These Spicy Black Bean Meatballs are perfect served with a little salsa, but they also make great wraps, sliders, and subs!

1/2 cup old-fashioned oats
1 15-ounce can black beans, rinsed and drained (or 1 1/2 cups cooked black beans)
1/3 cup frozen corn kernels
1/4 cup thinly sliced green onions
3 cloves garlic (minced)
3 tablespoons salsa (tomato-based)
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
Salt and pepper (to taste)
1 egg (beaten)
Salsa (for serving)

Steps:

  • Preheat oven to 350ºF.
  • Put the oats in the small bowl of a food processor and process until coarsely ground-it shouldn't be flour-like, but there should be very few whole oats left when you're finished.
  • Place the black beans in a medium bowl. Use a fork to partially mash them, then fold in the oats, corn, green onions, garlic, and salsa. Sprinkle the cumin, chili powder, oregano, paprika, and cayenne over the top of the mixture and then stir them in too. Add salt and pepper to taste, then mix in the beaten egg.
  • Spray a mini-muffin tin with oil. Form the black bean mixture into 12 balls and place each in a muffin cup. Bake for 20-30 minutes, or until the tops of the meatballs are dry to the touch and just beginning to brown. Let the meatballs cool for about 5 minutes, then carefully run a butter knife along the edges of the muffin cups to loosen them and pop them out of the muffin tin. Serve with salsa or in wraps, burritos, as meatball sliders or subs, etc.

1 red onion, halved and sliced
2 garlic cloves, sliced
1 large yellow pepper, quartered, deseeded and diced
1 tsp ground cumin
2-3 tsp chipotle chilli paste
300ml reduced-salt chicken stock
400g can cherry tomatoes
400g can black beans or red kidney beans, drained
1 avocado, stoned, peeled and chopped
juice ½ lime
500g pack turkey breast mince
50g porridge oats
2 spring onions, finely chopped
1 tsp ground cumin
1 tsp coriander
small bunch coriander, chopped, stalks and leaves kept separate
1 tsp rapeseed oil

Steps:

  • First make the meatballs. Tip the mince into a bowl, add the oats, spring onions, spices and the coriander stalks, then lightly knead the ingredients together until well mixed. Shape into 12 ping-pong- sized balls. Heat the oil in a non-stick frying pan, add the meatballs and cook, turning them frequently, until golden. Remove from the pan.
  • Tip the onion and garlic into the pan with the pepper and stir-fry until softened. Stir in the cumin and chilli paste, then pour in the stock. Return the meatballs to the pan and cook, covered, over a low heat for 10 mins. Stir in the tomatoes and beans, and cook, uncovered, for a few mins more. Toss the avocado chunks in the lime juice and serve the meatballs topped with the avocado and coriander leaves.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

2 tbsp olive oil
12 beef meatballs
1 onion, finely sliced
2 mixed peppers, sliced
½ large bunch coriander, leaves and stalks chopped
2 large garlic cloves, crushed
1 tsp hot smoked paprika
2 tsp ground cumin
1 heaped tbsp light brown soft sugar
2 x 400g cans chopped tomatoes
2 x 400g cans black beans, drained and rinsed
cooked rice, to serve

Steps:

  • Heat the oil in a large flameproof casserole dish over a medium heat. Fry the meatballs for 5 mins until browned, then transfer to a plate with a slotted spoon.
  • Fry the onion and peppers with a pinch of salt for 7 mins. Add the coriander stalks, garlic, paprika and cumin and fry for 1 min more. Tip in the sugar, tomatoes and beans, and bring to a simmer. Season, return the meatballs to the pan and cook, covered, for 15 mins. To freeze, leave to cool completely and transfer to large freezerproof bags.
  • Serve the chilli with the rice and the coriander leaves scattered over.

Steps:

  • In a medium saucepan, heat olive oil over medium heat. Add minced garlic and red-pepper flakes; cook until fragrant, about 1 minute. Add black beans and 1 cup water.

2 teaspoons fresh lime juice
1 small fresh jalapeno pepper, minced

1 tablespoon ground cumin
2 (14.5 ounce) cans black beans, drained and rinsed

Steps:

  • To prepare lime sour cream, mix the sour cream, lime juice, 1 small minced jalapeno, and salt together in a small bowl. Cover, and refrigerate.
  • Heat 1 tablespoon olive oil in a small skillet over medium heat. Cook green onions until softened, about 1 minute. Stir in garlic, 2 diced jalapenos, and cumin; cook until fragrant, about 30 seconds.
  • Transfer contents of skillet to a large bowl. Stir in black beans, and mash with a fork. Season with salt and pepper to taste. Mix in sweet potatoes, egg, and bread crumbs. Divide into 8 balls, and flatten into patties.
  • In the oven, set cooking rack about 4 inches from heat source. Set oven to broil. Lightly grease baking sheet with 1 tablespoon oil.
  • Place bean patties on baking sheet, and broil 8 to 10 minutes. Turn cakes over, and broil until crispy, about 3 minutes more. Serve with lime sour cream.

I had these over rice with sour cream and salsa on the side, but you can also serve them with pasta and tomato sauce or, instead of rolling into balls, make patties for burgers (making 4 burgers). This will satisfy people who are not vegetarian as well, my boyfriend being the test subject. :)

1/2 cup red onion, small dice
2 tablespoons jalapenos, minced
1/3 cup breadcrumbs, unseasoned
2 teaspoons salt
1 teaspoon chili powder

1 egg
1 (15 1/2 ounce) can black beans

Steps:

  • Preheat your oven to 350 degrees.
  • In a mixing bowl, combine red onion, jalapeno, bread crumbs, salt, chili powder, and pepper. Set aside.

1 (14 ounce) can diced tomatoes (Medium size)
2 tablespoons tomato paste
4 tablespoons tomato ketchup
3 tablespoons sugar
3 tomatoes, chopped
1 bulb of garlic, finely chopped
1 onion, finely chopped
1/2 teaspoon curry powder (preferably Sri Lankan Curry Powder)
1/2 teaspoon chili powder (optional)
1 maggi soup cube (Pizza sauce flavour)
1/2 maggi soup cube (Beef flavour)
1/2 teaspoon mustard
1/4 teaspoon fenugreek seeds
4 tablespoons vegetable oil
1/2 kg beef mince
1/2 kg ground pork
1 slice whole wheat bread, soaked in milk
1 bulb of garlic, finely chopped
1 medium onion, finally chopped
2 teaspoons finely chopped parsley
1 egg
1/2 maggi soup cube, dissolved in
2 tablespoons boiling water (I microwave for 2 sec.)
salt
fresh ground black pepper
1 green chili, finely chopped (optional)
3 tablespoons vegetable oil (for frying)

Steps:

  • ---------SAUCE-------.
  • Heat oil in a sauce pan.
  • Add mustard seeds and fenugreek.
  • When they are brown, add chopped onion.
  • Reduce heat, and fry onion till they are transparent.
  • Add garlic and fry on very low heat for about 5 minutes.
  • It is very important to fry garlic on VERY low heat.
  • Add chillie powder and curry powder.
  • Stir and cook about 1 minute.
  • Add chopped tomatoes and cook on high heat for another 2 minutes.
  • Add can of diced tomatoes, tomatoe paste and tomato ketchup.
  • Put soup cube and adjust salt.
  • Sprinkle sugar on top.
  • Cover and SLOW cook till meat balls are ready.
  • ------METHODMEAT BALLS------------.
  • In a large bowl, mix all the ingredients using your hand.
  • Break and mix the egg.
  • Squeeze milk out of the slice of bread and mix with the meat mixture.
  • Make lime size balls and fry all sides on low heat for about 15-20 minutes.
  • When frying it is important to use a non-stick frying pan.
  • Fry them till they are medium brown on all sides.
  • Add one by one to the sauce mixture, using a slotted spoon.
  • Cover and SLOW cook for about 30 minutes[longer the better].
  • These meat balls are very good if you serve over steamed rice.
  • If you serve on bed of spaghetti, the sauce should be bit thinner.
  • To adjust the sauce for spaghetti add 1 cup of boiling water to the sauce.
  • Do this just after adding meat balls.
  • Check for salt.
  • Cover and SLOW cook for about 30 minutes[longer the better].
