SPICY BACON CANDY



Spicy Bacon Candy image

Mix brown sugar with ancho chile powder and cayenne to create a sweet-and-spicy rub for bacon that gets roasted until glazed and candied.

1 pound sliced bacon
1 cup packed light brown sugar
1/2 teaspoon ancho chile powder
1/4 teaspoon coarsely ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 325 degrees F. Line two rimmed baking sheets with parchment.
  • Pat the bacon dry. Mix the brown sugar, chile powder, black pepper and cayenne together and spread out on a large plate. Press both sides of each bacon strip into the sugar mixture until coated and then arrange on the prepared baking sheets. Sprinkle with any remaining sugar mixture.
  • Bake until the bacon is golden and glazed, turning once, 20 to 25 minutes. Transfer to a wire rack to cool.

  • Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the cayenne pepper, crushed red pepper and black pepper. Lightly pat the brown sugar on top of the bacon to create a thin layer.
  • Transfer the baking sheet to the oven and bake for 30-40 minutes or until the brown sugar has melted and the bacon is crisp. Remove from the oven and allow to cool for 10 minutes. Using tongs, transfer the bacon to a parchment lined baking sheet and allow to cool to room temperature. Store in an airtight container for up to 3 days at room temperature.

  • Preheat the oven to 350°F and set a rack in middle position. Line a baking sheet with aluminum foil for easy clean-up, and set an oven-proof rack over top.
  • Meanwhile, in a small bowl, stir together the brown sugar, syrup, and chipotle powder. Set aside.
  • Remove the pan from the oven and flip the bacon slices. Using a small spoon, spread the sugar-syrup mixture evenly over the bacon. Place the pan back in the oven and continue cooking for 20-35 minutes more. (The cooking time will depend on the brand of bacon you use and how crispy you like it. I recommend cooking it as long as possible without burning it, so that the sugar mixture dries out; otherwise the bacon can be a little sticky.) Using tongs, transfer the bacon to a piece of parchment paper or a platter in a single layer to prevent sticking. Let cool for 10-15 minutes, then serve (the bacon will crisp up as it cools).
