7 -8 ounces sweet Italian sausage (about 2)
2 cups flour
1/3 cup grated parmesan cheese
1 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon oregano
1 egg
14 ounces pizza sauce
2 tablespoons olive oil

Steps:

  • Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
  • Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
  • Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Add 3 T. fat, start with the remaining fat in the skillet and make up the difference with olive oil. Add sausage and mix well. Pour the mixture over the dry ingredients and mix just until blended. Scoop the very thick batter into muffin cups. Bake 20 to 25 minutes or until firm on top. Cool 30 minutes before serving.

6 tablespoons unsalted butter, melted and cooled, plus more for the muffin tin
1 1/2 cups almond flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/8 teaspoon cayenne pepper
1/8 teaspoon dried sage
1/2 cup cooked, crumbled breakfast sausage
1/2 cup shredded sharp Cheddar
1 scallion, chopped
3 tablespoons heavy cream
2 large eggs

Steps:

  • Preheat the oven to 375 degrees F. Butter 8 cups of a muffin tin.
  • Whisk together the almond flour, baking powder, salt, cayenne and sage in a medium bowl. In a large bowl, combine the sausage, Cheddar and scallions. In a small bowl, whisk together the cream and eggs, then add them to the large bowl with the sausage mixture. Add the 6 tablespoons melted butter and the almond flour mixture to the large bowl and mix.
  • Spoon the batter into the buttered 8 cups of the muffin tin. Bake until puffed, golden brown and a toothpick inserted into the center comes out clean, about 15 minutes.

2 to 3 teaspoons rubbed sage
3 cups biscuit/baking mix

  • In a skillet over medium heat, cook sausage until no longer pink; drain. In a bowl, combine soup, milk, sage and sausage. Stir in the biscuit mix just until moistened. Fill greased miniature or regular muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until muffins test done.

1/3 pound bulk Italian sausage
3 large eggs
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 package (8-1/2 ounces) corn bread/muffin mix
3/4 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 400°. Line 12 muffin cups with paper liners. In a skillet, cook sausage over medium heat 4-5 minutes or until no longer pink, breaking into crumbles. Remove to paper towels to drain., In a small bowl, whisk eggs, seasoned salt and pepper. Pour into same pan; cook and stir over medium heat until eggs are thickened and no liquid egg remains. Remove from heat., In a large bowl, prepare muffin mix according to package directions. Fold in sausage, scrambled eggs and 1/2 cup cheese. Fill prepared cups two-thirds full., Bake 10 minutes. ¾ teaspoon minced fresh thyme
1 egg, beaten
1 cup buttermilk
¾ cup shredded sharp Cheddar cheese

Steps:

  • In a skillet, cook sausage, onions and red pepper over medium heat until meat is no longer pink; drain and set aside. In a large bowl, combine the flour, cornmeal, cilantro, baking soda, salt and thyme. In another bowl, combine egg and buttermilk. Stir into dry ingredients just until moistened. This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

2 lbs chorizo sausage or 2 lbs bulk breakfast sausage
4 cups Bisquick
2 cups cornmeal
6 eggs
3 1/2 cups milk
3 cups shredded cheese

Steps:

  • Line muffin tins with paper liners, and set aside.
  • Fry, crumble and drain sausage.
  • Preheat oven to 375 degrees.
  • Mix together bisquick, cornmeal, eggs, and milk.
  • Add drained sausage, and cheese, and stir well.
  • Ladle the filling into the prepared muffin tins, filling almost to top.
  • Bake for 11-15 minutes.
  • Allow to cool completely.
  • Store in freezer in a large airtight container.
  • Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
  • Microwave on high for approx 90 seconds.
