1/2 cup roughly chopped Cilantro
1/2 cup Olive Oil
3 tablespoons lime juice
2 Garlic Cloves (minced)
1 teaspoon Honey
1 teaspoon Chipotle Powder
1 teaspoon Oregano
1 teaspoon Salt
2 cups Lettuce
2 cups cooked Quinoa
1 cup Black Beans (drained)
3/4 cup Corn (drained)
1 cup Cherry Tomatoes (cut in half)

Steps:

  • Blend all the ingredients for the dressing in a blender for a minute till smooth.
  • Transfer all the ingredients for the salad in a bowl and toss with the dressing. If serving later, pour the dressing just before serving to avoid the salad from getting soggy.

2 tablespoons vegetable oil
3 cloves garlic, minced
1 jalapeño, minced
15 oz black beans
15 oz corn
3 roma tomatoes, diced
1 cup quinoa, rinsed
2 cups vegetable stock
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon salt
1 teaspoon pepper
1 avocado, cubed
1 lime, juiced
fresh cilantro, to garnish

Steps:

  • Heat the oil in a large pan over medium heat. Add the garlic and jalapeño and cook for about 2 minutes, until softened.
  • Add the black beans, corn, tomatoes, quinoa, vegetable stock, chili powder, cumin, salt, and pepper. Stir, then cover and cook for 15-20 minutes, until the liquid is absorbed and the quinoa is tender.
  • Transfer the salad to a serving bowl and top with the avocado, lime juice, and cilantro.
  • Enjoy!

1 cup uncooked quinoa (rinsed and drained)
1 large sweet potato (chopped into bite size chunks)
1 red or orange bell pepper (cored, seeded, and diced)
1 cup black beans (rinsed and drained)
1 cup thawed frozen corn
1/4 cup minced red onion
1/4 cup minced fresh cilantro
1 avocado (chopped)
1/4 cup + 1/2 Tablespoon olive oil
juice of 1 lime
1 teaspoon chili powder
1/4- 1/2 teaspoon cayenne
pinch of cumin
ground black pepper (to taste)
1/2 sea salt + more to taste

Steps:

  • Preheat oven to 400°F.
  • Toss sweet potato chunks with 1/2 Tablespoon of olive oil, season to taste with salt and pepper, and arrange evenly on a baking sheet. Bake in the preheated oven until the sweet potatoes are tender, about 25-30 minutes. Allow sweet potato chunks to cool.
  • Meanwhile, cook the quinoa according to package instructions. Allow quinoa to cool.
  • In a large mixing bowl combine quinoa, roasted sweet potatoes, corn, bell pepper, black beans, red onion, cilantro and avocado. Add 1/4 cup olive oil, lime juice, chili powder, cayenne, cumin, black pepper and sea salt. Gently toss the salad to combine. Taste and adjust the seasoning, if necessary. Serve salad right away or chill in the fridge a few hours before serving. Add a sprinkle of queso fresco or feta cheese when serving, if desired.

1/2 cup diced red onion or green onions
1 small can of diced black olives
2 limes, juice of (about 2 tablespoons)
2 tablespoons extra virgin olive oil
1 tsp cumin
1/4 - 1/2 teaspoon chili powder
1/4 - 1/2 teaspoon salt, or to taste
1/4 cup cilantro, chopped
avocado, diced or sliced (optional)

Steps:

  • In a medium pot, add the water and quinoa, bring to a boil, cover, reduce heat, and simmer for 15 minutes at a gentle boil. Turn off heat, remove the cover, and let rest for 10 minutes. Fluff with a fork. Alternatively, use this Instant Pot Quinoa recipe.
  • In a small bowl or jar, whisk together the lime juice, olive oil, cumin, chili powder, and salt. Season to taste.

2 cups vegetable broth
1 cup corn
1 1/4 cup cooked black beans (from 1 can)
1/2 green bell pepper (diced (about 1/2 cup diced))
2 roma tomatoes (diced (about 1 1/2 cups diced))
1/2 red onion (diced (about 1/2 cup))
2 tablespoons cilantro (diced)
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 avocados (diced)

Steps:

  • Add quinoa and vegetable broth to a medium saucepan over medium high heat. Bring to a boil.
  • Once boiling, turn the temperature to low and cover with a lid. Let the quinoa simmer for 15-20 minutes, until the quinoa has soaked up all the broth.
  • Remove the quinoa from the heat and fluff with a fork. Let cool completely.
  • Add the cooked quinoa to a large bowl with the black beans, corn, bell pepper, tomatoes, red onion and cilantro. Set aside.
  • In a small bowl, whisk together lime juice, olive oil, salt and black pepper.
  • Pour the lime dressing over the quinoa and toss until coated. Let refrigerator for at least an hour or ready to serve.
  • Before serving, toss with diced avocado.

1 lime, for juicing over the salad

1 clove garlic, minced
3 tbsp water
2 tbsp chopped cilantro (fresh coriander)
1 tablespoon tahini

Steps:

  • Place the quinoa along with 2 cups salted water in a medium saucepan. Cover and bring to a boil, then reduce to the lowest heat setting. Simmer until water is completely absorbed and quinoa is fluffy, about 20 minutes.
  • While the quinoa is cooking, make the Creamy Avocado Dressing. Combine all of the dressing ingredients in a blender or food processor and blend until smooth.
  • In a large bowl, combine quinoa, black beans, tomatoes, bell peppers, avocado, cucumber, corn, red onion. Pour dressing over quinoa salad and stir until salad is well coated. 1 tablespoon butter
2 cups chicken broth
½ cup diced green bell pepper
½ cup diced red onion
1 cup corn
1 (15 ounce) can black beans, drained
¼ cup chopped cilantro
1 large tomato, diced
½ cup fresh lime juice, or to taste
2 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon adobo seasoning
½ cup feta cheese
salt and black pepper to taste

Steps:

  • Rinse the quinoa thoroughly under cold water, and drain. Melt butter in a large saucepan over medium heat, and cook and stir the quinoa until the water has evaporated and the quinoa is lightly toasted, about 3 minutes. Pour in the chicken broth, bring to a boil, reduce heat to low, and simmer until the quinoa has absorbed all the broth, about 10 minutes. Cool quinoa in refrigerator at least 10 minutes.
  • Mix together green pepper, red onion, corn, black beans, cilantro, tomato, lime juice, red wine vinegar, olive oil, adobo seasoning, and feta cheese in a large salad bowl. Lightly stir in the quinoa, and season with salt, pepper, and additional lime juice to taste, if desired. Chill the salad at least 30 minutes before serving; serve cold.
