SPINACH LOAF

2 tablespoons unsalted butter, at room temperature, plus extra for greasing the pan
3 large eggs, at room temperature, beaten
1 cup whole milk
Four 3/4-inch-thick slices rustic bread, crusts removed, torn into 1-inch pieces
1 small onion, chopped
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 pounds spinach leaves
1 cup grated Parmesan
1/2 teaspoon ground nutmeg
4 hard boiled eggs, peeled

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9-by-5-inch nonstick loaf pan. Line the bottom of the pan with parchment paper. Set aside.
  • Place the eggs and milk in a large bowl. Add the bread and stir to combine.
  • Heat the butter in a large, high-sided skillet over medium-high heat. Add the onion, 1 teaspoon of the salt and 1/2 teaspoon of the pepper and cook until soft, about 6 minutes. In batches, add the spinach and cook until wilted, about 15 minutes. Drain in a colander. Press gently on top of the spinach to release excess moisture. Set aside to cool slightly. Transfer the spinach mixture to a food processor and blend until smooth. Pour the spinach into the bowl with the bread mixture. Add 3/4 cup of the Parmesan, the remaining salt and pepper and the nutmeg. Stir until smooth.
  • Spread half of the mixture on the bottom of the prepared pan. Lay the hard boiled eggs, end-to-end, in a line along the center of the spinach mixture. Add the remaining spinach mixture on top and press gently. Sprinkle the remaining Parmesan on top and bake for 1 hour. Cool 15 minutes, then run a thin metal spatula around the edges of the pan to release the loaf. Invert the loaf onto a cutting board, remove the parchment paper, and cut into slices.

½ cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ cup grated Parmesan cheese
½ cup Italian salad dressing
1 ½ cups Italian seasoned bread crumbs
1 cup chopped fresh spinach

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
  • Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix the beef, spinach, bread crumbs, 1 1/2 cups cheese, and eggs. Transfer to the prepared loaf pan.
  • Bake 1 hour in the preheated oven, to a minimum internal temperature of 160 degrees F (70 degrees C). Top with remaining cheese to serve.

2 (10 ounce) packages frozen spinach, thawed
2 beaten eggs
3/4 cup shredded cheddar cheese
1/3 cup fine dry breadcrumb
1 tablespoon vinegar
1/2 teaspoon salt
1 dash ground black pepper
4 slices bacon, chopped
2 tablespoons chopped onions
2 tablespoons chopped green peppers or 2 tablespoons red peppers
2 teaspoons all-purpose flour
1/2 cup water
2 medium tomatoes, peeled,seeded,chopped

Steps:

  • Squeeze excess liquid from the spinach; set aside.
  • In a mixing bowl, combine the eggs, cheese, bread crumbs, vinegar, salt and pepper.
  • Stir in the well-drained spinach; pat mixture into a greased 8x4x2" loaf pan.
  • (At this point, loaf may be covered and refrigerated overnight, if desired).
  • Bake, uncovered, in a 400 degree oven for 20-25 minutes or until a knife inserted in the center comes out clean.
  • Meanwhile, in a medium skillet, cook bacon until crisp.
  • Remove from skillet, reserving 2T.
  • pan drippings.
  • Drain bacon on paper towels.
  • Cook the onion and peppers in the bacon drippings in the skillet for about 5 minutes, or until tender.
  • Stir in the flour and dash pepper; gradually stir in the water.
  • Cook and stir until thickened and bubbly; cook 1 minute more.
  • Stir in bacon and tomatoes; heat through.
  • To serve, invert spinach loaf onto serving platter and cut into slices.
  • Spoon bacon/tomato sauce over.

1 lb fresh spinach, about 4 bunches, rinsed, chopped (1 lb. frozen chopped spinach)
3 tablespoons olive oil
1 tablespoon smoked paprika (Spanish pimenton)
1/4 teaspoon salt
2/3 cup water
1/2 cup pine nuts, toasted

Steps:

  • Toast the pine nuts in a dry pan over medium heat, shaking every 30 seconds until they become fragrant & slightly golden. Do not burn by leaving unattended! Dump toasted nuts on a plate to cool.
  • If using frozen spinach, microwave 4 to 6 minutes on high with no additional water but do cover them. If using fresh spinach, place rinsed but not dried leaves in a large pan and cook, stirring until wilted, about 3 to 4 minutes. Drain.
  • Heat the oil in a nonstick, nonreactive skillet over medium heat. Add pimenton and cook, stirring about 2 minutes. Add spinach, salt and approximately 2/3 cup water, stirring another minute. Add pine nuts and toss until just heated through.

1 (1 pound) loaf round bread
3 slices bacon, diced
1 small onion, finely chopped
1 (4 ounce) can sliced mushrooms, drained
½ cup chopped sun-dried tomatoes
2 (8 ounce) packages cream cheese, at room temperature
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
1 (11 ounce) can refrigerated soft bread stick dough

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place bacon in a large skillet over medium-high heat. When the bacon starts to brown, add the onion and mushrooms. Cook and stir until everything is tender and browned. Remove from heat. Transfer to a medium bowl. Use a wooden spoon to stir in the sun-dried tomatoes, cream cheese and spinach until well blended. Set aside.
  • Make a well in the loaf of bread by cutting an oval hole in the top, and pulling out the bread inside, leaving a 1 1/2 to 2 inch shell. This is your serving bowl. Spoon the cream cheese mixture into the bread. Place on a baking tray. Cut the breadstick dough into 3 inch fingers, and place them on the baking sheet also.
  • Bake for about 15 minutes in the preheated oven, until the breadsticks are golden, and the loaf is heated through. To serve, place the loaf of bread with the dip onto the center of a serving tray, and arrange the breadsticks around it. After all the breadsticks are gone, simply eat the bread bowl. No mess!

1/2 cup wheat germ
1/2 cup shredded carrot

1/2 cup steak sauce

Steps:

  • Mix EVERYTHING together.
  • EXCEPT STEAK SAUCE.

1/2 teaspoon salt
1/2 teaspoon dried basil
1 loaf (1 pound) frozen bread dough, thawed
1 package (10 ounces) frozen spinach, thawed and well-drained
2 cups shredded mozzarella cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Sprinkle with salt and basil. Roll out bread dough to a 13x10-in. rectangle. Sprinkle with meat mixture. Top with spinach; sprinkle with cheese. Roll up jelly-roll style, starting with a long side; pinch seams to seal and tuck ends under. , Place seam side down on a greased baking sheet. Bake at 350° until crust is golden brown, 25-30 minutes. Serve warm. Refrigerate leftovers.

2 (8 ounce) packages cream cheese, softened
1 cup low-fat mayonnaise
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup cheddar cheese, shredded
1 (8 ounce) can water chestnuts, drained and chopped
5 slices bacon, cooked and crumbled
1 green onion, chopped
2 teaspoons dill weed
1 garlic clove, minced
1/2 teaspoon seasoning salt
1/8 teaspoon pepper
1 loaf sourdough bread, unsliced round

Steps:

  • Preheat oven to 375°F.
  • Beat cream cheese and mayo together in mixing bowl.
  • Stir in next nine remaining ingredients.
  • Cut a slice off top of bread; set aside.
  • Carefully hollow out bottom, leaving a 1/2 inch shell.
  • Cube removed bread and set aside.
  • Fill the shell with spinach dip; replace top.
  • Wrap in heavy-duty foil; place on baking sheet.
  • Bake for 75 - 90 minutes or until dip is heated through.
  • Open foil carefully.
  • Serve warm with bread cubes and vegetables.

1 teaspoon onion powder
1/2 teaspoon nutmeg, ground
1/2 teaspoon salt
10 3/4 ounces cream of mushroom soup
2 (10 ounce) packages frozen chopped spinach, thawed and well drained
1 cup breadcrumbs
3 eggs, lightly beaten

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • In a medium sized sauce pan, melt the butter over medium heat.
  • Add the onion powder, nutmeg and salt.
  • Add the soup, spinach and bread crumbs and eggs and mix well.
  • Pour mixture in to a 9x5 loaf pan that has been sprayed with cooking spray.
  • Bake for 1 hour or until knife inserted in to the center comes out clean.
  • Allow to cool for 10 minutes in pan, then invert onto a serving platter and cut into 1 inch slices.
  • FYI this is a perfect make ahead dish. Just reheat as needed.
