JALAPENO SPICY CORNBREAD DRESSING
Give your guests a little kick for the holiday meal with this deliciously easy jalapeno spicy cornbread dressing.

Steps:
- Make the cornbread muffin mixes together in a 9 x 9 pan according to instructions. This can be done 1-3 days in advance.
- Preheat oven to 350 F degrees.
- Crumble the cornbread into a large bowl.
- Cube the bread and add it to the bowl.
- Add the sage to the bread mixture.
- Chop the celery and green onions.
- Saute the celery and onions in the oil until the oil is almost gone.
- Add 1 cup of water to the pan and put a lid on it. Simmer for 7-8 minutes until tender.
- Add the celery/onion mixture to the bread mixture.
- Add the chicken broth, jalapeno juice (from jars of jalapenos), and chopped jalapenos to the mixture.
- Stir until well combined.
- Pour into a greased 9 x 13 pan.
- Add sliced jalapenos on top of the dressing.
- Bake for 30 minutes
- Allow to cool for a few moments before serving.

- Preheat oven to 375 degrees F (190 degrees C). Butter a 13x9-inch pan.
- Combine the flour, cornmeal, baking powder, 1 teaspoon salt, and sugar, and mix well.
- Whisk together 5 eggs, 6 tablespoons melted butter, and buttermilk. Add wet to dry ingredients, mixing just until incorporated. Pour into prepared pan.
- Bake in preheated oven until top is browned and a toothpick comes out clean, about 55 minutes. Allow to cool completely.
- To Make Stuffing: In a small bowl, combine the 2 tablespoons salt with the white pepper, black pepper, cayenne pepper, onion powder, oregano, thyme, basil, and bay leaves.
- In another bowl, combine the minced onions, green onions, parsley, red or green peppers, chili peppers, and garlic.
- Melt 1 cup butter in a large frying pan. Add the spices and cook for a few minutes. Add the vegetables and cook about 5 minutes. Do not allow the vegetables to brown. Add the stock and Tabasco. Stir and cook 5 minutes more. Crumble the cornbread into the skillet and mix; remove pan from heat.
- Whisk 7 eggs and evaporated milk; pour into stuffing mixture. Return to low heat and cook, stirring, for about 2 minutes. Remove the bay leaves. Place stuffing in a bowl; cool before stuffing turkey.

- Grease a 9x13-inch baking dish and preheat oven to 375 degrees.
- Heat a large non-stick skillet over medium-high heat. Add chorizo and cook until nicely browned, breaking it apart as much as possible. Remove chorizo with a slotted spoon and set aside.
- Add butter to the grease in the pan and heat over medium heat until melted. Add the onion, green pepper, and celery. Cook until softened, about 3 to 4 minutes.
- Add jalapeno, garlic powder, and green onion and cook for 1 more minute. Transfer mixture to a large bowl.
- Add chorizo, cilantro, cornbread, salt, pepper and eggs and mix well.
- Mix in 3 1/2 cups of chicken broth. If really moist, 3 1/2 cups is enough. If not, add more chicken broth.
- Transfer to prepared pan. Scatter butter slices on top. Bake fro 30 to 35 minutes, or until browned on top.

- Generously grease a 13- x 9-inch baking dish with vegetable oil. Preheat oven to 375°F. Heat a large cast-iron or nonstick skillet over medium-high. Add 1 tablespoon of the oil to skillet, and heat until a piece of onion sizzles when added. Add chorizo, and cook, tossing often and breaking up meat with a spoon, until fragrant and nicely browned, 3 to 5 minutes. Transfer chorizo to a bowl, and set aside. Reserve drippings in skillet.
- Add remaining 1 tablespoon vegetable oil to drippings in skillet. Once oil is hot, add chopped yellow onion, green bell pepper, and celery. Cook over medium-high, tossing often, until mixture is fragrant and softened, 3 to 4 minutes. Add chopped garlic and white parts of scallions, and cook, stirring constantly, until fragrant, about 1 minute. Remove pan from heat.
- Transfer onion mixture to a large bowl, and add crumbled cornbread and cooked reserved chorizo. Stir mixture to combine well. Add chopped cilantro and jalapeño, salt, and black pepper, and stir to combine well. Add beaten eggs and chicken stock, and stir to combine well, making sure mixture is evenly moistened.
- Transfer cornbread mixture to prepared baking dish. Bake in preheated oven until dressing is cooked through and browned, 25 to 35 minutes. Serve hot or warm. Sprinkle dressing with reserved green parts of scallions before serving.
CAJUN CORNBREAD
This is an awesome seafood cornbread, though it almost comes out like a casserole. It has so many ingredients it doesnt firm up quite as hard as cornbread usually.

- SEASONING MIX: Combine thoroughly, set aside.
- In large sauce pan, melt butter.
- Add onions, bell pepper, celery, garlic and bay leaves; cook over high heat about 2 minutes, stirring frequently.
- Add seasoning mix and continue cooking 5 more minutes.
- Stir in sausage, chicken broth and Tabasco.

- Preheat oven to 350°F. Arrange corn bread on large baking sheet. Bake until slightly dry and toasted, about 20 minutes. Transfer to very large bowl; cool.
- Melt butter in heavy large Dutch oven over high heat.
