1 pound potatoes (about 2 medium), peeled and cut into 1/2-inch cubes
1 package (12 ounces) fully cooked andouille chicken sausage links or flavor of your choice, cut into 1-inch pieces
1 medium red onion, cut into wedges
1 medium sweet red pepper, cut into 1-inch pieces
1 medium green pepper, cut into 1-inch pieces
1/2 cup pickled pepper rings
1 tablespoon olive oil
1/2 to 1 teaspoon Creole seasoning
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. In a large bowl, combine potatoes, sausage, onion, red pepper, green pepper and pepper rings. Mix oil, Creole seasoning and pepper; drizzle over potato mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Roast until vegetables are tender, stirring occasionally, 30-35 minutes.

1 onion, minced
2 tablespoons minced garlic
5 (3 ounce) andouille sausages, sliced

3 stalks celery, sliced
1 zucchini, diced
1 yellow squash, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can Great Northern beans, undrained
1 (46 fluid ounce) can spicy vegetable juice (such as V8®)
1 (32 fluid ounce) container chicken stock (such as Kitchen Secrets®)
2 (6 ounce) cans tomato paste
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon garlic pepper

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir Italian sausage, onion, and garlic in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes; drain and discard grease. Add andouille sausage; cook and stir until browned, 3 to 5 minutes.
  • Heat olive oil in a stockpot over medium heat; cook and stir celery, zucchini, yellow squash, red bell pepper, yellow bell pepper, and orange bell pepper in the hot oil until slightly tender, 5 to 10 minutes.
  • Mix the sausage mixture, black beans, Great Northern beans, vegetable juice, and chicken stock into vegetable mixture. Bring to a boil, reduce heat, and simmer. Stir in tomato paste, oregano, basil, and garlic pepper; simmer until flavors blend, about 15 minutes.

A healthy and delicious soup. I like mine spicy but you could adjust it to your taste. Great for freezing and eating during the week. Enjoy!

1 chopped yellow onion
1 diced yellow pepper
1 diced red pepper
30 -40 ounces chicken broth (if you like it thicker or thinner)
1 diced tomatoes
8 ounces diced turkey kielbasa
15 -30 ounces drained black beans (I only use 1 can but the recipe says 2)
1/2 cup hot salsa (I get the fresh kind in the Deli)
chopped fresh cilantro
1 -2 tablespoon olive oil

Steps:

  • Saute onion in olive oil for 2-3 minutes.
  • Add sausage and saute for 2-3 minutes.
  • Add yellow and red pepper, saute for 2-3 minutes.
  • Add 30 oz of chicken broth and bring to boil.
  • Add tomato, beans, and salsa. Reduce heat to low. Add more chicken broth if you like it less chunky.
  • Simmer for 5-10 minutes or until veggies are soft. Top with cilantro and serve!

1/2 pound bulk Italian sausage
1 small onion, chopped
1 small green pepper, chopped
1/2 cup chopped fresh mushrooms
2 jars (7-1/2 ounces each) roasted sweet red peppers, drained and coarsely chopped
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
3 ounces cream cheese, cubed
1/3 cup 2% milk
1/2 cup shredded smoked provolone cheese

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a large skillet, cook sausage, onion, green pepper and mushrooms over medium heat until sausage is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain., Stir in red peppers, soup, cream cheese and milk; heat through. 1 teaspoon olive oil
1/2 lb sweet Italian sausage, casing removed
1 small onion, diced
1 garlic clove, crushed
1 red bell pepper, medium diced
1 green bell pepper, medium diced
1/4 cup dry red wine
1 (14 1/2 ounce) can chicken broth
1 (14 1/2 ounce) can diced tomatoes in tomato puree (If you can find the Italian-style diced tomatoes, even better)
1 (15 ounce) can cannellini beans, drained and rinsed (a can of great northern beans will do, if you can't find cannellini)
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram
1/2 teaspoon salt
1 pinch crushed red pepper flakes (or to taste)

Steps:

  • In a large heavy saucepan, over medium-high heat, heat the olive oil and brown the sausage. Use a slotted spoon to remove the sausage from pan.
  • Pour off any excess oil, leaving about 1 to 2 teaspoons in the pan. Stir in the onions, peppers, and garlic. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
  • Add red wine and cook until the wine is almost all evaporated. Add the remaining ingredients, including the cooked sausage. Bring to a boil, reduce the heat to a simmer and cook for 15 minutes.
