- In a medium bowl, combine the chopped bittersweet and semisweet chocolate. Evenly distribute the chopped chocolate mixture among 3 small bowls. In one bowl, add cinnamon and chipotle powder. In the second bowl, add the orange zest and cardamom. In the third bowl, add fresh ginger and ground ginger. In medium saucepan, combine the cream, milk, and confectioners' sugar. Bring to a boil, then remove from heat. Evenly divide the hot cream mixture between the 3 bowls of chocolate and spices, whisking gently until chocolate is completely melted. Cover each bowl tightly with plastic wrap; set aside to cool, and then freeze until thoroughly chilled. Line 3 rimmed baking sheets with parchment paper; set aside. Using a 1-inch spring-loaded scoop, scoop chocolate mixture into hands, and roll into a ball. Transfer to prepared baking sheets, keeping each flavor separate. Using two forks, dip truffles into melted candy coating, and place back on the prepared baking sheets. Garnish truffles according to flavor, if desired. Store in an airtight container for up to one week.
SPICY CHOCOLATE TRUFFLES
Steps:
- In a medium saucepot, heat the cream, cinnamon, chili powder and cayenne pepper over medium-low heat until it comes to a simmer. Add the chocolate and stir until the chocolate is completely melted. Transfer to a bowl and chill in the refrigerator until it firms up, 1 1/2 to 2 hours.
- In the meantime, place the toasted coconut, cookie crumbs, cocoa powder and chopped pistachio nuts onto separate small plates.
- Remove the chocolate from the refrigerator and let sit for 30 minutes to soften.
- Using a small ice cream scoop or tablespoon, scoop out the chocolate into the toppings and roll them around to completely coat. Place on a plate and serve. Truffles can be stored in the refrigerator for 2 days in an airtight container.

- Finely chop 10 ounces chocolate; place in a small bowl. In a small heavy saucepan, combine cream, pumpkin and spices; heat just to a boil. Pour over chocolate; let stand 5 minutes., Stir with a whisk until smooth. Cool to room temperature. Refrigerate, covered, at least 4 hours., Finely grate remaining chocolate; place in a small microwave-safe bowl. With hands dusted lightly with baking cocoa, shape chocolate mixture into 1-in. balls; roll in grated chocolate. (Mixture will be soft and truffles may flatten slightly upon standing.) , If desired, melt unused grated chocolate in a microwave and use to attach eyeballs. - Place chocolate in a heatproof bowl. Heat cream in a small saucepan over medium-high until it begins to simmer. Pour over chocolate; let stand 2 minutes, then whisk until smooth. Whisk in liqueur, five-spice powder, and salt until smooth. Pour mixture into a 9-inch pie dish; let cool completely. Cover with plastic wrap; refrigerate until firm, at least 3 hours and up to 1 day.
- Line 2 rimmed baking sheets with parchment. With a 1-inch ice cream scoop or melon baller, scoop out chocolate mixture and place on one prepared sheet. Refrigerate until set, about 20 minutes.
- Place cocoa powder in a bowl. Dust hands with cocoa and roll truffles into balls, coating hands with more cocoa as needed; place on other prepared sheet. Refrigerate until set, 1 hour. Roll truffles in more cocoa powder or brush with pearl dust just before serving or packaging. Truffles can be stored, covered, in refrigerator up to 2 weeks.
PUMPKIN PIE-SPICED CHOCOLATE TRUFFLES
This is a very classic chocolate truffle recipe, with truffles rolled directly in pumpkin pie spice. Semi-sweet chocolate is used for a rich flavor. Heavy cream is also used as a base ingredient.

- Place chocolate into a heat-proof bowl and drop butter on top.
- Warm cream in a saucepan over medium-low heat to a simmer, just below boiling. Remove from heat and pour hot cream evenly over chopped chocolate and butter. Allow to sit for 5 minutes.

EARL GREY-SPIKED CHOCOLATE TRUFFLES
Truffles are actually a fungus that grows under ground at the base of trees, but these chocolate treats are meant to look like the dirt covered real truffle but be chocolate through and through. Virgin pigs are used to sniff the real thing out but these can be easily sensed by any chocolate lover (virgin or not!). We've noticed some interesting behavior among people who are lucky enough to eat these often ? our regulars at Tru. Just the word "truffles" is enough to make these chocolate lovers' nostrils twitch with excitement, like a truffle hound on the scent. While waiting for the dessert course, they start bouncing with anticipation. And when they actually spot the lovely cocoa-covered rounds heading for the table, well...we don't want to embarrass our customers. Try them for yourself and see what happens. These are undoubtedly the best truffles we've ever had, only excepting those of the masters at the Bernachon pastry shop in Lyon, who created the mixture of chocolate and creme fraiche that they are based on. When Gale was apprenticing at the Bernachon bakery, she used to eat these at night in her hotel room, one after another, trying to figure out how the Bernachons made them so wonderful. Making truffles is simple and fun, especially when you're dipping them in chocolate and nestling them in cocoa powder -- but don't forget to start the process a few days ahead.

- In a saucepan, combine the creme fraiche and tea and bring to a boil over medium heat. As soon as it boils, turn off the heat.
- Meanwhile, put the chopped bittersweet chocolate in a medium bowl. Strain the hot creme fraiche mixture into the bowl. Whisk until the chocolate is melted and the mixture is smooth. Cover and let rest in a cool place overnight. The mixture will become firm but not hard.
- The next day, using a pastry bag fitted with a large plain tip, pipe bite-size "kisses" (like Hershey's Kisses) of the mixture onto parchment paper-lined baking sheets. Refrigerate briefly just until set, about 30 minutes. Use your palm to gently press down the point that sticks up on each truffle. Transfer to the freezer and freeze until hard, 2 to 3 hours or overnight.
- In the top of a double boiler set over barely simmering water, melt the semisweet chocolate. It should be liquid, but not so hot that you can't touch it; if it is too hot for you, wear disposable surgical gloves. Spread the cocoa powder out on a sheet pan with sides.
- Working in 2 batches if necessary to avoid crowding the pan of cocoa, dip the frozen truffle centers 1 at a time into the melted chocolate, shake off any excess, and set them down in the cocoa. When all the truffle centers are dipped and the chocolate has started to set, gently but thoroughly shake the sheet pan to roll the truffles around in the cocoa until coated. Carefully remove to another sheet pan and refrigerate, uncovered, 30 minutes. (You can sift the unused cocoa and use it for another purpose.)
- Transfer to an airtight container and keep chilled until almost ready to serve. Bring to room temperature before serving.
SPICY CHOCOLATE TRUFFLES
The gentle heat supplied by the slow cooker is an effortless way to temper chocolate without having to use a double boiler, standing over the pot to keep careful watch. With the small amount of chocolate required, the recipe works better in a 3-quart slow cooker rather than a 5-quart, for better control over the melting process. The recipe can also be doubled for double the chocolate indulgence.

- Combine the chocolate, cream, butter, and coffee in the slow cooker. Cover and cook on low for 40 to 60 minutes, until the chocolate melts. Stir once or twice during the cooking time, just to make sure that the chocolate does not stick to the bottom or sides of the crock. Whisk the mixture vigorously when it is nearly melted.
- Pour the melted chocolate onto a plate or into a glass bowl and place in the refrigerator for between 1/2 and 1 hour, until it is hard enough to form into small balls.
- Combine the cinnamon, cloves, and allspice in a coffee mill or using a mortar and pestle and grind them to a coarse powder. Transfer to a small bowl, add the cocoa powder, and mix thoroughly.
- Line a baking sheet with aluminum foil. Using a spoon or mini ice cream scoop, scoop out spoonfuls of the chocolate mixture and roll with your hands into balls the size of walnuts. (This is a great job for kids. Just have plenty of paper towels on hand!) Roll the balls in the cocoa mixture and place them on the prepared baking sheet.
- Place the truffles in the refrigerator for at least 4 hours or up to overnight. Sprinkle the truffles with the confectioners' sugar and allow to sit at room temperature for about 1 hour before serving.
COFFEE-SPICE WHITE CHOCOLATE TRUFFLES

- Stir 12 ounces white chocolate in medium metal bowl set over saucepan of barely simmering water (do not allow bottom of bowl to touch water) until melted and smooth and candy thermometer registers 110°F. (chocolate will feel warm to touch). Remove from over water. Mix in espresso powder, ground espresso beans and spices. Add crème fraîche, whipping cream, liqueur and vanilla; whisk until blended (mixture may appear curdled). Freeze until firm enough to hold shape, whisking occasionally, about 25 minutes.
- Line 2 baking sheets with foil. Using about 1 tablespoon espresso mixture for each truffle, spoon mixture in mounds on 1 sheet. Freeze truffles until just firm but still malleable, about 15 minutes. Quickly press or roll each mound into irregular ball. Return to freezer on sheet.
- Stir remaining 12 ounces white chocolate in medium metal bowl set over saucepan of barely simmering water (do not allow bottom of bowl to touch water) until melted and smooth and candy thermometer registers 110°F. Remove from over water. Drop 1 truffle into chocolate. Using fork, turn to coat. Lift truffle from chocolate on fork tines, allowing excess to drip back into bowl. Using knife as aid, slide truffle off fork onto second foil-lined sheet, being careful to keep truffle upright. Top with 1 candied violet or 1 espresso bean. Repeat with remaining truffles and chocolate, rewarming chocolate as necessary to maintain temperature of 110°F. Chill truffles until coating is firm, about 30 minutes. (Can be made 2 weeks ahead. Chill in airtight container.) Let stand 20 minutes at room temperature before serving.
