Beef Tenderloin W/2 Sauces: Horseradish & Creole Mustard image

This is awesome! Ususally, I don't like anything extra on my steak but this is wonderful! These sauces are great but that doesn't mean you have to eat it with the sauce. This tenderloin recipe is Courtesy of Emeril Lagasse, 2003. The Creole Seasoning comes from "New New Orleans Cooking" by Emeril Lagasse and Jessie Tirsch. Published by William and Morrow, 1993. The Creole Mustard Dressing is courtesy of "Louisianna Real and Rustic" by Emeril Lagasse and Marcelle Bienvenu, William Morrow Publishers. This roast can be used cold; the day before roast the meat and place on a platter and wrap tightly in saran wrap or aluminum foil, just let rest 40 minutes before refrigeration.

1 (3 1/2 lb) center-cut beef tenderloin, trimmed and tied
1 tablespoon olive oil
salt, to taste
fresh ground black pepper, to taste
spice essence, to taste
fresh watercress or parsley, rinsed & spun
French bread or Italian bread
assorted rolls or assorted biscuit
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon thyme
2 cups sour cream
1/4 cup prepared horseradish, drained
1 tablespoon chives
1 tablespoon champagne or 1 tablespoon white wine vinegar
1 teaspoon salt
1 dash hot red pepper sauce (optional)
1 large raw egg
3 tablespoons creole mustard or 3 tablespoons other whole grain mustard
1 tablespoon distilled white vinegar
1 cup olive oil
2 tablespoons chopped fresh parsley leaves
1 tablespoon honey
1/2 teaspoon salt
1/8 teaspoon cayenne

Steps:

  • Make the 2 sauces ahead of roasting the tenderloin.
  • Horseradish Sauce:.
  • In a bowl, combine all ingredients and blend well.
  • Adjust the seasoning to taste.
  • Refrigerate until ready to serve.
  • Yield: 2-1/4 cups.
  • Creole Mustard Dressing:.
  • In a food processor or blender, process the *egg*, mustard and vinegar until well blended.
  • With the motor running pour the oil through the feed tube in a steady stream and process until emulsified.
  • Add the parsley, honey, salt and cayenne and pulse to blend.
  • Transfer to an airtight container and refrigerate for at least 30 minutes before using.
  • Use within 24 hours.
  • Yield: 1-1/2 cups.
  • *RAW EGG WARNING*.
  • The American Egg Board states: "There have been warning against consuming raw or lightly cooked eggs on the grounds that the egg may be contaminated with Salmonella, a bacteria responsible for a type of foodborne illness. Healthy people need to remember that there is a very small risk and treat eggs and other raw animal foods accordingly. Use only properly refrigerated, clean, sound-shelled, fresh grade AA or A eggs. Avoid mixing yolks and whites with the shell?".
  • Essence (Emeril's Creole Seasoning):.
  • Combine all ingredients thouroughly and store in an airtight jar or container.
  • Yiled: 2/3 cup.
  • Preheat oven to 400°F.
  • Place the tenderloin in a large, heavy roasting pan.
  • Rub with olive oil and season lightly on all side with the salt, pepper and Essence.
  • Place over medium-high heat and sear the meat on all sides, 5-6 minutes.
  • Place ib the oven and roast to desired temperature, about 25 minutes for madium-rare.
  • Arrange a bed of watercress or parsley on a large decorative platter.
  • Remove the roast from the oven and place on a cutting board.
  • Loosely cover and lest rest for 10 minutes before carving.
  • Remove the butcher's twine and carve to desired thickness.
  • Arrange the slices on the watercress covered platter.
  • Serve with a variety of breads or rolls and desired sauce(s).

Serve this thinly sliced on toasted french bread drizzled with the sauce-oh yeah! Below for the cooking time I've posted the least amount of time-it just depends on how well you like your Beef, the servings also depend on the size you buy.

1 beef tenderloin (size and weight your choice)
1 cup olive oil
1/2 cup fresh thyme, chopped
1/2 cup fresh rosemary, chopped
4 cloves garlic
1/4 cup fresh cracked black pepper
soaked hickory chips
1 cup mayonnaise
6 teaspoons horseradish
2 teaspoons Dijon mustard
2 teaspoons lemon juice
salt and pepper

Steps:

  • Take the olive oil, fresh herbs, garlic and puree in a food processor to a paste.
  • Whisk in black pepper.
  • Coat Tenderloin on all sides, wrap in plastic wrap and refrigerate for 48 hours.
  • Remove marinated beef 2 hours before cooking.
  • Oil your grill grid and over medium high heat sear the beef.
  • Sprinkle with salt.
  • Remove from grill and place a pan soaked with hickory chips on a lower rack or place coals around it.
  • Place Tenderloin of Beef on a rack above chips on medium heat.
  • 45 minutes to 1 hour for rare, 1 hour 30 minutes to 45 minutes for medium.
  • Horseradish Sauce: Whisk together all ingredients and chill-make the day before if you can.

Beef tenderloin is roasted with fresh thyme and rosemary and served with a zesty horseradish sauce.

4 tablespoons Carapelli Premium 100% Italian Extra Virgin Olive Oil, divided
4 cloves garlic, minced
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh rosemary
1 ½ teaspoons coarse sea salt or kosher salt, divided
½ teaspoon freshly ground black pepper
1 (2 pound) center-cut beef tenderloin roast
½ cup sour cream
3 tablespoons prepared horseradish

Steps:

  • Heat oven to 350 degrees F. Combine 2 tablespoons of Carapelli, garlic, thyme, rosemary, 1 teaspoon of the salt and pepper; set aside.
  • Heat 1 tablespoon of oil in a large ovenproof skillet over medium-high heat. Add roast; cook 2 to 3 minutes or until well browned. Turn roast over; turn off heat. Spread garlic and herb mixture evenly over top and sides of roast.
  • For that matter, you could spread this mixture on just about anything. Meat. Bread. Veggies. Bacon. Mmmbacon.
  • Transfer skillet to oven; bake 25 to 30 minutes or until internal temperature reaches 125 degrees F. Transfer roast to a carving board; tent with foil and let stand 10 minutes. (Internal temperature will rise to 130 degrees F for medium-rare).
  • Meanwhile, combine remaining 1 tablespoon oil, sour cream, horseradish and remaining 1/2 teaspoon salt; chill until serving time.
  • Carve roast crosswise into 1/2-inch thick slices; place on warmed serving plates. Serve with sauce. Watch your hard work vanish in minutes as family and friends devour. Then bask in the glow of their approval.
