A perfect dip to add to the menu for Super Bowl parties, family gatherings, or getting together on game day.

8 oz cream cheese, (softened)
2 1/2 cups Three alarm cheese, (grated, divided (any spicy cheese will work))
1/3 cup green onions, (sliced)
1/4 cup cilantro, (chopped)
1/2 cup mayonnaise
1/2 cup sour cream
8 pieces bacon, (cooked crisp and crumbled)
1/8-1/4 cup jalapeños, (seeds removed, chopped up small)

Steps:

  • In a large frying pan, fry bacon until crispy. Remove and place on a plate lined with paper towels.
  • Preheat oven to 350° and spray a 1 quart baking dish with a non stick spray. Set aside.
  • In a medium mixing bowl, beat cream cheese until creamy, then add mayonnaise and sour cream. Mix until incorporated.
  • Add cheese (saving 1/2 cup for topping), jalapeños, onions, cilantro to mixing bowl. Stir.
  • Crumble bacon, add to bowl, stir, saving a small amount for the topping.
  • Spoon into prepared baking dish. Top with remaining cheese and bacon and pop in the oven.
  • Bake for 20-25 minutes until cheese is bubbly and mixture is heated thoroughly.
  • Remove for oven, serve hot with corn chips or tortilla chips.

16 oz cream cheese (softened)
1 cup mayo
4 oz can diced jalapenos (drained)
4 oz can diced green chiles (drained)
1/2 cup shredded Mexican cheese
1 cup shredded Mozzarella cheese
1/2 tsp cumin
6 slices cooked and crumbled bacon (divided)
1/3 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
2 Tbsp unsalted butter (melted)

Steps:

  • Preheat oven to 350 degrees F. Spray baking dish with non-stick spray and set aside. I use my quiche pan, but any shallow baking dish will work.
  • Add softened cream cheese and mayo to a mixing bowl and beat with a hand mixer until smooth and combined. Add 1/2 the bacon, jalapenos, green chiles, cumin, and mexican and mozzarella cheeses.
  • Transfer to prepared dish, smooth out with a rubber spatula.
  • Combine melted butter, panko, and Parmesan cheese. Sprinkle over the top of the dip. Sprinkle remaining bacon pieces over the top.
  • Bake for 25 minutes, until panko is lightly golden brown and dip is bubbling.
  • If desired, top cooked dip with slices of fresh jalapeno. Serve hot.

Steps:

  • To make this Cheesy Bacon Jalapeno Dip, preheat your oven to 350 degrees and spray a baking pan with non-stick spray.
  • Reserve 3/4 cup of shredded cheese and a small bit of bacon and diced jalapeno and set aside. Add all of your remaining ingredients to a large bowl and using a hand mixer, mix to combine. Spoon your dip into your baking pan, sprinkle with the reserved shredded cheese and toppings and cook for 25 minutes.

1 (16 ounce) package bacon, cut into bite-size pieces
10 jalapeno peppers, seeded and diced
2 tablespoons chile paste, or to taste
salt and ground black pepper to taste
4 tablespoons all-purpose flour
1 tablespoon minced garlic
4 cups whole milk
16 ounces shredded extra-sharp Cheddar cheese
8 ounces shredded Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until nearly crispy, about 5 minutes. Add jalapenos and fry with bacon until soft and bacon is crispy, about 5 minutes. Drain some of the bacon fat, leaving 4 tablespoons of fat in the pan.
  • Stir chile paste into the pan and fry for 1 minute. Add salt and pepper to taste. Add flour and cook for 1 minute. Cook and stir garlic in the pan for 1 minute. Pour in milk and cook over medium heat, whisking constantly, for 5 minutes. Remove from heat and let sit for 10 minutes to cool slightly and prevent cheese from separating.
  • Stir Cheddar cheese and Parmesan cheese into the mixture until melted. Add drained pasta and mix together. Serve.

2 cups shredded cheese (I use Mexican)
1/4-1/2 medium onion
1/2 cup bacon bits
2 jalapenos
1 cup mayonnaise

Steps:

  • Add cheese to bowl.
  • I put the onion and jalapeno in the electric chopper until they are chopped fine. Add to cheese.
  • Add bacon (use real bacon bits) and mayo
  • Mix all together.
  • Chill 30 minutes.
  • I guessed on the mayo measurement -- so could be a little more or a little less.
  • If it is too hot, take the seeds out of one of the jalapenos.
  • Doesn't have to be chilled to eat (usually my husband can't wait).
