Sparkling Blackberry-Basil Mule (Mocktail) image

This sparkling alcohol-free drink-sweetened with a ginger and coconut-sugar syrup-is the perfect way to feel refreshed on a summer day.

Yield Makes 2

Number Of Ingredients 7

1 cup sliced ginger
1/2 cup coconut sugar
3/4 cup filtered water
1 cup blackberries
3 fresh basil leaves, chopped
1 lime
1 cup sparkling water

Steps:

  • To make ginger concentrate, add the ginger, coconut sugar, and water to a saucepan. Bring to a boil; then lower the heat and simmer for 10 minutes. Remove from heat and let cool for 1 hour. Strain out the ginger. Divide blackberries and basil between two glasses. Muddle into the bottom. Squeeze 1/2 lime into each glass. Add 3 tablespoons ginger concentrate to each glass, then add 1/2 cup sparkling water to each and mix to combine.

1 bottle ginger beer, to taste

Steps:

  • In a cocktail shaker or a tall glass, muddle blackberries and rosemary.
  • Add sweetener and ice, shake until well combined. (If you do not have a cocktail shaker, simply pour back and forth between two glasses until combined.)
  • Strain mixture over ice and add ginger beer and a squeeze of lime to taste.
  • Garnish with blackberries and a sprig of rosemary.
  • Enjoy!

6 fresh strawberries, sliced
12 fresh basil leaves
1/4 cup sugar
Ice cubes
1/3 cup lemon juice
2-1/4 cups club soda, chilled
Additional fresh basil leaves, optional

Steps:

  • In a shaker, muddle strawberries, basil and sugar. Fill shaker three-fourths full with ice; add lemon juice. Cover and shake 10-15 seconds or until condensation forms on outside of shaker. Strain into six rock glasses filled with ice. Top with club soda and, if desired, additional basil leaves.
