These Cajun green beans are a delicious, spicy alternative to your average ho-hum green beans recipe. And this recipe is super simple and quick to make.

2 Tbsp oil
29 ounces green beans (canned (2 cans) (or 1 pound fresh, 16 ounces frozen))
1 Tbsp garlic (minced)
1 small onion (chopped)
¼ tsp cayenne pepper (more or less to taste)
1 tsp paprika (smoked or sweet)
1 tsp oregano (dry)
1 tsp marjoram (dry)
1 cup chicken broth (or beef)
salt (to taste)

Steps:

  • Preheat a heavy Dutch oven or pot to low-medium heat.
  • Add oil, garlic, onion, oregano, and marjoram and cook until onion begins to soften, stirring often (5-10 minutes). Take care not to scorch the garlic.
  • Turn heat down to low and add green beans, cayenne pepper, and paprika. Mix together, cover and heat through for 10 minutes. Serve hot.

  • Cook 2 cups each chopped carrots and green beans in a medium pot of boiling salted water until just tender, about 3 minutes. Drain, then return the vegetables to the pot with 2 tablespoons butter, 1 tablespoon honey and the zest of 1/2 lemon; season with salt. Cook, stirring, over medium heat, 1 minute.

These snappy, spicy, garlicky beans are tasty on a relish tray, nestled alongside a hot dog, or used as a stirrer for a Bloody Mary. A blend of crushed red pepper and cayenne creates a well-rounded heat.

2 cups apple cider vinegar
2 cups water
2 tablespoons pickling salt
6 cloves garlic, crushed
3 teaspoons dill seed
1 ½ teaspoons crushed red pepper
¾ teaspoon cayenne pepper
2 pounds fresh green beans, trimmed

Steps:

  • Submerge 3 pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine vinegar, water, and pickling salt in a saucepan and bring to a boil.
  • Working with one jar at a time, remove empty jars from canning pot and add 1/3 of crushed red and cayenne peppers to each. Pack green beans into jars, leaving 1/2 inch for headspace.
  • Slowly pour hot brine over beans, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Slip in additional beans if space allows; check headspace again and add more brine if necessary to bring to 1/2 inch from top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

¾ pound fresh green beans, trimmed
2 tablespoons soy sauce
1 clove garlic, minced
1 teaspoon garlic chili sauce
1 teaspoon honey
2 teaspoons canola oil

Steps:

  • Arrange a steamer basket in a pot over boiling water, and steam the green beans 3 to 4 minutes.
  • In a bowl, mix the soy sauce, garlic, garlic chili sauce, and honey.
  • Heat the canola oil in a skillet over medium heat. Add the green beans, and fry for 3 to 5 minutes. Pour in the soy sauce mixture. Continue cooking and stirring 2 minutes, or until the liquid is nearly evaporated. Serve immediately.

A recipe I found on the floor of a department store while shopping. The Mcllhenny Company, they of celebrated Tabasco fame, included for promotion a free recipe with the purchase of a men's necktie. I have been making this every Thanksgiving for close to ten years now. Can be made vegetarian with the use of vegie soysage or "facon."

1/2 cup diced salt pork, I use 3 strips of cooked bacon, or
vegetarian bacon
1 tablespoon dijon-style mustard
1 1/2 lbs fresh green beans or 1 1/2 lbs frozen green beans
1 teaspoon sugar
1 garlic clove, minced
2 tablespoons white wine vinegar
1/2 teaspoon tabasco red pepper sauce
1/4 cup minced celery rib
1/4 cup chopped celery leaves
salt & freshly ground black pepper

Steps:

  • Steam the green beans until just done but still maintaining their bright green color. Drain. Keep warm.
  • In the meantime, in a small pan over medium-high heat cook the salt pork or bacon until crisp. Reserve the fat. (If using vegetarian bacon, you'll need to add a bit of oil to the pan for frying.).
  • Reduce heat, add the minced celery stalks and cook about 2 minutes; adding the garlic and cooking another minute longer. Stir in vinegar, Dijon mustard, sugar and TABASCO sauce. Heat through.
  • Remove from heat; stir in celery leaves.
  • Toss with beans to coat. Season with salt and pepper and adjust seasonings if necessary.

1-3/4 pounds fresh green beans, trimmed
1 teaspoon cayenne pepper
4 garlic cloves, peeled
4 teaspoons dill seed or 4 fresh dill heads
2-1/2 cups water
2-1/2 cups white vinegar
1/4 cup canning salt

Steps:

  • Pack beans into four hot 1-pint jars to within 1/2 in. of the top. Add the cayenne, garlic and dill seed to jars., In a large saucepan, bring the water, vinegar and salt to a boil. , Carefully ladle hot mixture over beans, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

  • In a large saucepan, bring the vinegar, water and salt to a boil. Carefully pour the hot vinegar mixture over the beans in the jars (pouring in the center to avoid contact with the glass), leaving about 1/2 inch of space at the top.
  • Gently bang the jars a bit to settle the contents and release the bubbles and add more liquid if needed. Clean the tops of the jars and top with lids, tightening the rings on.
  • Put the jars in a hot water bath, bring to 180 – 185 degrees F, and pasteurize the beans by keeping them at 180 – 185 for 30 minutes. Turn off the heat in the bath and let the jars sit in the hot water for 10 minutes longer.
