Fried Mashed Potato Balls image

These crispy Fried Mashed Potato Balls with ranch dip are a great way to use up leftover potatoes. Flavored with bacon and cheese plus some green onion.

1 (24-ounce) container refrigerated mashed potatoes or 3 cups leftover mashed potatoes
1 cup shredded sharp Cheddar cheese
1/4 cup sliced green onion
4 slices bacon cooked and crumbled
1-2 teaspoons finely minced jalapeno, (optional)
1/2 teaspoon Season All
1/4 teaspoon pepper
3 eggs
1/4 cup water
2 cups Panko crumbs (or bread crumbs)
Vegetable oil
1 (8-ounce) container sour cream
2 tablespoons milk
1 1/2 teaspoons dry ranch dressing mix (from a 1-ounce package)

Steps:

  • In a large bowl mix together (cold) mashed potatoes, cheese, green onions, bacon, jalapeno, Season All, and pepper.
  • Shape into about 22 balls that are approximately 1-inch across. Refrigerate at least 30 minutes.
  • In a medium bowl, whisk eggs and water together.
  • Place panko crumbs inn a pie plate.
  • Pour 2 inches oil into a Dutch oven and heat to 375 degrees.
  • Dip potato balls in egg mixture then roll in Panko crumbs.
  • Fry 5 to 6 balls at a time, cooking until golden brown on all sides, about 2 to 3 minutes.
  • Drain on paper towels or a wire rack.
  • Mix together sour cream, milk, and ranch mix in a small bowl.
  • Serve fried potato balls warm.

1 large egg, lightly beaten
3/4 cup shredded cheddar cheese
1/2 cup chopped green onions

500g minced chicken , turkey, lamb, beef or pork
1 medium onion
2 garlic cloves , crushed or chopped
2 tsp mild or medium curry powder
2 tsp ground cumin
1 tsp garam masala
½ tsp paprika or cayenne pepper
2 tbsp fresh coriander , chopped
1 egg , beaten
50g fresh breadcrumb
1 tbsp olive oil

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
  • Add the beaten egg and breadcrumbs, then mix again.
  • Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
  • Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
  • Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
Miniature marshmallows
1/2 cup ginger snap crumbs

Steps:

  • Preheat oven to 400 degrees F.
  • Mash sweet potatoes while they are hot, then add, butter, salt, and spices. Add egg and continue to whip until thoroughly combined. Chill until firm. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball. Roll in ginger snap crumbs. Place on non-stick or lightly greased baking sheet. Bake for 10 to 15 minutes.

1 1/2 cups Mashed Potatoes, recipe follows, cold
1/4 cup all-purpose flour
1 large egg
1 tablespoon chopped fresh parsley, plus more for garnish
1/4 cup grated Parmesan, plus more for garnish
1/2 cup shredded mozzarella
1/4 teaspoon freshly ground black pepper
3/4 cup dried breadcrumbs
Vegetable oil, for frying
Kosher salt
5 pounds russet or Yukon gold potatoes
3/4 cup (1 1/2 sticks) salted butter, plus more for topping
One 8-ounce package cream cheese, softened
1/2 cup half-and-half, or more if desired
1/2 teaspoon seasoned salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Mix together the Mashed Potatoes, flour, egg, parsley, Parmesan, mozzarella and black pepper in a bowl. Place the breadcrumbs on a large plate.
  • Form the potato mix into 12 golf-ball-sized balls. The mixture will be a little sticky, so wet your hands a little as you go. Place the balls directly on the breadcrumbs and roll each ball in the breadcrumbs, pressing to make sure they stick well. Put the breadcrumbed balls on a plate.
  • Heat 2 inches of oil in a deep skillet or Dutch oven to 375 degrees F, or until the mixture bubbles when a breadcrumb is added.
  • Add the balls to the oil and fry until golden brown on all sides, 3 to 5 minutes total. Remove to a paper towel-lined plate and sprinkle immediately with salt.
  • Garnish with more Parmesan and parsley.
  • Peel and cut the potatoes into pieces of approximately the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until a fork easily slides into the potatoes with no resistance and the potatoes almost, but not totally, fall apart, 30 to 35 minutes.
  • Preheat the oven to 350 degrees F.
  • Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over a low heat, allowing all the steam to escape.
  • Turn off the stove and add the butter, cream cheese and half-and-half. Mash, mash, mash! Add the seasoned salt and black pepper.
  • Stir well and place in a medium baking dish. Throw a few pats of butter over the top of the potatoes and place bake until the butter has melted and the potatoes are warmed through, a few minutes.

4 medium russet potatoes or any potatoes (about 1 1/4 pounds)
1 tablespoon Basic Ginger-Garlic Paste or store-bought
1 tablespoon peeled minced fresh ginger
3 tablespoons peanut oil
1 to 3 fresh green chili pepper, such as serrano, stemmed minced with seeds
1 cup canned tomato sauce
1 tablespoon distilled white vinegar
2 teaspoons sugar
1/4 teaspoon salt, or to taste
5 to 6 scallion, finely chopped

Steps:

  • 1. Boil the potatoes in water to cover until tender, about 20 minutes. Meanwhile, prepare the ginger-garlic paste. Then, drain the potatoes, let cool, then peel and mash or grate them. In a large bowl, mix together the potatoes and fresh ginger and, with clean hands, shape into 20 to 25 small balls or finger shapes. Transfer to a plate.2. Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat and cook the potato balls, gently shaking the skillet until they are golden all around, about 5 minutes. Turn each one carefully with a spatula if necessary do not stir them, or they will break. Transfer to a bowl.3. Heat the remaining 1 tablespoon oil in the skillet, add the ginger-garlic paste and green chili peppers, and stir 1 minute. Add the tomato sauce, cook 1 minute, then add the vinegar, sugar, and salt.4. Mix in the potato balls and cook, shaking the skillet carefully until they are well-coated with the sauce. You'll find these round chickpea flour and spiced potato fritters wherever Indian snack sellers congregate. Serve them with whatever chutney you like for dipping.

For the potatoes:
1½ lbs unpeeled waxy potatoes (I use red ones), freshly boiled and cooled
2 tablespoons olive or peanut oil, plus more for deep-frying
Generous pinch of ground asafetida
¼ teaspoon whole brown or yellow mustard seeds
4 tablespoons finely chopped onions
2 teaspoons peeled and very finely chopped fresh ginger
1-2 fresh green chilies, finely chopped
1 teaspoon ground cumin
3 tablespoons chopped fresh cilantro
1½-2 teaspoons lime or lemon juice
1 teaspoon salt, or to taste
For the batter:
1¼ cups chickpea flour (besan or gram flour)
¼ cup rice flour (also called rice powder)
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon ajowan seeds
Generous pinch of ground asafetida
½ teaspoon ground turmeric

Steps:

  • Peel the cooked and cooled potatoes and crush them. You are aiming for a very coarse version of mashed potatoes.
  • Put the 2 tablespoons of oil in a medium, preferably nonstick frying pan and set over medium heat. When hot, add the asafetida. A second later, add the mustard seeds. As soon as they pop, a matter of seconds, add the onions, ginger, green chilies, cumin, and fresh cilantro. Stir for a minute. Add the crushed potatoes, lime juice, and salt. Turn the heat to low and mix all the ingredients well. Taste for balance of flavors and make adjustments, if needed. Set aside until cool enough to handle, then make 16 balls, each about 1- inches in diameter. Transfer to a plate and set aside.
  • Combine all the ingredients for the batter in a bowl. Slowly add water, about 2 tablespoons less than 1 cup, mixing and breaking up any lumps as you go. You should have a thick but flowing batter.
  • Put a 2 inch depth of oil in a deep frying pan, wok, or karhai and set over medium-low heat. Give it time to get hot.
  • Dip a potato ball in the batter, making sure it is well covered. Carefully lower it into the hot oil. Do this rapidly with half the balls. Fry, turning frequently for 5-6 minutes or until the outside batter looks crisp. It should not turn dark. Remove with a slotted spoon and drain on a paper towel. Make a second batch the same way.
  • Serve while still crisp and hot.
