1 lb hot Italian sausage, loose, removed from casings
2 tablespoons olive oil, plus additional for serving
12 ounces linguine, broken in half
2 cups low sodium chicken broth
1 1/4 cups marinara sauce
fresh basil, for serving
freshly grated parmesan cheese, for serving
1/2 lb mozzarella cheese, thinly sliced (optional)

Steps:

  • Form sausage into sixteen 1 ½-inch meatballs.
  • Heat a large skillet over high heat. Add 2 tablespoons olive oil and swirl to coat. When smoking, add meatballs. Sear, flipping halfway through and only when meatballs release from skillet, about 2 minutes per side.
  • Add linguine, chicken broth, and marinara. Bring to a boil and cook, stirring constantly, for 7-8 minutes, until noodles are al dente. Drizzle skillet with olive oil and serve immediately, garnished with basil and parmesan. Optional: top with slices of mozzarella and transfer to broiler until cheese is bubbling and golden in spots, about 3-4 minutes.

1/2 lb ground beef
2 Italian sausages
1 pinch cayenne pepper (optional)
1 -2 teaspoon dried basil
2 teaspoons garlic salt (adjust to your taste)
1 cup Italian style breadcrumbs
1/2 small onion (diced)
2 eggs
1 -2 teaspoon cilantro (chopped)
1 -2 teaspoon parmesan cheese
olive oil (for frying)

Steps:

  • cut the sausages in half and squeeze the meat out onto a mixing bowl.
  • Mix ground beef with sausage meat with hands.
  • Mix cayenne pepper, garlic salt, cilantro, onion. parmesan cheese and basil with the meat mixture. Mix thoroughly.
  • Beat eggs in a separate bowl.
  • Pour eggs into the meat while adding bread crumbs. Add bread crumbs till the meat mixture is firm.
  • Make 1 inch meatballs with hands.
  • Fry meatballs in olive oil until brown.
  • Enjoy with pasta sauce.

1 pound ground beef
1 pound ground pork
3/4 cup panko breadcrumbs
1/2 cup freshly grated Parmesan
1/2 cup ricotta cheese
1/4 cup fresh flat-leaf parsley, minced
1/2 teaspoon crushed red pepper
1/4 teaspoon salt
3 cloves garlic, grated on a rasp grater
2 whole eggs
Splash of milk
Freshly ground black pepper
1/2 cup olive oil, for frying
3 cloves garlic, minced
1 onion, diced
Two 28-ounce cans tomato sauce
1/4 cup fresh flat-leaf parsley, minced
3 tablespoons tomato paste
2 tablespoons sugar
1/4 teaspoon salt
Crushed red pepper, as needed
Freshly ground black pepper

Steps:

  • For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
  • Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
  • For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
  • Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
  • Transfer to a chafing dish and serve with frilly toothpicks.

1/4 cup finely chopped shallot (about 1 large)
1/4 cup finely chopped peeled red apple
2 tablespoons Dijon mustard
2 teaspoons chopped fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
2 eggs, slightly beaten
3/4 cup real maple syrup
1/2 cup apple cider
1 tablespoon Sriracha sauce

Steps:

  • Heat oven to 400°F. Spray large rimmed cookie sheet with cooking spray. In large bowl, stir Meatball ingredients until well mixed. Shape into 42 (about 1 1/2-inch) balls; place on cookie sheet. Bake 13 to 15 minutes or until meatballs are no longer pink in center (160°F).
  • Meanwhile, in 12-inch skillet, stir Sauce ingredients until well blended. Heat to boiling over medium heat. Reduce heat to medium-low; simmer 5 to 8 minutes, stirring occasionally, until thickened and reduced by half (about 2/3 cup).
  • Add meatballs to sauce; stir to coat. Cook over medium heat 3 to 4 minutes, stirring and turning meatballs occasionally, until thoroughly coated in sauce.

2 pounds bulk hot Italian sausage
½ cup red wine vinegar
½ cup ketchup
½ cup brown sugar
1 tablespoon soy sauce
½ teaspoon ground ginger

Steps:

  • Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
  • Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
  • Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.
