A super easy and spicy tomato sauce that gets a ton of flavor from salty pancetta. Make it ahead of time, reheat and serve over cooked pasta for a quick weeknight meal!

1 tsp extra virgin olive oil
6 ounces pancetta (, diced into small cubes)
1 cup finely chopped yellow onion
2 large cloves of garlic (, minced)
1 tsp Italian seasoning
1/4 tsp garlic powder
1/4 tsp fine sea salt
1/2 tsp crushed red pepper flakes (, or to taste)
1 (28-ounce) can of whole plum tomatoes, chopped

Steps:

  • In a medium pot, heat the oil over medium heat. Add the pancetta, let cook, stirring often, until the fat has rendered and the pancetta is golden brown. Drain all but about 2 tablespoon of grease. Then add the onion and let cook, stirring occasionally, until they are tender, about 5-6 minutes. Add the Italian seasoning, garlic powder and crushed red pepper flakes. Stir in the chopped tomatoes with their juices and sea salt. Let sauce simmer gently, occasionally stirring, until sauce has thickened, about 25 minutes. Serve over cooked pasta shape of choice.

1 teaspoon extra-virgin olive oil
4 ounces pancetta or guanciale sliced 1/8 inch thick and cut into 1/4-inch-wide strips
1 small red onion, coarsely chopped
1/2 teaspoon crushed red-pepper flakes
1 can (28 ounces) peeled plum tomatoes with juice, coarsely chopped
1/2 teaspoon coarse salt

Steps:

  • Heat oil in a heavy medium pot over medium heat. Cook pancetta, stirring often, until golden and fat has rendered, about 8 minutes. Add onion and red-pepper flakes, and cook, stirring occasionally, until tender, 10 to 12 minutes.
  • Stir in chopped tomatoes with juice, and add salt. Simmer gently, stirring occasionally, until sauce is thick, about 25 minutes.

  • Add the pancetta to a heavy large skillet over medium heat. Add olive oil and saute until golden brown, about 8 minutes. Add the onion and saute until tender, about 5 minutes. Season with salt. Add the garlic and red pepper flakes. Saute until fragrant, about 30 seconds. Stir in the tomato puree. Simmer uncovered over medium-low heat until the sauce thickens slightly and the flavors blend, about 15 minutes. Season the sauce with salt, to taste.
  • Meanwhile, boil the linguine in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Toss the linguine with the sauce in the skillet, adding some of the reserved cooking liquid until the pasta is moist but being careful not to dilute the sauce. Toss with the cheese. Season with salt, to taste.

I finally found a recipe for a pasta sauce using pancetta. Very easy and delicious pasta recipe from Gaida De Laurentiis I played around with it and came out with this winner.

6 ounces pancetta, diced cut in small cubes
2 tablespoons olive oil
2 onions, chopped
1 shallot
1 tablespoon capers
2 garlic cloves, coarsely chopped
1 pinch dried crushed red pepper flakes
1 (28 ounce) can whole tomatoes
2 tablespoons tomato paste
1/4 cup water
1/4 cup basil
1/4 cup copped chives
fresh ground black pepper
salt
1 lb pasta, of your choice
1/2 cup grated pecorino parmesan-romano cheese mix

Steps:

  • Add the pancetta to a heavy large skillet over medium heat. Add olive oil and saute until golden brown, about 8 minutes.
  • Add the onions and continue to cook for another 20-minutes, or until the onions are deeply caramelized.
  • .
  • Add the garlic and red pepper flakes. Saute until fragrant, about 30 seconds.
  • In the meantime, drain the tomatoes in a strainer over a bowl, reserving the liquid.
  • When the onions is caramelized, add the drained tomatoes,the tomato paste, capers and the basil and chives.
  • Increase the heat to medium, and cook until the tomatoes begin to leave brown bits on the bottom of the pan.
  • Then add the reserved tomato juice and water and use it to deglaze the pan. Cook for another 20 minutes to let the flavors meld.
  • Taste to see if it needs extra seasoning.
  • Meanwhile, boil the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes.
  • Drain, reserving 1 cup of the cooking liquid.
  • Toss the pasta with the sauce in the skillet, adding some of the reserved cooking liquid until the pasta is moist but being careful not to dilute the sauce.
  • Toss with the cheese. Season with pepper and salt, to taste.
  • Tip:Cut the pancetta to really small pieces, the sauce turns out to be better if they are smaller.
  • Use fresh or frozen Basil.

The authentic versions would call for grated Pecorino Romano cheese, but I've already broken with tradition here, so use either Pecorino of Parmesan.

1 (28-ounce) can chopped tomatoes in juice
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 small dried red chili pepper, crumbled, or 1/4 teaspon red pepper flakes
Salt to taste
1 teaspoon dried oregano or 2 teaspoons slivered fresh basil
1 pound penne, bucatini, pericatelli, or spaghetti
1/2 cup freshly grated Pecorino Romano or Parmesan

Steps:

  • Begin heating a large pot of water for the pasta.
  • Pulse the chopped tomatoes in a food processor fitted with the steel blade, or pass through the medium blade of a food mill with their juice before you begin. Heat the oil over medium heat in a large, wide nonstick skillet or saucepan and add the garlic and crumbled chili (or flakes). Cook, stirring, for 30 seconds to a minute, until the garlic is translucent and begins to smell fragrant, and add the tomatoes and their juice, salt, and oregano if using. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 25 minutes. Taste and adjust seasonings. Keep warm while you cook the pasta.
  • When the pasta water comes to a boil, add a tablespoon of salt and the pasta. Cook the pasta al dente, following the timing instructions on the package but checking a minute or two before the time on the package. When the pasta is done, transfer to the pan with the sauce, add the basil if using, and toss together over medium heat until it is well coated with the sauce. Add half the cheese, toss together and serve, passing the remaining cheese at the table.

2 tablespoons olive oil
3 medium cloves garlic, peeled
1 28-ounce can whole peeled Italian plum tomatoes
1/8 teaspoon crushed red-pepper flakes
Salt and freshly ground pepper, to taste
2 tablespoons coarsely chopped flat-leaf parsley

Steps:

  • In a large skillet, heat olive oil over medium heat. Add garlic and cook slowly until golden brown on all sides, about 10 minutes.
  • Add tomatoes and their juice (do this carefully to keep oil from spattering), red-pepper flakes, and salt and pepper to taste; raise heat and bring to a boil. Reduce heat to medium and simmer, breaking up tomatoes into small pieces with the side of a wooden spoon.

4 large garlic cloves
1 1/2 pounds cherry tomatoes
4 fresh basil sprigs
3 fresh oregano sprigs
5 tablespoons olive oil
3 small dried red chiles (each about 2 inhes) or 1 large dried chile such as New Mexico, cut into 3 pieces
Garnish: fresh basil leaves

Steps:

  • Fill a 6-quart pasta pot three fourths full with salted water and bring to a boil for spaghetti. Mince garlic and halve tomatoes. In a 12-inch skillet heat 4 tablespoons oil over moderately high heat until hot but not smoking and sauté garlic and chiles, stirring, until garlic is golden. Add tomatoes and herb sprigs and cook over moderate heat, stirring occasionally, until tomatoes just begin to lose their shape, about 10 minutes. Season sauce with salt and pepper.
  • While sauce is cooking, cook pasta in boiling water until al dente. Drain pasta in a colander and in a bowl toss with remaining tablespoon oil. Remove herb sprigs and chiles from sauce and pour sauce over pasta.
  • Garnish pasta with basil.
