- In a large skillet, saute the onion and green pepper in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomato sauce, broth, parsley, pimientos, hot sauce, onion salt and pepper. , Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. Stir in shrimp; cook 5-7 minutes longer or until shrimp turn pink. Serve with rice.

SHRIMP AND KIMCHI RICE BOWL
If you want dinner with ease, make it a rice bowl. You can cook the rice in advance and reheat it, or employ a rice cooker. (A small one doesn't demand much space, and it cooks perfect rice while you go about other business.) But even if you make rice on the stovetop, you'll have 30 minutes to pull together the rest of this meal, so it's hot and ready all at once. Kimchi is the heavy lifter here, since it has tons of crunch and tang, which gives you space to add in other vegetable without doing much to them. They could be grated and raw, or make use of yesterday's leftovers. If shrimp isn't your speed, try this marinade on beef chuck or tofu. Or top the rice with an egg fried in a mixture of canola and sesame oil.

- Rinse the rice and cook in 2 cups water in a heavy saucepan over medium heat, covered, until tender, 20 minutes. Remove from the heat and keep covered 10 minutes more.
- Meanwhile, toss the cabbage with the salt and set aside in a colander to drain. (It should be sliced as thinly as possible, so it wilts in the salt.)
- Toss the shrimp with the chile-garlic sauce and brown sugar to coat. Heat the oil in a large skillet over medium-high heat. Add the shrimp and cook until just cooked through and slightly smoky, 4 to 5 minutes, adding the sesame seeds in the last minute of cooking. Season the shrimp with a pinch of salt.
- Divide the rice between 4 bowls. Top with the shrimp, cabbage, green onion, kimchi and any other vegetables.

- To season chicken and shrimp: In large bowl, toss chicken and shrimp with fajita seasoning. Add lime juice and lime zest. Toss and set aside.
- To stir-fry vegetables: In large skillet, bring 2 tablespoons oil to a sizzle. Add garlic, pepper and onion. Stir-fry for 4 to 5 minutes or until vegetables are soft and slightly charred. Remove to plate.
- To cook chicken and shrimp: Wipe out pan. Add remaining oil. Heat over medium-high heat until oil sizzles. Add chicken and shrimp. Stir-fry for 3 to 4 minutes or until shrimp is pink and chicken is crispy brown. (Note: If you're worried about overcooking shrimp, cook separately.) Season with salt and pepper. Return vegetables to pan. Stir. Reduce heat to keep warm.
- To prepare beans: Rinse and drain black beans. Heat in microwave or on stove top until warm.
- To assemble: Place 1 cup rice in bowl. Squeeze a little lime juice on top. Spoon on 1/2 cup beans. Add one-quarter of chicken/shrimp mixture and shredded cheese. Add topping as desired.

- For avocado cream, mash avocado with sour cream and salt until smooth. In a small saucepan, combine beans, pineapple, mango and salsa; heat through, stirring occasionally. Prepare rice according to package directions., Toss shrimp with jerk seasoning. In a large skillet, heat oil over medium-high heat. - Whisk orange juice, Sriracha, honey, soy sauce, ¼ cup oil, and 1 Tbsp. lime juice in a medium bowl. Set aside half of dressing in a small bowl for serving. Add shrimp to remaining sauce and toss to coat; season lightly with salt. Let sit, tossing occasionally, 15 minutes.

- Rinse the rice in cold water until the water runs clear. In a medium saucepan with a tight-fitting lid, combine rice and 1 1/2 cups of water, and 1/2 teaspoon salt. Bring to a boil, stir once, cover, and reduce heat to low. Simmer for 18 minutes. (Do not lift the lid or stir!) Remove from heat and let stand, covered, for 5 minutes; fluff with a fork.
- In a large skillet, heat the oils over medium heat. Add the shrimp and the garlic, stir for 3 minutes. The shrimp should be a bright pink. Watch them carefully so that they do not over cook and curl tightly. A perfectly cooked shrimp will be in the shape of a 'C" and not closed completely. Transfer them to a plate as they are cooked.
- In the same skillet, over medium heat, add the carrot slices and cook and stir for 3-4 minutes adding additional oil if necessary. Push the carrots to one-half of the skillet and add the red pepper slices and cook and stir until slightly soft, keeping the two vegetables separate, about 2-3 more minutes. Remove and set aside separately. Add the scallions and stir. Cook till just heated through. Remove and set aside. Add the gai lan and 2-3 tablespoons of water, place a lid on the skillet and steam until wilted. Remove and set aside.
- Add a portion of rice to each bowl, and place an equal amount of the shrimp on top. Divide each cooked vegetable component equally and add it to the bowls. Add the pickled baby corn-on-the cob, peanut sauce, peanuts and sliced dried mango. Garnish with fresh cilantro sprigs and squeeze the lime over the entire bowl.
