SPICY LOW-COUNTRY SHRIMP AND GRITS

Steps:
- Grits: Bring milk, salt, pepper, and butter to a boil. Stir in grits, pepper flakes, and pepper sauce over low heat. When consistency is ready, in about 45 to 50 minutes add cheese and stir.
- Shrimp: Toss shrimp in Cajun seasoning and set aside. In a saute pan, over medium heat, heat the oil. Add the sausage and render for 3 minutes. Add garlic, stir for 1 to 2 minutes. Add the shrimp and butter and saute for 2 to 3 minutes. Stir in cayenne pepper, piquillo peppers, and pepper flakes. Add half wine (drink what's leftover), and fresh herbs and simmer for 2 to 3 minutes. Add salt and pepper, to taste. Plate grits in a shallow bowls with shrimp mixture over the top. Garnish with scallions and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12 inch baking dish.
- Bring chicken broth and salt to a boil in a large saucepan over high heat. Stir in the grits, return to a simmer, then reduce heat to medium-low, and continue cooking for 20 minutes, stirring frequently.
- Meanwhile, melt the margarine in a skillet over medium heat. Stir in the green onions, green pepper, and garlic; cook until the peppers have softened, about 5 minutes. Stir in the shrimp, and cook until they begin to firm.
- Stir the Monterey Jack cheese, 3/4 cup Cheddar cheese, shrimp and vegetable mixture, canned tomatoes, and black pepper into the grits; pour into prepared baking dish and sprinkle with remaining 1/4 cup Cheddar cheese.
- Bake in preheated oven until the cheese is bubbly and beginning to brown, 30 to 45 minutes.

- Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

- Cook grits: Add 4 parts cold water to 1 part grits and some salt. Stir well. Bring to a boil, stirring constantly. Boil a minute or so until they begin to thicken, stirring constantly or they will lump. Reduce heat to low. Partially cover pot with a lid and let simmer until thick and creamy. Add cheese to your taste. Cover and let them sit while you make the shrimp. Shrimp: Heat a large skillet over medium high heat. Add olive oil, butter, garlic, tomato, and red pepper flakes. Saute until tomato starts to soften. Stir in shrimp. Saute shrimp 2 or 3 minutes or just until they curl and turn pink. Season with salt & pepper. Toss with lemon zest, juice, & chopped parsley. Serve over plain or cheese grits.

- Bring chicken broth, milk, and 1 teaspoon garlic to a boil in a saucepan. Stir in grits, reduce heat to low, and simmer until thickened, about 5 minutes.
- Remove from heat and thoroughly mix in Cheddar cheese; season with salt and black pepper. Set grits aside and keep warm.
- Heat butter and olive oil in a skillet over medium heat. Cook and stir onion and 2 teaspoons garlic until softened and beginning to brown, about 5 minutes.

- In a large saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. Stir in cheese and butter until melted; keep warm., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. SPICY GARLIC SHRIMP
This is my favorite shrimp recipe that my family makes, and I think it may have originally been from Rachael Ray. You can have it over noodles, over rice or as a side dish to a steak. I usually cook it in a pan, but you can also put it on skewers and grill it. It's just a really good way to have shrimp!

- In a large saucepan, heat the olive oil and butter over medium heat.
- In a bowl, combine the shrimp with the crushed red pepper, Montreal steak seasoning and salt and pepper.
- Saute the garlic in the pan until it's a pale golden color, then add the shrimp.
- Cook the shrimp until just pink, about 3 minutes. (Cooking time may be longer if not all the shrimp are in contact with the pan. Be careful not to overcook the shrimp or it will be rubbery!).
- When the shrimp is done, remove the pan from the heat and add the lemon juice. Enjoy!
