TOMATO SPINACH CHICKEN SPAGHETTI

This chicken pasta recipe has lots of fresh ingredients: garlic, tomatoes, and spinach. This easy and quick dinner will become a family favorite!

1/4 cup sun-dried tomatoes (chopped, drained of oil)
2 tablespoons olive oil (drained from sun-dried tomatoes)
1/2 lb chicken (boneless and skinless (preferably, boneless skinless thighs), chopped)
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
4 roma tomatoes (chopped)
1/4 cup fresh basil leaves (chopped)
8 oz spinach (fresh)
3 garlic cloves (chopped)
8 oz spaghetti pasta
3 tablespoons olive oil ((use high quality olive oil or oil from the sun-dried tomatoes jar))

Steps:

  • Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes, to a large skillet, on medium-low heat.
  • Add chopped chicken. I used boneless skinless chicken thighs and prefer to use them, but you can use chopped chicken breast, as well.
  • Add red pepper flakes, and salt over all of the ingredients in the skillet.
  • Cook on medium heat until the chicken is cooked through and no longer pink, about 5 minutes.
  • Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic to the skillet with chicken. Cook on medium heat for about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices. Remove from heat.
  • Taste, and add more salt to taste, if needed. Cover with lid and keep off heat.
  • Cook pasta according to package instructions, until al dente.
  • Drain. Add cooked and drained pasta to the skillet with the chicken and vegetables.
  • Reheat on low heat, mix everything well, add more seasonings (salt and pepper), if desired. Remove from heat.
  • At this point, when the pasta and vegetables are off heat, you can add more high-quality olive oil. It's optional but really tasty! Or you can add more olive oil from the jar from the sun-dried tomatoes.

2 (12 ounce) boxes ronzoni smart taste spaghetti
1 bunch fresh spinach (washed and stems removed)
10 garlic cloves, finely chopped
2 chicken bouillon cubes
1 teaspoon crushed red pepper flakes
1 pint grape tomatoes (washed and cut in half)
2 tablespoons unsalted butter
1/4 cup olive oil, plus
1 tablespoon olive oil
salt

Steps:

  • Bring a large pot of salted water to boil for spaghetti. Cook according to package al dente. Reserve 1 1/2 cups of the pasta water before draining.
  • Meanwhile, In large deep saute pan or skillet (large enough to hold cooked pasta with sauce) add 1 tbs. olive oil and chicken sausage (season with a pinch of salt). Saute sausage over medium heat until browned, breaking up with a spoon as it cooks.
  • When sausage are browned, add garlic, crushed red pepper flakes and chicken bouillon cubes, cook for 2 minutes stirring a few times. Add tomatoes and cook for another 2 minutes then add 1/4 cup olive oil, butter, and reserved pasta water.
  • Bring to a boil and reduce to simmer, let cook for about 5 minutes. Add the spinach, cook for 1 minute just until it starts to wilt.
  • Remove from heat, and add the cooked spaghetti. Toss well to combine.

Steps:

Add the chicken, the sausage, the tomatoes with the juice, the wine, the orégano, the basil, and the sugar and boil the mixture gently, stirring occasionally, for 10 minutes. While the mixture is boiling, in a kettle of boiling salted water boil the spaghetti until it is al dente and drain it well. To the tomato mixture add the cream and salt and pepper to taste and simmer the sauce for 3 minutes, or until it is thickened slightly. Divide the spaghetti between 2 plates and spoon the sauce over it.

1/2 lb spaghetti
150 g fresh spinach, finely chopped
100 g grape tomatoes, cut in halves
1/4 cup parmesan cheese, Freshly grated
3 medium garlic cloves, Freshly grated
1 1/2 teaspoons dried basil
1 teaspoon extra virgin olive oil
1/2 teaspoon salt

Steps:

  • Put the spaghetti on boil, partially covered, with about 3 cups water and 1/2 teaspoon of salt.
  • In a separate pan, heat 1 teaspoon olive oil. Add the grape tomatoes and sautee for 2 minute Add the grated garlic and stir to coat tomatoes with them, about 20 seconds.
  • Add the chopped spinach, toss with the tomatoes. Cook for about 3 min, until spinach is wilted. Add the basil and stir. Turn off heat and wait until spaghetti is done.
  • When spaghetti is done, drain about 1/2 cup of cooking liquid from spaghetti into the pan with the spinach and tomatoes and start heat on low. Discard the remaining cooking liquid if any. Add the grated parmesan to the pan and bring to a boil for about 30 seconds, mixing to make sure the parmesan melts.
  • Pour the contents of the pan into the spaghetti pot and stir over a medium flame until liquid is almost gone, 2-3 minutes. Done!
  • Tip: The spinach tends to clump together because of the cheese. You can separate it or leave it; the spinach clumps have a nice texture of their own.
  • Tip: I was surprised to discover this tastes almost as good with no cheese at all. So you can make a much healthier version. It is also tolerant to different amounts of olive oil.

Steps:

  • Add the wine, salt, and pepper and stir to combine. Cook for 7-8 minutes, until the wine has reduced by half and the mushrooms are tender.
  • Add the spaghetti and sausage mixture and toss to combine.
  • Add the Parmesan, pasta water, and spinach and stir. Cook until the pasta is warmed through and the Parmesan has melted.
