Steps:

  • Brown ground beef in large nonstick skillet; drain fat.*
  • Add Recipe Ready Southwest Blend, taco seasoning and water. Cook over medium-high heat, stirring occasionally, 5 minutes or until vegetables are tender.
  • Serve in tortillas and taco shells topped with taco sauce, shredded lettuce and sour cream.

1 (14.5 ounce) carton Campbell's® Mexican Style Tomato Soup
12 taco shells, warmed
¾ cup shredded lettuce
⅓ cup shredded Cheddar cheese
¾ cup diced tomato

Steps:

  • Cook the beef in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Season with salt and black pepper.
  • Stir the soup in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the soup is reduced, stirring often.
  • Divide the beef mixture among the taco shells. Top with the lettuce, tomato and cheese.

QUICK "TACO" DINNER



Quick

This is not a normal taco, but we like it and have used it for years. When my children were little they used to love to "build" their own plate by layering the ingedients as shown in the directions here. Be careful though - its real easy to end up with way more on your plate than you can eat - especially if you're hungry! I'm guessing on the size of the Frito bag, but it doesn't really matter as long as you have enough for your meal. It's fresh, it's crunchy, it's easier to eat than regular tacos, and its a real favorite in our family. Try adding any other taco-type ingredients according to what you like. Enjoy!

2 envelopes taco seasoning
1-1/2 cups water
1 jar (16 ounces) salsa
1 can (8-3/4 ounces) whole kernel corn, drained
2 cups shredded Mexican cheese blend
2 packages (8-1/2 ounces each) cornbread/muffin mix
Sour cream, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the taco seasoning, water, salsa and corn; cook and stir until heated through, about 15 minutes. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese., Prepare cornbread mix according to package directions. Spoon batter evenly over cheese. , Bake, uncovered, at 350° for 40-45 minutes or until a toothpick inserted in the center of the cornbread comes out clean. Serve with sour cream if desired.

Use leftover sauce from our Spaghetti Bolognese with salami & basil recipe to rustle up these speedy beef tacos

1 red onion , thinly sliced
½ tsp sugar
100ml cider vinegar
400g can black beans or kidney beans, drained
3 tbsp chilli sauce
leftover Bolognese (see Bolognese recipe below, right)
8 corn tortillas
1 little gem lettuce , shredded
1 avocado , stoned, peeled and cut into chunks
150g pot soured cream

Steps:

  • Quickly pickle the onion: put it in a bowl and sprinkle with the sugar and 1⁄2 tsp salt. Leave for 10 mins, then stir in the cider vinegar and leave to pickle for another 10 mins.
  • Meanwhile, stir the beans and chilli sauce into the Bolognese and heat for 10-15 mins until piping hot. Add a little water if the mixture seems too thick.
  • Heat the corn tortillas following pack instructions. Top with spoonfuls of the Bolognese, some pickled onions, lettuce, avocado and a dollop of soured cream.

1/2 cup chopped onion
1 (1 1/4 ounce) envelope taco seasoning mix
1 (15 ounce) can diced tomatoes (I like Rotel with chiles)
1 (15 1/4 ounce) can whole kernel corn, drained
2 cups shredded cheddar cheese
2 cups Bisquick
1 cup milk
2 eggs

Steps:

  • Heat oven to 350°F.
  • Cook ground beef and onion until done, drain.
  • Stir in taco seasoning mix (dry), tomatoes and corn.
  • Spoon into 13x9x2-inch ungreased baking dish.
  • Sprinkle with cheese.
  • Stir together Bisquick, milk and eggs.
  • Pour over meat mixture.
  • Bake 35 minutes or until light golden brown.
