RUTH MOULTON'S SPICE BALLS
These aren't your average gingerbread cookies.

Steps:
- Combine the butter and 1 cup sugar in the bowl of an electric mixer
- Beat until light and fluffy, 3-5 minutes
- Beat in the egg and molasses
- Sift together the flour, baking soda, cinnamon, cloves, nutmeg, ginger and salt onto a piece of parchment
- Add mixture to the butter in two batches, beating until just combined
- Cover and chill for 2-3 hours or until quite firm
- Preheat the oven to 350°F
- Put the remaining 1/4 cup sugar in a pie plate and spread the chopped crystallized ginger out on a large plate
- Working in batches of about a dozen at a time, shape the dough into walnut-size balls and roll first in the ginger, pressing the ginger pieces gently into the dough (the ball should only be sparsely covered with candied ginger, do not coat it completely) then in the sugar, rolling to coat the ball all over with the sugar
- Arrange the balls 2-inches apart on parchment paper-lined sheet pans and bake on the middle shelf of the oven for 8-10 minutes or until barely golden but still soft
- Cool for 5 minutes on the sheet pan before transferring to a rack to cool

SPICE BALLS
These are very easy and quick to make. To make them even faster, you can make the dough the night before, cover and store in refrigerator overnight. That way in the morning all you have to do is heat your oil, cook and serve. Look like small puffed doughnut holes. I like them tossed in a plastic bag with cinnamon and sugar.

Steps:
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- In a large bowl, mix flour, 1/3 cup sugar, baking powder, salt, mace and 1/2 teaspoon cinnamon. Create a well in the center of the mixture, and pour in milk, canola oil and egg. Thoroughly stir into the mixture.
- In batches, drop the mixture by rounded teaspoonfuls into the hot oil. Fry on all sides, 2 to 4 minutes, until golden brown. Drain on paper towels.
- In a resealable plastic bag, mix 1 cup sugar and 1 teaspoon cinnamon. While still warm, place balls a few at a time into the bag, and toss to coat.

SPICY ITALIAN MEATBALLS

Steps:
- For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
- Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
- For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
- Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
- Transfer to a chafing dish and serve with frilly toothpicks.
SPICY SAUSAGE BALLS
These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
- Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

- Heat oven to 180C/fan 160C/gas 4.
- Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
- Add the beaten egg and breadcrumbs, then mix again.
- Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
- Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
- Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

Very tasty meatballs full of spice and sauteed to perfection. I usually serve mine with spaghetti, but I've also served them with a BBQ sauce and rice on the side.

SUGAR AND SPICE BUTTER BALLS
Sugar and Spice Butter Balls

Steps:
- Preheat oven to 400 degrees
- Cream together the butter, 1/2 cup powdered sugar and vanilla
- Slowly add the flour, nutmeg, and salt and mix just until combined
- Stir in the nuts
- Scoop into 1" balls and round them smooth between your hands
- Bake 10-12 minutes, until cookies are set but not browned
- While the cookies are baking, place the remaining cup of powdered sugar in a small bowl
- Let the cookies cool on the tray for a minute or two
- Roll the warm cookies in powdered sugar and set on a cooling rack. Once cool, roll them once or twice more in powdered sugar
- Store in an airtight container
