CHEESY JALAPEñO BACON DIP
Steps:
- In a large frying pan, fry bacon until crispy. Remove and place on a plate lined with paper towels.
- Preheat oven to 350° and spray a 1 quart baking dish with a non stick spray. Set aside.
- In a medium mixing bowl, beat cream cheese until creamy, then add mayonnaise and sour cream. Mix until incorporated.
- Add cheese (saving 1/2 cup for topping), jalapeños, onions, cilantro to mixing bowl. Stir.
- Crumble bacon, add to bowl, stir, saving a small amount for the topping.
- Spoon into prepared baking dish. Top with remaining cheese and bacon and pop in the oven.
- Bake for 20-25 minutes until cheese is bubbly and mixture is heated thoroughly.
- Remove for oven, serve hot with corn chips or tortilla chips.

- Preheat oven to 350 degrees F. Spray baking dish with non-stick spray and set aside. I use my quiche pan, but any shallow baking dish will work.
- Add softened cream cheese and mayo to a mixing bowl and beat with a hand mixer until smooth and combined. Add 1/2 the bacon, jalapenos, green chiles, cumin, and mexican and mozzarella cheeses.
- Transfer to prepared dish, smooth out with a rubber spatula.
- Combine melted butter, panko, and Parmesan cheese. Sprinkle over the top of the dip. Sprinkle remaining bacon pieces over the top.
- Bake for 25 minutes, until panko is lightly golden brown and dip is bubbling.
- If desired, top cooked dip with slices of fresh jalapeno. Serve hot.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until nearly crispy, about 5 minutes. Add jalapenos and fry with bacon until soft and bacon is crispy, about 5 minutes. Drain some of the bacon fat, leaving 4 tablespoons of fat in the pan.
- Stir chile paste into the pan and fry for 1 minute. Add salt and pepper to taste. Add flour and cook for 1 minute. Cook and stir garlic in the pan for 1 minute. Pour in milk and cook over medium heat, whisking constantly, for 5 minutes. Remove from heat and let sit for 10 minutes to cool slightly and prevent cheese from separating.
- Stir Cheddar cheese and Parmesan cheese into the mixture until melted. Add drained pasta and mix together. Serve.

HOT JALAPENO BACON-SPINACH DIP
I saw this on the label of my Duke's mayo. I am posting it here for safekeeping. I have not tried it, I don't like very hot spicy foods. I have a friend who likes things the hotter the better, so I am sure she will like it :) I may try it with the jalapenos greatly reduced. - Add cheese to bowl.
- I put the onion and jalapeno in the electric chopper until they are chopped fine. Add to cheese.
- Add bacon (use real bacon bits) and mayo
- Mix all together.
- Chill 30 minutes.
- I guessed on the mayo measurement -- so could be a little more or a little less.
- If it is too hot, take the seeds out of one of the jalapenos.
- Doesn't have to be chilled to eat (usually my husband can't wait).
