SPICY BLACK BEAN MEATBALLS
These Spicy Black Bean Meatballs are perfect served with a little salsa, but they also make great wraps, sliders, and subs!

Steps:
- Preheat oven to 350ºF.
- Put the oats in the small bowl of a food processor and process until coarsely ground-it shouldn't be flour-like, but there should be very few whole oats left when you're finished.
- Place the black beans in a medium bowl. Use a fork to partially mash them, then fold in the oats, corn, green onions, garlic, and salsa. Sprinkle the cumin, chili powder, oregano, paprika, and cayenne over the top of the mixture and then stir them in too. Add salt and pepper to taste, then mix in the beaten egg.
- Spray a mini-muffin tin with oil. Form the black bean mixture into 12 balls and place each in a muffin cup. Bake for 20-30 minutes, or until the tops of the meatballs are dry to the touch and just beginning to brown. Let the meatballs cool for about 5 minutes, then carefully run a butter knife along the edges of the muffin cups to loosen them and pop them out of the muffin tin. Serve with salsa or in wraps, burritos, as meatball sliders or subs, etc.

- First make the meatballs. Tip the mince into a bowl, add the oats, spring onions, spices and the coriander stalks, then lightly knead the ingredients together until well mixed. Shape into 12 ping-pong- sized balls. Heat the oil in a non-stick frying pan, add the meatballs and cook, turning them frequently, until golden. Remove from the pan.
- Tip the onion and garlic into the pan with the pepper and stir-fry until softened. Stir in the cumin and chilli paste, then pour in the stock. Return the meatballs to the pan and cook, covered, over a low heat for 10 mins. Stir in the tomatoes and beans, and cook, uncovered, for a few mins more. Toss the avocado chunks in the lime juice and serve the meatballs topped with the avocado and coriander leaves.

- Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

- Heat the oil in a large flameproof casserole dish over a medium heat. Fry the meatballs for 5 mins until browned, then transfer to a plate with a slotted spoon.
- Fry the onion and peppers with a pinch of salt for 7 mins. Add the coriander stalks, garlic, paprika and cumin and fry for 1 min more. Tip in the sugar, tomatoes and beans, and bring to a simmer. Season, return the meatballs to the pan and cook, covered, for 15 mins. To freeze, leave to cool completely and transfer to large freezerproof bags.
- Serve the chilli with the rice and the coriander leaves scattered over.

- To prepare lime sour cream, mix the sour cream, lime juice, 1 small minced jalapeno, and salt together in a small bowl. Cover, and refrigerate.
- Heat 1 tablespoon olive oil in a small skillet over medium heat. Cook green onions until softened, about 1 minute. Stir in garlic, 2 diced jalapenos, and cumin; cook until fragrant, about 30 seconds.
- Transfer contents of skillet to a large bowl. Stir in black beans, and mash with a fork. Season with salt and pepper to taste. Mix in sweet potatoes, egg, and bread crumbs. Divide into 8 balls, and flatten into patties.

SPICY BLACK BEAN "MEAT"BALLS
I have been looking for different ways to get a satisfying meal as a newly converted vegetarian. THIS DISH is one of the many ways! I had these over rice with sour cream and salsa on the side, but you can also serve them with pasta and tomato sauce or, instead of rolling into balls, make patties for burgers (making 4 burgers). This will satisfy people who are not vegetarian as well, my boyfriend being the test subject. :)

- Preheat your oven to 350 degrees.
- In a mixing bowl, combine red onion, jalapeno, bread crumbs, salt, chili powder, and pepper. Set aside.
- Drain black beans and rinse thoroughly in a colander.
- In a food processor, combine black beans and egg until completely pureed. Add this mixture to the remaining ingredients.
- Combine all ingredients together. The mixture should not be sticky and should be easily formed into balls.
- Form mixture into 1 1/2 inch balls, making 12. Place them on a nonstick cookie sheet (or spray with non-stick spray) and place in the preheated oven.

- ---------SAUCE-------.
- Heat oil in a sauce pan.
- Add mustard seeds and fenugreek.
- When they are brown, add chopped onion.
- Reduce heat, and fry onion till they are transparent.
- Add garlic and fry on very low heat for about 5 minutes.
- It is very important to fry garlic on VERY low heat.
- Add chillie powder and curry powder.
- Stir and cook about 1 minute.
- Add chopped tomatoes and cook on high heat for another 2 minutes.
- Add can of diced tomatoes, tomatoe paste and tomato ketchup.
- Put soup cube and adjust salt.
- Sprinkle sugar on top.
- Cover and SLOW cook till meat balls are ready.
- ------METHODMEAT BALLS------------.
- In a large bowl, mix all the ingredients using your hand.
- Break and mix the egg.
- Squeeze milk out of the slice of bread and mix with the meat mixture.
- Make lime size balls and fry all sides on low heat for about 15-20 minutes.
- When frying it is important to use a non-stick frying pan.
- Fry them till they are medium brown on all sides.
- Add one by one to the sauce mixture, using a slotted spoon.
- Cover and SLOW cook for about 30 minutes[longer the better].
- These meat balls are very good if you serve over steamed rice.
- If you serve on bed of spaghetti, the sauce should be bit thinner.
- To adjust the sauce for spaghetti add 1 cup of boiling water to the sauce.
- Do this just after adding meat balls.
- Check for salt.
- Cover and SLOW cook for about 30 minutes[longer the better].
