These cold Vietnamese-style noodles are perfect for a warm night. The rice stick noodles, fish sauce, and chili-garlic sauce can be found in the Asian section of many supermarkets and at As ian markets.

4 1/2 tablespoons fresh lime juice
3 tablespoons fish sauce (such as nam pla or nuoc nam)
4 teaspoons chili-garlic sauce
2 teaspoons sugar
1 pound peeled deveined cooked medium shrimp
1 cup thinly sliced Japanese cucumbers or Persian cucumbers
1 8-ounce package sugar snap peas, cut crosswise into 1/2-inch pieces (about 2 cups)
1 red bell pepper, thinly sliced
1/2 cup (loosely packed) fresh mint leaves
1/2 cup (loosely packed) fresh cilantro leaves

Steps:

  • Cook noodles in large saucepan of boiling salted water until tender, stirring occasionally, 4 to 5 minutes. Drain. Rinse with cold water; drain well. Using scissors, cut noodles into thirds.
  • Whisk lime juice, fish sauce, chili-garlic sauce, and sugar in small bowl until sugar dissolves. Place shrimp in medium bowl. Add 2 tablespoons dressing; toss to coat.
  • Divide noodles among bowls. Top with cucumber slices and all remaining ingredients. Spoon shrimp with dressing over, and drizzle with remaining dressing.

4 eggs
1 tablespoon vegetable oil
½ large onion, sliced
1 large zucchini, julienned
1 (14 ounce) package tofu, drained and cubed
1 clove garlic
7 Thai chiles, chopped
3 tablespoons fish sauce
¼ cup lime juice
⅔ teaspoon sugar
⅓ teaspoon salt
1 quart water
8 ounces cellophane noodles
½ head lettuce, chopped

Steps:

  • Place eggs in a saucepan with enough cold water to cover, and bring a boil. Remove from heat, cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Heat the oil in a skillet over medium heat, and cook the onion and zucchini until tender. Mix in the tofu, and continue to cook and stir until browned on all sides.
  • With a mortar and pestle, grind the garlic and Thai chiles into a fine paste. Mix with the fish sauce, lime juice, sugar, and salt.
  • Bring 1 quart water to boil in a pot. Turn off heat, and soak the cellophane noodles in the hot water 1 minute, or until soft.
  • In a large bowl, toss together the eggs, tofu mixture, garlic and chile paste, noodles, and lettuce.

1 serrano chile, very thinly sliced

1 lb. large shrimp (preferably wild), peeled, deveined

½ cup salted, roasted peanuts, crushed, divided
1 cup basil leaves

Steps:

  • Stir lime juice and honey in a small bowl until honey dissolves. Mix in chile, ginger, garlic, fish sauce, and 3 Tbsp. oil; season dressing with salt.
  • Toss shrimp and 2 Tbsp. dressing in a medium bowl to coat; let sit 10 minutes.
  • Meanwhile, cook noodles according to package directions. Drain and add to bowl with remaining dressing along with cucumber and ¼ cup peanuts; toss well.
  • Heat remaining 1 Tbsp. oil in a large nonstick skillet over medium-high. Pour off any liquid from shrimp and pat dry; season all over with salt. Cook shrimp, tossing occasionally, until browned and bright pink, about 5 minutes. Transfer to bowl with noodles, add basil, and toss well to combine.
  • Divide noodle salad among bowls and top with remaining peanuts.

A good glug olive oil
8 ounces (200 grams) minced pork
A large pinch five-spice
3 cloves garlic, crushed
2 teaspoon sugar
A handful prawns or shrimp, any size you like, peeled and deveined
Handful plain and skinned peanuts, roughly crushed
1 bunch spring onions, finely sliced
1 bunch coriander, chopped
1 bunch mint, chopped
2 thumbs fresh ginger, grated
2 red chiles, finely sliced with seeds
2 limes, juiced
1 tablespoon soy sauce
Olive oil

Steps:

  • Soak the noodles in boiling water and drain. Heat the oil in a pan, and cooking in batches, lightly brown the pork with the five-spice powder. Add the garlic, sugar, prawns, and peanuts. Mix the rest of the ingredients for the dressing. Add the drained noodles and the meat with the prawns and season with a little extra soy and a drizzle of olive oil.

3 ounce package mung bean noodles*
1 tablespoon vegetable oil
1 pound medium shrimp, peeled, deveined
Kosher salt
7 medium cloves garlic, finely minced
1 cucumber, peeled, seeded and sliced into thin strips
1 carrot, sliced into thin strips (about 1/2 cup)
1 red jalapeno, very thinly sliced or minced (with seeds if you like it hot)
1/2 cup mixed roughly chopped mint, cilantro, and basil
3 tablespoons nam pla or fish sauce*
2 tablespoons fresh lime juice, plus 1 limes cut in wedges for serving
1 teaspoon sugar
2 to 3 scallions, both white and green, very thinly sliced

Steps:

  • 1. Bring about 4 cups water to a boil. Put the noodles in a large bowl, pour the boiling water over and let them soak until soft, 4 to 5 minutes. Drain in a colander and rinse in very cold water to cool. Shake off excess liquid so noodle are very dry. Cut the noodles with scissors into manageable lengths, about 4 inches. Transfer to a large bowl.
  • 2. Pat the shrimp very dry. Heat a large skillet over medium-high heat. Add the vegetable oil and when it shimmers, add the shrimp, season with salt and cook turning once until pink and but not cooked through, 1-2 minutes. Add the garlic and cook stirring until the shrimp are coated, about 1 minute. Add the shrimp and garlic to the noodles along with the cucumber, carrot, jalapeno, herbs, lime juice, fish sauce and sugar and toss. (If the noodles clump, add up to 1/4 cup water to make mixing easier.) Season with salt or fish sauce to taste. Transfer to a serving platter. Transfer salad to a large platter and scatter the scallions on top. Serve at room temperature.

The shrimp-noodle salad recipe was a result of memories of my Mom's Korean background, and my love of fresh vegetables, packed full of flavor. 3 tablespoons sesame seeds, toasted

2 green onions, chopped

Steps:

  • Cook spaghetti according to package directions. In a small bowl, mix the sauce ingredients., In a large skillet, heat oil over medium-high heat. Add shrimp; stir-fry 2-3 minutes or until shrimp turn pink. Remove from pan., Add sauce mixture to same pan; bring just to a boil. Reduce heat; simmer, uncovered, 2 minutes longer., Drain spaghetti; add to pan. Toss to combine with sauce. 2 tablespoons asian fish sauce
1 tablespoon sugar
1 tablespoon grapeseed oil
1 red Thai chile, sliced paper-thin
1 kaffir lime leaves, minced or 1/2 teaspoon grated lime zest
1 teaspoon oyster sauce
1 1/4 lbs large shrimp, shelled
2 (2 ounce) packages dried cellophane noodles
boiling water
salt & freshly ground black pepper
2 scallions, thinly sliced
1 1/2 cups mint leaves
3/4 cup cilantro leaf
3/4 cup basil leaves (these were omitted, personal preference)
1/2 cup chopped dry roasted salted peanut
lime wedge, for serving

Steps:

  • In a bowl, combine the lime juice with the fish sauce, sugar, oil, chile, lime leaf and oyster sauce.
  • In another bowl, toss the shrimp with half of the chile-lime dressing.
  • Cover and refrigerate for 30 minutes.
  • Meanwhile, in a large heatproof bowl, cover the cellophane noodles with warm water.
  • Let stand until pliable, 5 minutes.
  • Light a grill.
  • Drain the cellophane noodles; using scissors, cut the noodles into 2-inch lengths and return them to the bowl.
  • Cover the noodles with the boiling water and let stand until they are softened, about 1 minute & drain well.
  • Season the shrimp with salt and pepper and grill over high heat until just tender, about 1 minute per side.
  • In a bowl, toss the shrimp with the cellophane noodles, scallions, mint, cilantro, basil and the remaining dressing.
  • Mound the salad on plates or a platter.
  • Sprinkle with the peanuts and serve with lime wedges.

Steps:

  • Preheat oil in fryer to 360 degrees.

  • Add the shrimp, scallops, and soy sauce, and cook until the shrimp are pink and just cooked through, about 2 minutes. Add the green onions and cook for 30 seconds. Remove from the heat and transfer to a serving bowl.
