Since I live in the "Sunshine State," I just had to share this delicious muffin recipe that utilizes juice from our most famous crop---oranges. These muffins are a must when any of our "Yankee" friends come to visit. -Sharyn Browning, Loxahatchee, Florida

Yield 15-18 muffins.

Number Of Ingredients 12

1-1/2 cup all-purpose flour
1 cup whole wheat flour
1-2/3 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter, melted
3 large eggs, beaten
2/3 cup fresh orange juice
1 teaspoon vanilla extract
1 teaspoon orange extract
1 tablespoon orange marmalade
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine flours, sugar, baking powder and salt. Add remaining ingredients; stir just until moistened (batter may be lumpy). Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until top of muffin springs back when lightly touched.

Banana Spelt Muffins image

I created this recipe after a month of Paleo/primal eating as an alternative to traditional baked goods. Chock-full of healthy fats and fiber, these delicious little muffins leave you feeling full for longer and are easier for many people to digest. I generally use sprouted flours and organic ingredients, but they are still tasty without it.

½ cup almond milk
½ cup coconut oil, melted
3 small bananas, mashed
2 eggs, lightly beaten
⅓ cup agave nectar
1 teaspoon vanilla extract
2 cups spelt flour
1 cup semi-sweet chocolate chips
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
1 (.25 ounce) package unflavored gelatin

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease with coconut oil.
  • Mix almond milk, coconut oil, bananas, eggs, agave nectar, and vanilla extract together in a medium mixing bowl until well blended.
  • Combine flour, chocolate chips, baking powder, baking soda, cinnamon, salt, nutmeg, and gelatin in a large mixing bowl. Form a well in the center and add banana mixture all at once. Stir until just combined but still a bit lumpy. Fill the prepared muffin cups with batter.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 16 to 18 minutes. Cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Yum. Healthy spelt based english muffins. I found this recipe on the blog Taste is Trump: http://goodlookingcook.blogspot.com/2011/01/soaked-english-muffins.html English muffins are in the same category as most bread products. Like pitas and tortillas, it is impossible to find a store bought variety made with healthful ingredients, properly prepared that tastes good. These are great to just eat with butter and honey, or make little sandwiches with.

Number Of Ingredients 6

2 cups spelt flour
3/4 cup kefir (or milk plus 2 tsp vinegar or lemon juice to a total of 3/4 cup, allowed to sit for 5 minutes until ) or 3/4 cup buttermilk (or milk plus 2 tsp vinegar or lemon juice to a total of 3/4 cup, allowed to sit for 5 minutes until )
1 teaspoon honey
1/4 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Combine spelt, kefir and honey, mix well. Let soak on counter about 12 hours.
  • Combine baking soda, baking powder and salt. Sprinkle over soaking flour, mix well.
  • Heat skillet to medium (about 275 degrees). Form dough into rustic biscut shapes. Place on dry, preheated skillet. Cook 4 minutes, carefully flip and cook 4 minutes on second side.
  • Split with a fork, serve warm. Toast to reheat.

1 cup flour (half white spelt, half whole spelt)
1 teaspoon baking soda
1 teaspoon cornstarch
1 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 cup orange juice (juice of one orange)
3 tablespoons orange zest (zest of one orange)
1 cup carrot (shredded)
1/4 cup sunflower seeds
1/4 cup shredded coconut
1/2 cup maple syrup
1 1/2 teaspoons vegan egg substitute

Steps:

  • Preheat oven to 375.
  • Heat muffin tin in the oven while you mix the ingredients.
  • For best results, mix wet and dry ingredients seperately before combining.
  • When combinind ingredients, do so as lightly as possible.
  • If room allows, leave one muffin tin empty and fill with a few tablespoons of water.
  • Bake muffins for approximately 20 minutes, depending on size of muffins and strength of oven.
