SHRIMP BURGERS WITH OLD BAY MAYO



Shrimp Burgers with Old Bay Mayo image

1 pound peeled and deveined medium shrimp
1/3 cup panko breadcrumbs
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
1 large egg, lightly beaten
1/4 cup canola oil
1/2 cup mayonnaise
1 teaspoon to 1 tablespoon Old Bay seasoning
4 brioche buns, halved and lightly toasted
Avocado slices, for topping
Lettuce leaves, for topping
Tomato slices, for topping

Steps:

  • For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
  • For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
  • To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

Steps:

  • In a bowl, combine tomato juice, egg, bread crumbs, dried tomato, Worcestershire sauce, celery salt, hot sauce, and garlic if desired. Add ground beef and gently mix with a fork just until ingredients are evenly blended.
  • Divide meat mixture into 4 equal portions. With your hands, shape burgers into 3/4/-inch-thick patties.

2 teaspoons grated yellow onion
1/2 cup freshly squeezed lemon juice (2 lemons)

1/2 teaspoon kosher salt
1/2 teaspoon Tabasco, or to taste
1 (46 ounce) can Sacramento tomato juice
2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. 1 large head broccoli, cut into thin long spears
2 celery ribs, finely chopped
1/2 pint grape tomatoes, halved
3 -4 sprigs fresh dill, chopped
1/4 cup fresh flat leaf parsley, chopped
1 lime, juice of
3 tablespoons mayonnaise
2 lbs ground sirloin
2 tablespoons prepared horseradish
1 1/2 teaspoons celery salt
2 tablespoons Worcestershire sauce
2 teaspoons hot sauce
4 sandwich-size english muffins

Steps:

  • Preheat the oven to 425°.
  • Place the 1/4 cup olive oil, garlic, chili powder, and a little salt and pepper in the bottom of a large bowl and add the broccoli spears.
  • Toss to coat the broccoli evenly, then transfer to a large nonstick baking sheet.
  • Roast the broccoli until the ends are crisp and brown and the stalks are tender, 17-20 minutes.
  • To make the burger topping, in a bowl, combine the chopped celery and the grape tomato halves with the dill, parsley, lime juice, and mayonnaise.
