- Bring the water, cinnamon, cloves and allspice to a boil. Boil for 1 minute. Stir in mint leaves. Remove from heat and steep for 5 minutes. Strain into cups. Sweeten with honey if desired.

- Place the water, cinnamon, cloves and allspice in a large saucepan. Bring to a boil. Boil for 1 minute. Stir in mint leaves. Remove from the heat; cover and steep for 5 minutes. Strain tea. Serve with honey if desired.

SPIKED GREEN TEA
Steps:
- Bring 4 cups water to a boil a medium saucepan; boil for 1 minute. Add 10 of the mint sprigs, the tea bags and the ginger; stir. Turn off the heat and let steep for 20 to 25 minutes. Discard the mint, tea bags and ginger. Stir in the honey until dissolved.
- Add 4 cups crushed ice to a pitcher. Pour in the green tea and the lime juice; stir to melt the ice. Add the sake and stir to combine.
- Pour the green tea mixture into 4 glasses filled with ice. Garnish with the lime slices and the remaining mint sprigs.
BERRY, MELON AND MINT ICED TEA

- Bring 5 cups water and the sugar to a boil in a heavy large saucepan. Stir until the sugar dissolves. Add the mint. Remove the pan from the heat and add the tea bags. Let the tea steep for 10 minutes. Cool the tea to room temperature. Strain the tea into a large pitcher or bowl.
- Blend the watermelon and strawberries until smooth in a blender. Stir the fruit mixture into the tea. Add the lemon juice, peppermint and salt. Chill the tea until very cold, at least 2 hours and up to 1 day. Before serving, add chilled prosecco if using.
- Put a few ice cubes into each of the 6 glasses or water goblets. Add some watermelon, strawberries and the blackberries to each glass. Pour tea into each glass and garnish with mint sprigs and serve, passing lemon wedges.
MINT & MANGO ICED GREEN TEA
Blend the flavour of green tea with mango, fresh mint, lime and ice to make this iced tea. It makes a wonderfully refreshing summer drink at any time of day

- Put half the mango in a saucepan with the sugar and 100ml water. Cook for 8-10 mins then strain through a sieve and leave the liquid to cool.
- Meanwhile, pour 500ml boiling water into a large heatproof jug and add the green tea leaves. Leave to steep for 5 mins, then strain into a large glass jug and add 300ml cold water. Leave to cool completely then put into the fridge to chill.
- Once cold, add the strained mango syrup to the chilled tea, along with the rest of the chopped mango, fresh mint and the lime slices. Fill up the jug with ice, stir gently and serve.

- Place tea in teapot.
- Pour in boiling water.
- Cover and steep 2 to 3 minutes.
- Wash mint under running water and add to pot.
- Steep for 3 to 5 minutes.
- Add sugar as desired.
- Serve in mint tea glasses or small cups.
SPICED MINT GREEN TEA

- Pour 1 cup of hot water in a pitcher. Pour sugar and nutmeg, stirring until dissolved.
- Take the other cup of water and put in mug, microwave on high 2 minutes. Remove mug from microwave and seep the tea bags for 10 minutes.
- Pour seeped tea in pitcher, with sugar mixture, and fill with water to the top. Stir well. Garnish with sliced oranges.
