Steps:
- Heat oven to 450 degrees Rinse potatoes, and pierce several times with tines of a fork.
- Place on a microwave-safe plate; cover with damp paper towels.
- Microwave at HIGH 8 to 10 minutes.
- Place potatoes in a large jelly-roll pan. Drizzle with olive oil, and sprinkle evenly with sea salt, turning to coat.
- Bake at 450° for 20 minutes or until tender, turning after 10 minutes. Serve with butter and pepper and toppings!

- Preheat the oven to 400 degrees F (200 degrees C).
- Place butter in a microwave-safe bowl and microwave on high until melted, 20 to 30 seconds. Stir in olive oil, garlic powder, salt, and pepper.
- Use a fork to poke about 5 holes into each potato. Place each potato on a sheet of aluminum foil about 6 inches wide. Brush butter mixture over potatoes, making sure to evenly coat each one. Wrap up completely in foil. Poke 5 more holes into the wrapped potatoes.
- Bake potatoes in the center of the preheated oven until easily pierced with a fork, about 1 hour. Spread leftover butter mixture over potatoes after cutting them open.

- Preheat the oven to 450 degrees F (230 degrees C).
- Toss potatoes with oil in a large bowl until well coated. Add garlic salt, chili powder, and pepper and continue to toss until spices are evenly distributed.

SPEEDY TWICE BAKED POTATOES
"Baking" the potatoes in the microwave will save you at least 45 minutes in prep time. This is a very basic recipe that can be embellished to suit your taste and the ingredients you have on hand. Some suggested additions are bacon bits, sour cream or plain yogurt, chives and roasted garlic.

- Preheat oven to 425 degrees.
- Wash potatoes and prick holes in them with a fork. Microwave for 5 minutes. Flip potatoes over and microwave for an additional 5 minutes. Test for doneness with a fork and cook longer if necessary.
- Cut each potato in half longways. With a spoon, carefully scoop out as much pulp as possible into a large bowl.
- Add butter, black pepper and garlic salt. Pour in half of the milk and beat mixture with an electric mixer. Gradually add the remaining milk - you may not need it all, or you may need to add a little more! They should be the consistency of fluffy mashed potatoes.
- Fill potato shells with mixture and top with the shredded or sliced cheese. Sprinkle with paprika if desired.
- Place on baking sheet covered with foil for easy clean up. Bake at 425 degrees F until cheese melts (approx. 15-20 minutes).
