I threw together three favorite veggies and spicy sausage for this incredible sauce that makes our mouths water the whole time it's cooking. Besides serving this with pasta (refrigerated tortellini is best), we've had it with brown basmati rice, as "sloppy subs" on toasted Italian rolls and as a "stew" with garlic bread. -Ann Sheehy, Lawrence, Massachusetts

2 cans (28 ounces each) crushed tomatoes
2 cans (14-1/2 ounces each) diced tomatoes, undrained
3/4 pound sliced fresh mushrooms
5 garlic cloves, minced
4 teaspoons Italian seasoning
1 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 large sweet onion
1 large green pepper
1 medium sweet red pepper
1 medium sweet orange pepper
1 medium sweet yellow pepper
10 hot Italian sausage links (4 ounces each), casings removed
1/4 cup all-purpose flour
2 tablespoons canola oil
Hot cooked pasta

Steps:

  • Place first eight ingredients in a 6-qt. slow cooker. Chop onion and peppers; stir into tomato mixture., Shape sausage into 1-3/4-in. balls; roll in flour to coat lightly. In a large skillet, heat oil over medium-high heat; cook meatballs in batches until lightly browned, 5-8 minutes, turning occasionally. Drain on paper towels. Add to slow cooker, stirring gently into sauce., Cook, covered, on low 5-6 hours or until meatballs are cooked through and vegetables are tender. Serve with pasta. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Place meatball mixture in a large skillet; heat through, stirring occasionally and adding a little water if necessary.

1 pound ground beef
1 pound ground pork
3/4 cup panko breadcrumbs
1/2 cup freshly grated Parmesan
1/2 cup ricotta cheese
1/4 cup fresh flat-leaf parsley, minced
1/2 teaspoon crushed red pepper
1/4 teaspoon salt
3 cloves garlic, grated on a rasp grater
2 whole eggs
Splash of milk
Freshly ground black pepper
1/2 cup olive oil, for frying
3 cloves garlic, minced
1 onion, diced
Two 28-ounce cans tomato sauce
1/4 cup fresh flat-leaf parsley, minced
3 tablespoons tomato paste
2 tablespoons sugar
1/4 teaspoon salt
Crushed red pepper, as needed
Freshly ground black pepper

Steps:

  • For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
  • Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
  • For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
  • Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
  • Transfer to a chafing dish and serve with frilly toothpicks.

Lightly combine the ingredients with your hands. Add the 3 tablespoons of olive oil and the eggs, and stir lightly with a fork to combine. With your hands, lightly roll the mixture into 2-inch-round meatballs and place them on the prepared sheet pans. Brush the meatballs with olive oil. Bake for 35 to 40 minutes, until the tops are browned and the centers are completely cooked. Pour the marinara sauce in a large, low pot, add the meatballs, and bring to a simmer. Hunting season sneaks up on me every year and I find myself needing to use up a few pounds of venison to make room for the new. These venison meatballs are great served in hoagies or with pasta and sauce. These are spicy but not to the point that it overpowers the venison.

1 pound ground venison
4 ounces bulk hot Italian sausage
¾ cup panko bread crumbs
2 eggs
1 teaspoon salt
1 teaspoon Italian seasoning
1 teaspoon crushed red pepper
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and place a cooling rack on top.
  • Combine ground venison, Italian sausage, bread crumbs, eggs, salt, Italian seasoning, red pepper, and garlic powder in a large bowl and mix until well combined. Scoop meat from the bowl and form into 1 1/2-inch balls. Place meatballs on top of the cooling rack.
  • Bake in the preheated oven until cooked though, about 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from oven and let rest for 5 minutes before serving.

1 egg, lightly beaten
3/4 cup crushed seasoned salad croutons
1/2 cup finely chopped onion
1/4 cup finely chopped green pepper
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon pepper
1 pound ground turkey
1 pound bulk Italian sausage
SAUCE:
3 tablespoons cornstarch
1 tablespoon sugar
3/4 cup beef broth
2 cans (28 ounces each) crushed tomatoes
3 medium carrots, diced
1 can (6 ounces) tomato paste
1 envelope onion soup mix
3 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
Hot cooked pasta

Steps:

  • In a large bowl, combine the egg, croutons, onion, green pepper, garlic powder, cumin, oregano and pepper. Crumble turkey and sausage over mixture and mix well. Shape into 1-in. balls. Place in a 5-qt. slow cooker., In a large bowl, combine the cornstarch, sugar and broth until smooth; stir in the tomatoes, carrots, tomato paste, soup mix, garlic, basil and pepper flakes. Pour over meatballs. Cover and cook on low for 5-6 hours or until meatballs are cooked through. Serve with pasta., Serve immediately or cool before placing in a freezer container. Cover and freeze for up to 3 months., To use frozen meatballs: Completely thaw in the refrigerator. Place meatballs in a large skillet; cover and cook for 10 minutes or until heated through. Serve with pasta.

2 pounds bulk hot Italian sausage
½ cup red wine vinegar
½ cup ketchup
½ cup brown sugar
1 tablespoon soy sauce
½ teaspoon ground ginger

Steps:

  • Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
  • Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
  • Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.

3/4 pound spaghetti
1 tablespoon olive oil
1 medium yellow onion, halved lengthwise and cut into 1/4-inch slices
1 large red bell pepper, cut into 1/4-inch strips
1 can (28 ounces) whole peeled tomatoes, pureed, or 1 can (28 ounces) crushed tomatoes
1/2 teaspoon red-pepper flakes
1/2 cup plain dried breadcrumbs
1/2 cup whole milk
1 pound ground pork
3/4 teaspoon fennel seed, crushed
Grated Parmesan, for serving

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain.
  • Meanwhile, in a large heavy pot, heat oil over medium-high. Add onion and cook, stirring, until translucent, 5 minutes. Remove 1/3 cup onion and transfer to a cutting board. Add bell pepper to remaining onion and cook, stirring occasionally, until bell pepper is softened, 8 minutes. Add 1/4 cup water to pot, scraping up browned bits with a wooden spoon. Add tomatoes (if using crushed, add an additional 3/4 cup water) and red-pepper flakes and bring to a gentle simmer.
  • In a large bowl, combine breadcrumbs, milk, and 1 teaspoon salt. Roughly chop reserved onion and add to bowl, along with pork and fennel seed. Stir until just combined (do not overmix). Drop meat mixture by heaping tablespoons into sauce. Gently shake pot to submerge meatballs as much as possible, cover, and simmer until cooked through, about 8 minutes. Divide pasta among four bowls, top with meatballs and sauce, and sprinkle with Parmesan.

Steps:

  • Preheat oven to 400°F. Mix sausage, 1/2 cup marinara, Parmesan, 2 tablespoons parsley, and 2 tablespoons basil in large bowl. Using wet hands, shape mixture into 8 meatballs. Bring 2 tablespoons parsley, 2 tablespoons basil, remaining marinara, and meatballs to boil in large skillet. Cover, reduce heat, and simmer until meatballs are cooked through, turning often, about 20 minutes.
  • Place baguette bottoms on baking sheet; spread each with about 2 tablespoons sauce from skillet. Cut meatballs in half in skillet; overlap 4 halves on each baguette bottom. Spoon remaining sauce over meatballs, then sprinkle mozzarella over, dividing equally. Bake until cheese melts, about 5 minutes. Sprinkle with remaining parsley and basil and cover with baguette tops.

I had some spicy homemade sausage to use and thought some meatballs sounded good! Found a couple recipes and combined. The kids thought it was great! So did the wife and I. Use them in Italian dishes or as appetizers. Would also be good on a meatball sub!

2 lbs ground beef
1 lb bulk sausage
2/3 cup fine dry breadcrumb
3 tablespoons minced garlic cloves
1 medium onion, finely chopped
1 teaspoon dried basil
2 large eggs
2 tablespoons water, as needed

Steps:

  • Line shallow baking dish with foil and oil.
  • Combine all ingredients and mix, using enough water to meld.
  • Shape into meatballs 1 1/2 to 2 inches in diameter.
  • Broil the meatballs 8 inches from broiler for 10 minutes. Turn over meatballs and broil for 10 more minutes.
  • I had 50 meatballs so you may have to broil in two batches. I used my Holland grill and cooked them on there which helped eliminate them sitting in the grease.

1 1/2 lbs lean ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 -2 garlic clove, minced
5 slices bacon, cooked and crumbled
2 jalapeno peppers, seeded and chopped (optional)
1 tablespoon chili powder
1/2 teaspoon salt (to taste)
1/4 teaspoon dried oregano
2 1/2 cups water
1 (12 ounce) can tomato paste
1 (16 ounce) can kidney beans, drained
hot cooked rice or hot cooked noodles

Steps:

  • Brown sausage in a large pot; remove and set aside, reserving 2 tablespoons drippings.
  • Shape ground beef into 60 (3/4 inch) balls.
  • Saute meatballs in reserved drippings until browned, stirring gently.
  • Add in cooked sausage, bacon, jalapeno peppers, and seasonings.
  • Add in water and tomato paste, stirring gently.
  • Bring to a boil; cover, reduce heat, and simmer for 1 ½ hours, stirring occasionally.
  • Stir in kidney beans; cover and simmer 15 minutes.
  • Serve over hot cooked rice or noodles.
