1/2 cup bourbon or reduced-sodium chicken broth
1/4 cup packed dark brown sugar
3 tablespoons white vinegar
3 tablespoons reduced-sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground allspice
1 pork tenderloin (1 pound), cut into 12 slices

Steps:

  • In a small saucepan, combine the bourbon, brown sugar, vinegar, soy sauce, garlic and pepper. Bring to a boil; cook until liquid is reduced to about 1/2 cup, stirring occasionally., Meanwhile, combine the chili powder, cinnamon, salt and allspice; rub over pork slices., In a large skillet coated with cooking spray, cook pork over medium heat for 2-4 minutes on each side or until tender. Serve with sauce.

1 (1 lb) pork tenderloin, trimmed

Steps:

  • To prepare sauce, combine the first 6 ingredients in a medium saucepan; bring mixture to a boil. Reduce heat to medium; cook until reduced to 1/2 cup (about 11 minutes), stirring frequently. Remove from heat.
  • To prepare pork, combine chili powder, cinnamon, allspice, and salt, stirring well; rub evenly over pork. Cut pork crosswise into 12 slices.

3 teaspoons ancho chili powder
2 teaspoons brown sugar
3 teaspoons grated dark chocolate
2 teaspoons ground coffee
1 (2 to 3-pound) pork loin
3 teaspoons stone-ground mustard
3 tablespoons grapeseed oil, plus more if needed
1 white onion, diced
1/4 cup chicken stock
1 cup root beer
1/4 cup apple juice
1/4 cup sour cream
1/4 cup unsalted butter
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the chili powder, brown sugar, dark chocolate, and coffee in a shallow dish. Coat the pork tenderloin with the mustard, then roll it into the chili powder mixture, coating well. Pat down to make sure the spices stick to the pork.
  • Add the oil to a large skillet over medium-high heat until smoking. Quickly sear the pork all over to get a golden brown color, turning constantly so the meat doesn't burn.
  • Put the pork loin on a baking sheet and roast in the preheated oven until required doneness is reached, about or 20 to 25 minutes. Remove the loin from the baking sheet to a cutting board and let rest for 5 minutes.
  • If needed, add a little more oil to the same skillet that was used to sear the pork. Heat the oil over low heat and stir in the onion. Saute the onion until soft, then add the chicken stock, root beer and apple juice. Simmer until the mixture is reduced to 1/2 the volume. Add the sour cream and stir until well combined.
  • Remove from the heat and stir in the butter. The sauce should be thick and glossy. Adjust the seasoning with salt and pepper, to taste. If the sauce is a little spicy, more sugar can be added.
  • Slice the pork into medallions and transfer to a serving platter. Serve with the root beer sauce on the side. Enjoy.

2 tablespoons light brown sugar
1 tablespoon kosher salt
2 teaspoons ground cumin
2 teaspoons dry mustard powder
2 teaspoons black pepper
1 teaspoon cayenne pepper
Two 2-pound pork tenderloins, patted dry
Canola oil
Bourbon-Chipotle Sauce, for serving, recipe follows
2 tablespoons olive oil
1 medium red onion, finely chopped
2 cups plus 2 tablespoons bourbon
4 cups homemade chicken stock
1 cup apple juice concentrate, thawed
1/4 cup light brown sugar
8 whole black peppercorns
1 chipotle in adobo sauce,chopped
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the paprika, sugar, salt, cumin, mustard powder, black pepper and cayenne pepper in a bowl.
  • Heat a large cast-iron pan over medium-high heat, and lightly coat with canola oil. Dredge the pork tenderloin in the rub, tapping off any excess, before searing on all sides, about 3 minutes per side. Place the pan into the oven and cook to medium doneness, 8 to 10 minutes. Promptly remove from the oven and let rest at least 15 minutes.
  • Serve with the Bourbon-Chipotle Sauce.
  • Heat the olive oil in a medium saucepan over medium-high heat. Cook the onions until soft, and then pour in 2 cups of the bourbon and cook until reduced to a few tablespoons. Stir in the chicken stock, apple juice, brown sugar, peppercorns and chipotle, and cook until reduced by half.
  • Strain through a fine mesh strainer, and then return to the pan and cook until it becomes the consistency of a sauce. Add the remaining 2 tablespoons bourbon and cook 2 minutes. Season with salt.

2 teaspoons Worcestershire sauce
1/4 cup vegetable oil
1 dash hot sauce
2 pork tenderloin, about 1 1/2 to 2 pounds

Steps:

  • In blender or food processor, combine bourbon, soy sauce, brown sugar, garlic, mustard, ginger, Worcestershire sauce, hot sauce, and oil; pulse until smooth.
  • Place tenderloin and marinade in a food storage bag; refrigerator for 4 hours or overnight.
