Number Of Ingredients 9

1/2 cup Soybeans (Whole Soya dal)
1/2 cup White Urad Dal (Split) , soaked
1 Potato (Aloo) , boiled
2 Green Chillies , finely chopped
Coriander (Dhania) Leaves , small bunch, finely chopped
1/2 teaspoon Mustard seeds (Rai/ Kadugu)
1/2 teaspoon Cumin seeds (Jeera)
1 sprig Curry leaves , chopped
Salt , to taste

Steps:

  • To begin making the Soy Beans Paniyaram Recipe, we will first soak the soy beans and urad for atleast 2 hours, separately. Once soaked, cook the soy beans using the pressure cooker method, until soft,adding just enough water. Once cooked, drain the excess water and use it for soups or a vegetable stock.
  • Now we will blend the boiled potato, cooked soy beans and the soaked urad dal, adding very little water to make a thick and smooth batter.
  • Stir in the salt, green chillies, coriander leaves and combined well. Check the salt level.
  • We will add the seasoning to the batter; for this heat a teaspoon of oil in a small pan; add in the mustard seeds, cumin seeds and curry leaves. Allow them to crackle. Once they crackle add it to the soya bean paniyaram batter. The batter will be of thick pouring consistency.
  • Preheat the Kuzhipaniyaram pan; drop spoonfulls of batter into each cavity of the paniyaram pan.
  • Drizzle some oil on all the batter, cover the pan and allow it to steam. Once you notice the tops have steamed with no raw batter, flip the paniyarams to cook on the other side. You can optionally drizzle more oil and cook them until you notice all the sides are golden brown. Make sure you cook on medium heat, so the paniyarams get cooked inside as well.
  • The Soya Beans Paniyaram is now ready to be served hot with sauce or green chutney.

I have just discovered Frozen Soya Beans and I think they are delicious. I made up this easy stir fry and it was very tasty. Vary your veggies to your own liing - I just cleaned out the fridge!You may substitute Teriaki or other sauce for the Ketjap Manis. Try Ketjap Benteng. Chili flakes may ve optional.

1 cup frozen soybeans
1 medium carrot, Grated
1/2 cup onion, Chopped
3 medium leeks, white part only, chopped
1 garlic clove, smashed
1/2 teaspoon chili flakes (optional)
3 tablespoons ketjap manis
1 teaspoon oil, wiped on a skillet

Steps:

  • Pour the Soya beans into boiling water & blanch for 1 minute (do not over cook).
  • Heat a lightly oiled skillet.
  • Add all the ingredients, including the blanched soya beans and stir fry for apprx 6-8 minutes.
  • Serve.

Soya Bean Fry is an excellent side dish for those who want to refrain from meat. Rich in protein with a content almost equalling meat, soya chunks are considered the best and easily available substitute. A variety of dishes can be prepared with soya chunks and Soya Bean Fry is one such dish pairing well with hot rice and even with roti or chappatis. Fat free soya chunks have a tendency to absorb flavours and hence require an extra addition of spicy flavours. Soak soya chunks in water for a few minutes, squeeze out well and cook with essential spicy ingredients in a pressure cooker. Drain off water completely and fry cooked soya chunks in coconut oil until a rich lingering aroma of fried masalas fills the entire room. Enjoy tasty and nutritious Soya Bean Fry.

500 gm Soya Bean chunks
2 nos Onion (finely chopped)
Ginger (garlic paste - 2- 3 tsp)
4 stalks Curry leaves
1 1/2 tsp Chilly powder
2 tsp Coriander powder
1/2 tsp Pepper powder
1/2 tsp Garam masala
1/2 tsp Turmeric powder
Salt (As reqd)
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds (Jeerakam)
2 tbsp Vegetable oil
4 - Coconut oil
1/4 cup Water

Steps:

  • Soak the Soya bean chunks for 15 mins.
  • Squeeze out the water and keep aside.
  • Heat 2 tbsp of vegetable oil in a pressure cooker.
  • Splutter mustard seeds and cumin seeds.
  • Add onions and saute, till they turn pink.
  • Add the ginger-garlic paste and fry, till they turn light brown.
  • Add curry leaves and saute for a while.
  • Add turmeric powder, chilly powder, coriander powder, pepper powder and garam masala and salt and stir.
  • Once the raw smell goes, add 1/4 cup of water and allow it to boil.
  • When it starts to boil, add the soya bean chunks and mix well.
  • Pressure cook it upto 3 - 4 whistles.
  • After it cools, open the pressure cooker and if there`s any water remaining, keep on flame, till the water dries up completely.
  • Heat coconut oil in a heavy bottomed pan.
  • Add the soya bean chunks and fry, as in beef fry.
  • :- Soya Bean Fry is ready.
  • :- Serve Soya Bean fry with rice or chappathis.
  • :- This Soya Bean is very good for non vegetarians who has become vegetarians. It will give them a beef fry taste.
