ROASTED SWEDE WITH PARMESAN



Roasted swede with parmesan image

Make these chips as the perfect accompaniment to fish and also haggis. You might want to make extra, as these will be gobbled up in no time

1 large swede (approx 750g/1lb 10oz), peeled and cut into chips
1 tbsp olive oil , plus some for greasing
50g parmesan (or vegetarian alternative), grated
1 tbsp rosemary leaves
knob of butter
2 garlic cloves, peeled

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the swede, olive oil, 40g of the parmesan and the rosemary leaves into a shallow roasting tin. Season and toss well, arranging in one layer.
  • Sprinkle over the remaining parmesan, dot with butter, then add the garlic cloves. Roast for 30-35 mins, turning halfway through cooking, until crisp and golden.

This is a more modern Scottish recipe. Makes a nice change from mashed potatoes and is a great accompaniment to most beef, pork, or lamb dishes

1 large rutabaga, peeled and diced
1 large onion, sliced
1 tablespoon oil
1 ounce bacon drippings or 1 ounce butter
2 sweet apples, cored and chopped
seasoning
nutmeg (to garnish)

Steps:

  • Boil the swede until tender (about 20 minutes) and drain.
  • Meanwhile, fry the onion in the oil and after 2 minutes add the drippings and apples.
  • Cook for 10 minutes over medium heat.
  • Mash the swede and add to the pan.
  • Season and stir well.
  • Sprinkle a little grated nutmeg on top and serve.
  • For the Vegetarian option please use butter.

  • As simple as it can be. Peel and chop the turnips (or swedes if that's what you call them) and put them in a big pan with boiling water. Add salt and pepper and simmer for up to 2 hours. Remember to replace the water as often as you need to. The neeps will be ready anytime after around 20 - 40 minutes, depending on your cooker and the size of chunks you cut your vegetables into, as well as your preference. We like long boiled darker mashed neeps here..
  • When cooked, the neeps will be easy to put a knife into and simply mash them with a little butter until the lumps are all out. Some people add a little milk, but I prefer mine without.
  • If you want to keep them hot while you are making a full meal ready, just put a knob of butter on the top, cover with tin foil and put in the oven on a low heat.
