SPAGHETTI PIE

Steps:
- Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
- Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
- In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
- In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
- Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.
CHOCOLATE FETTUCCINE PUDDING

- Preheat the oven to 350 degrees. Butter a 13-by-9-by-2 1/2 -inch baking pan. In a large bowl, whisk together the ricotta, eggs, sugar, cream, milk, chocolate, cocoa powder, crème de cacao, vanilla and cinnamon until combined.
- Bring a large pot of salted water to a boil. Cook the fettuccine until al dente, 2 to 3 minutes. Drain well and toss to combine with the mixture in the bowl. Pour into the greased baking pan. Top with cookie crumbs, if desired. Bake for 60 to 75 minutes, or until a knife inserted in the center of the pudding comes out clean. Cut into squares and serve warm.

- Heat butter in a large skillet over medium heat. Fry the cashews and raisins until golden brown. Remove from pan, and set aside. In the same pan, fry the dry pasta pieces until golden brown, about 5 minutes.
- Add the milk to the skillet, and increase the heat to medium. Bring to a boil, then reduce the heat back to low; simmer until the spaghetti is tender, and the milk is thickened. Stir in the sugar, cashews and raisins; turn off heat, and let stand for 30 minutes. Serve hot or cold.

- Cook pastina in boiling salted water until al dente.
- Drain and return to saucepan.
- Add in the cream and 2 tablespoons of the sugar.
- Stir over low heat until hot and thickened, about 2 minutes.
- Stir in butter.
- Spoon into bowls.
- Combine the remaining sugar and cinnamon to sprinkle over top of pudding.
GRANDMA'S SPAGHETTI AND CHEESE PUDDING
This is a vegetarian recipe which is not that diet-friendly but still it's a comfort food which you can indulge yourself once in a while.

- Boil the pasta following the instructions on the package. (10-12 minutes).
- Preheat your oven at 392?.
- Coat the oven tray with some olive oil.
- Drain the spaghetti and put them in a large bowl.
- Whisk the eggs with salt and pepper and pour them over the pasta.
- Using a fork, blend cheeses together and when they have a paste-like consistency add them over the spaghetti.
- *Add sliced/mashed garlic. (optional).
- Mix well, then put them in the oven tray.
- Place the tray in the oven and cook for about 30-35 minutes, until golden and crispy. You can use the grill for the last 10 minutes to create a lovely crust on top.

- Whisk together eggs and 3/4 cup of the sugar in a large bowl until creamy and smooth. Whisk in ricotta, milk, sour cream, butter, vanilla, and salt until combined. Stir in spaghetti.
