SPAMCAKES -- SPAM PANCAKES

Steps:

• Lightly grease and heat griddle.
• In bowl, combine pancake mix, milk, egg and oil.
• Stir in SPAM.
• Using 1/3 cup for each pancake, pour batter onto hot griddle.
• Cook until golden brown on bottom; turn and brown other side.
• Keep hot until ready to serve cakes with syrup or honey.

SPAM FRITTERS

Steps:

• Add all of the dry batter ingredients to a bowl, then whisking well, add just enough fluid (Guinness, bitter, or the milk/water mix) to make a thick batter. Add the egg and mix it in extremely well.
• Rest the batter in the refrigerator for 20 minutes if you can
• Dip each piece of spam in a saucer of plain flour and knock off any excess (this helps the batter mix to stick)
• Dip each piece of spam in the batter
• Heat a shallow frying pan with a little oil. When it has just started to smoke, reduce the heat a little and fry the fritters a few at a time for 3 minutes a side

COURGETTE PANCAKE FRITTERS

Steps:

• Tip flour into a bowl. Make a well in the centre, break in eggs, then gradually whisk together, adding milk, a little at a time, to make a smooth batter. Stir in courgette and season well. Heat oil in a non-stick frying pan. Add tablespoons of mixture to make fritters, and cook for 2-3 mins on each side until lightly golden. Serve with sweet chilli sauce.

DOUGHNUT PANCAKES

Steps:

• In medium bowl, stir Bisquick mix, granulated sugar, baking powder and baking soda. In small bowl, mix vegetable oil, vanilla, buttermilk and eggs. Add to dry ingredients, and mix until combined.
• Grease 10-inch skillet with oil; heat over medium heat. Spoon pancake batter into skillet in a doughnut shape.
• Cook about 3 minutes or until edges are dry and bubbles appear on surface. Turn, and cook 2 to 3 minutes longer on other side.
• To make syrup, melt butter in 1-quart saucepan over medium heat. Add powdered sugar, salt and milk, and stir until smooth and sugar is melted. Add baking soda, and cook 1 minute longer, stirring constantly, until syrup is frothy. Remove from heat; stir in vanilla.
• Serve pancakes with the syrup and, if desired, candy sprinkles.

BACON SPAM® AND POTATO PANCAKES

Steps:

• Mix mashed potatoes, luncheon meat, pancake mix, and eggs together gently in a bowl.
• Heat oil in a skillet over medium heat. Spoon potato mixture into hot oil and press with a spatula to flatten evenly. Cook, covered, until bottom is crispy, 3 to 5 minutes. Flip and continue cooking until second side is golden and crispy, 3 to 4 minutes more.
