WHOOPIE PIES
Little chocolate cakes with creamy filling. This recipe has been handed down in my family for quite sometime and hasn't had any complaints yet.

Steps:
- To make the cakes: Prepare mix as directed on package except using only 3/4 cup of water. Drop batter onto greased cookie sheet (or use parchment paper to line pan) in 2 1/2 to 3 inch circles. Bake until toothpick inserted in center comes out clean. Let cool.
- To make the filling: In a saucepan, combine milk and flour and cook, stirring constantly until it forms a thick paste. Let cool.
- In a medium bowl, beat sugar and shortening until fluffy. Add vanilla. Add cooled flour mixture and beat until double in volume.
- Turn the little cakes over on their backs. Spoon a dollop of filling onto half of the little cakes. Place the other half of the cakes on top of the filling to form sandwiches.

BAKERY STYLE WHOOPIE PIE CAKE
I found this recipe on a website for parents. The original was for the actual Whoopie pies, but I am too lazy for all of that. I altered a little and made a cake out of it. It is awesome and so worth the work. Note: use real butter, makes it much better.

Steps:
- For the cakes: Heat oven to 350°F; line 2 cake pans with parchment paper.
- Combine all cake ingredients and mix.
- Pour half of batter into each cake pan. Cook approximately 20 minutes, or until cakes spring back when pressed. Cool completely on baking sheets, at least 1 hour.
- For the filling:.
- With electric mixer on medium speed, beat butter and sugar together until fluffy, about 2 minutes. Beat in vanilla and salt. Beat in Fluff until incorporated, about 2 minutes. Refrigerate filling until slightly firm, about 30 minutes. (Bowl can be wrapped and refrigerated for up to 2 days).
- Spread filling onto one of the cakes. Place other cake on top. Refrigerate in air tight container up to 3 days.
- This is also good if you heat a can of frosting for 20 seconds and pour over the cake.
MAMA'S WHOOPIE PIES
My mom's whoopie pie recipe, my personal favorite!

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk flour, cocoa powder, salt, baking powder, and baking soda in a bowl. Beat 1 cup butter and white sugar in a separate large bowl, with an electric mixer on medium speed, until mixture is creamy. Beat eggs and 2 teaspoons vanilla extract into butter mixture.
- Stir half the flour mixture into wet ingredients, followed by milk; stir remaining flour mixture into dough. Drop dough by tablespoonfuls onto baking sheets. For 25 whoopie pies, make 50 cookies.
- Bake cookies in the preheated oven until set and lightly browned, about 10 minutes. Let cool completely.
- Beat 3/4 cup butter with confectioners' sugar in a bowl, using an electric mixer; beat 2 teaspoons vanilla extract and marshmallow creme into filling. Spread at least 1 teaspoon filling on the bottom of a cookie and top with a second cookie. Repeat with remaining cookies and filling.

PUMPKIN SPICE WHOOPIE PIES
Whoopie Pies are big sandwiched cookie. These are a hit with kids and adults alike. I prefer mine frozen!

- Cookies: Beat pumpkin and butter with an electric mixer until smooth.
- Add cake mix, eggs and milk and beat on low speed until combined, then on medium speed for one minute.
- Cover cookie sheets with parchment or oiled foil.
- Drop large mounds of dough 3 inches apart on cookie sheet.
- Bake for 15 minutes at 375 degrees F.
- Filling: Beat together butter and cream cheese until smooth.
- Add powdered sugar, marshmallow cream, vanilla and cinnamon and nutmeg.
- Beat until well combined.
- Refrigerate at least 30 minutes or until cookies are ready to be filled.
- When cookies are cool, spoon filling on bottom of cookies and sandwich together.

EASY WHOOPIE PIES
A New England phenomenon that's becoming popular everywhere, the famous "pies" are really more like soft cakes with a creamy filling. Use Betty Crocker™ cake mix and frosting for a simple-to-make, authentic-tasting version.

- Heat oven to 350°F.
- Line cookie sheets with parchment paper, silicone baking liners, or lightly spray with cooking spray.
- In large bowl, beat all cookie ingredients with electric mixer on low speed until moistened; beat 1 minute longer on high speed.
- Pour batter into a 1 gallon resealable plastic bag. Seal baggie and cut small hole off of one of the bottom corners.
- Pipe batter into 36 small circles onto cookie sheets about 1-inch apart to allow for spreading.
- Bake 10 to 12 minutes until set being careful to not over bake. Cool 2 minutes; remove from cookie sheets and place on cooling rack. Cool completely before filling.
- Once cookies are cooled spread frosting on flat side of one cookie. Top with the second cookie, flat side down to make a sandwich.

- Stirring occasionally, boil the apple cider in a small saucepan over medium-high heat until you’re left with 1/2 cup. Start checking at 15 minutes, 20 minutes, 25 minutes, etc until you have 1/2 cup (120ml). Mine takes about 25 minutes. Cool for 10 minutes before using in step 4. You can even reduce the apple cider the day ahead of time. Cover and refrigerate overnight, then bring to room temperature before using.
- Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
- Whisk the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt together in a large bowl. In another large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and brown sugar together on medium-high speed until creamed, about 1 minute. Add the oil, applesauce, eggs, and vanilla extract and beat on high speed until combined, about 1-2 minutes. The mixture will look curdled as a result of the varying textures trying to combine. This is OK and it will come together when you add the dry ingredients. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients, pour in the 1/2 cup of reduced apple cider, then mix on low until completely combined. Batter will be thick and creamy.
