SPAMSATIONAL TORPEDO SUBS
This is a recipe off of a can of spam. It is very easy and yummy! I usually leave the olives out just because of personal preference. The recipe says it makes 10, but I usually don't get quite that many. (Maybe I stuff mine fuller than they do!)

- In a medium bowl combine Spam, cheese, olives and eggs.
- In another small bowl combine mayonnaise, ketchup, mustard, and black pepper. Pour dressing over Spam mixture and stir until well combined.
- Place about 1/3 cup of Spam mixture into each hot dog bun. Wrap individually in foil.
- Bake at 350 for 15 minutes or until hot and cheese is melted.

- For the meatballs: Preheat the oven to 450 degrees F.
- In a bowl, combine the ground beef and breadcrumbs. Add the milk, onion, parsley, salt, pepper, garlic and egg. Mix to combine.
- Scoop out 2 tablespoons of the meatball mixture and roll into a ball. Continue with the remaining meatball mixture, making about 40 meatballs. Arrange the meatballs in a single layer in a large rectangular baking dish or foil pan. Bake, uncovered, until the meatballs are cooked through, about 25 minutes.
- Pour the marina over the meatballs, then continue to bake until the sauce is heated through, about 10 minutes more. Toss the meatballs to coat in the sauce and set aside.
- For the rolls: Turn the oven temperature down to 375 degrees F.
- Stir together the butter and garlic in a small bowl. Tear off the tops of the rolls, creating a nice boat to hold the meatballs. Transfer the rolls and torn pieces to a baking sheet and brush generously with the garlic butter. Bake until golden brown, about 10 minutes.
- Build the meatball subs: Load 5 meatballs into each roll. Spoon over some of the sauce. Top with some onions and sprinkle over the basil and Parmesan. Serve with more sauce and the toasted bread pieces.
- Reheating instructions: Reheat the meatballs in a pan, covered, at 350 degrees F until warmed through, about 25 minutes.
MOM'S PERFECT SUB SANDWICH

- Stir together the oil, vinegar and salt and pepper to taste.
- Using a serrated knife, slice open the rolls. Drizzle half the dressing on the roll bottoms and sprinkle on the oregano. Divide the cold cuts, cheese, tomatoes, lettuce, onion and pepperoncini evenly among the bottom rolls. Top with the basil, if using. Drizzle the remaining dressing on the top halves of the rolls and place on top to make sandwiches. Wrap in wax paper. Slice in half and serve.

- Soak the onion slices in a large bowl of cold water, 15 minutes.
- Meanwhile, split the bread lengthwise, then pull out some of the bread from the inside. Drizzle 2 tablespoons each vinegar and olive oil on the bottom half. Season with salt and pepper.
- Layer the cheese and meat on the bottom half of the bread. Drain the onion and pat dry. Top the meat with the onion, lettuce, pepperoncini (if using) and tomatoes. Drizzle with 2 tablespoons each vinegar and olive oil and sprinkle with the oregano. Season generously with salt and pepper.
- Drizzle the cut side of the bread top with the remaining 1 tablespoon each vinegar and olive oil, then place on top of the sandwich. Cut into 4 pieces.

- In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. With wet hands, shape turkey mixture into 1-1/2-in. balls. In a large skillet, brown meatballs in oil in batches; drain and set aside., For sauce, in the same skillet, saute onions in oil until tender. Add garlic and thyme; cook 1 minute longer. SUBMARINE FLAVORS
This sounds absurdly simple but is wonderful, especially when really great Italian meats and cheeses are used; but it really jazzes up routine lunch meats on a sub, too. I highly recommend the addition of a good dollop of Holland House hot cherry pepper relish. It's heavenly - had it at a sub shop on Boylston Street in Boston in the 70's and dreamed about it for years. Finally discovered it at an Italian grocery in Seattle and was thrilled to discover that same fabulous flavor. Try it, you'll love it!

- Place the ground beef in a large skillet over medium-high heat. Add the green pepper, red pepper, yellow onion and red onion to the skillet, and cook until meat is evenly browned and vegetables are tender. Drain excess grease from the pan.
