BIG-BATCH SPAGHETTI SAUCE

Steps:
- In a large stockpot, cook bacon over medium heat until crisp. Remove to paper towels to drain. Cook beef over medium heat in drippings until meat is no longer pink; drain. Remove beef and keep warm., In the same pot, saute the onions, peppers and mushrooms in oil for 5 minutes or until onions are tender. Add garlic; cook 2 minutes longer. , Stir in flour until blended. Stir in the tomatoes, tomato paste, water, vinegar, sugar, Worcestershire sauce and seasonings. Crumble bacon; return bacon and beef to pan. Bring to a boil. Reduce heat; simmer, uncovered, for 2 hours, stirring occasionally. Serve with spaghetti.

This is a quick recipe for tomato sauce. I have just given the outline for the sauce, but you can add any kind of vegetables to it. I especially like it with mushrooms and peppers.

- In a large saucepan heat oil over medium heat. Saute onion, green onion and garlic. When onions are clear, stir in tomatoes, basil, oregano and sugar. Bring to a boil, reduce heat to low, and simmer for 20 minutes.

SPAGHETTI SAUCE -MAKE A BIG POT
So now I am in Canada, recruited to be a camp cook. The shopping trip, to town and get supplies, was quite an ordeal..mud bogging. Our truck was the only one that would make it out if it rained. The store had limited supplies and most of the stuff I never even heard of.. Garbanzo beans per can was quite expensive. Over the required budget. Never had Mrs. Butterworth's syrup. Nothing maple unless it was the real thing. I can't afford that either. No packaged seasoning mixes (like Schillings) spaghetti sauce or anything like it in a jar. So.....I made my own. They did have a sort of bakery and I struck it rich when I found bread loafs "unsliced". Jackpot! Looked like homemade and all I had to do was slice it. Used this bread when I ran out of my homemade bread. I also got hooked on Canadian food items that are not available in the U. S. Red River Cereal for the best wheat bread, Tender Flake perfect pastry for pie dough, A peach drink mix (kind of like cool aid)and a custard powder for deserts.

Steps:
- Brown hamburger and add chopped onions and garlic powder. Cook until tender. Drain. Salt and pepper to taste.
- In a large pot, add remaining ingredients. Bring to a boil. Set on top of the wood stove to simmer for 3 hours or more. This will make 2 or 3 dinners. Spaghetti sauce and sauce for Lasagna. Freeze left overs for another night.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil and stir in onions and garlic; cook until soft and translucent, about 5 minutes. Add carrot, celery, and tomatoes; cook until tender, about 4 minutes. Season with oregano, Italian seasoning, salt, basil, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Blend with an immersion blender to desired consistency.

SPAGHETTI SAUCE (AKA: RED GRAVY)
There are so many recipes for a delicious pot of spaghetti sauce, which, in my family, (and in many parts of the South Jersey region), is referred to as "gravy". Nothing is better than walking into the house on a lazy Sunday afternoon to the enticing aroma of a big pot of tomato heaven. Here is my recipe for a smooth sauce filled with a great assortment of meats and spices. With some preparation in the beginning and a few voluntary hands to stir the pot throughout the day, this comfort meal will not dissapoint. Salut! and enjoy...

Steps:
- In a large dutch oven or 8 quart pot. briefly cook garlic and olive oil.
- Place fresh sausage and neck bones in pot.
- Add desired amounts of salt and pepper to meats.
- Add enough of the 2 qts. of water to cover meats in the pot, (not all of the water may be used). Cover and cook on low-medium for at least an hour. Do not allow water to boil; this will toughen meats.
- Add the crushed tomatoes to the pot and stir. Begin with 4 cans and add the last can according to desired thickness, remembering that sauce will thicken as it cooks.
- Add spices, again according to taste, and stir. More may be added as sauce cooks.
- Stir frequently and keep on low to medium heat, making sure sauce never boils. Continue to cook for at least 4 hours; sauce may cook longer if desired.
- Homemade or store-prepared meatballs may be added to pot.
- Serve over pasta, raviolis, or as a base to lasagnas and zitis.
PERFECT SPAGHETTI SAUCE (CROCK-POT)
As a kid, I was pretty picky about spaghetti sauce, and then mom got this one from a friend...SO good! Now that I have kids of my own, they love it and I've been able to improvise on the recipe myself to make it both kid- and adult-friendly! An easy meal that you don't have to think about and will make your house smell delicious! Plenty for freezing,as well, for another day. Hope you enjoy! *Sometimes, I'll replace some of the tomato sauce with crushed tomatoes and add a little more spice and garlic to compensate* **I use hot Italian sausage mixed with ground beef for a little more of a kick**

- Heat oil in large skillet over med-high heat until hot.
- Brown onion and 2 cloves of garlic in oil, but do not burn!
- Add meat to skillet and cook thoroughly. (Drain meat if desired).
- In a crock pot, add juice, sauce, paste, 2 cloves of garlic, sugar, spices, and meat mixture and cook on low all day (8-12 hours -- the longer, the better!). Can cook on high for less time, as well, but may not be as thick. *To thicken up, "crack" lid for the last few hours.
- Serve over hot pasta and freeze any leftover sauce for later!
