but you can eat it for breakfast over biscuits, eat it at room temperature like a soup at lunch or the way we ate it at his house over rice with hoe cakes for dinner. It is simple to make but tastes so good. It keeps in the refrigerator for several days and I think it tastes better the next day.

8 slices bacon, cut into 1/2 inch pieces
1 large onion, chopped
2 (28 ounce) cans diced tomatoes
1 (14 ounce) can tomato sauce
1 teaspoon white sugar, or more to taste
½ teaspoon ground black pepper, or to taste
1 tablespoon butter

Steps:

  • Place the bacon in a Dutch oven, and cook over medium heat, stirring occasionally, until the fat starts to cook out, about 2 minutes. Add the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the diced tomatoes and tomato sauce to the pan. Season with sugar and black pepper. Simmer until the sauce is reduced by at least 1/4 and up to 1/3, 30 to 45 minutes. Stir in the butter just before serving.

Number Of Ingredients 9

2 tablespoons margarine
2 tablespoons flour
1 onion, cut in slices and slices cut in half sauteed until translucent with the butter or margarine
1/2 cup milk or creamer or chicken stock (I prefer the chicken stock)
1 teaspoon sugar (optional) I like it savory.
1/2 teaspoon salt
1/4 teaspoon black pepper
pinch cayenne
15-ounce can whole tomatoes or whole plum tomatoes squished

Steps:

  • Get out your cast iron skillet again. Heat the margarine or oil over medium heat. Add onions, saute until translucent. Stir in the flour with a whisk until it is lump free. Let simmer for a moment or two, to toast the flour just a little bit, and then remove from heat, and stir in the half cup milk, a little at a time. Put back on the burner, stir and bring to a boil, it will thicken considerably, and very fast. You'll be left with a very thick mixture. Remove from heat, add the sugar and seasonings, whisking continuously, then slowly add the juice from the tomatoes. Put back on heat and simmer (very gentle boil). In a bowl, smash the tomatoes with a fork or your hands. This gravy is not smooth so do not worry about completely smashing them. The lumpy tomatoes are actually what give it the characteristic texture. Once gravy has come to a good simmer, add the tomatoes and the juice in the can. Bring back to a medium simmer (but don't let it boil hard) and stir with whisk for 3 to 5 minutes until gravy thickens. *(optional: several tablespoons of nutritional yeast, whisked in at the end, are particularly delicious if you like that sort of thing.) **(optional: A big of bacon or sausage grease is really good here too. Serve over toast, biscuits, whatever.

2 large tomatoes , peeled, cored, and chopped
1 cup chicken stock , low sodium or unsalted
1/4 cup bacon drippings or butter or a combination
1/4 cup all-purpose flour
1/2 to 1 cup milk or cream, water, or more broth
Optional: 2 to 3 tablespoons tomato paste, or to taste
1 dash kosher salt
1 dash freshly ground black pepper, to taste
Garnish: fresh parsley, chopped

Steps:

  • Gather the ingredients.
  • Put the chopped tomatoes in a saucepan with 1 cup of the chicken stock. Place the saucepan over medium-high heat and bring to a boil.
  • Reduce the heat to low and continue to simmer the tomatoes while you prepare the roux.
  • Put the bacon drippings or butter in a medium saucepan and place it over medium-low heat.
  • When the fat has melted and the foaming subsides, add the flour.
  • Cook, whisking constantly until the roux is just light brown. It should be about the color of peanut butter. Don't let it burn.
  • Remove the pan from the heat and gradually stir in the simmering tomato and broth mixture.
  • Return the tomato mixture to the heat and stir in 1/4 cup of milk, cream, water, or stock.
  • Whisk in tomato paste, if using, along with kosher salt and freshly ground black pepper. Cook, stirring until hot and bubbling. If too thick, add more liquid (milk, cream, water or stock) as needed.
  • Garnish the sauce with a sprinkling of chopped fresh parsley and serve.

2 1/2 tablespoons butter
1 tablespoon oil (I use corn)
1 (14 1/2 ounce) can tomatoes
14 1/2 ounces water
1 teaspoon sugar
salt and pepper

Steps:

  • Melt butter and oil in skillet.
  • Add flour and brown slowly.
  • Do not burn and keep mixture spreadable.
  • After browning ,remove from heat to cool.
  • After cooling add tomatoes ,juices and water.
  • Stir thoroughly.
  • Return to heat stirring constantly untill mixture comes to a boil.
  • Remove from heat,add salt , pepper and sugar.
  • Stir and serve.

2 cups fresh tomatoes, peeled and chopped (can use a 14.5 ounce can of tomatoes)
5 tablespoons bacon drippings
5 tablespoons all-purpose flour
1 1/4 cups water (some prefer to use milk instead of water)
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Cut up tomatoes in bowl. Add the salt, pepper, sugar and garlic powder and mix with a spoon. Put bacon drippings in a hot skillet on stovetop. Add flour and make a roux or cook until thick. Pour in tomatoes and water and cook until the consistency of gravy. Serve over biscuits.
  • Enjoy!
