SPICY ITALIAN MEATBALLS

Steps:
- For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
- Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
- For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
- Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
- Transfer to a chafing dish and serve with frilly toothpicks.
SWEET AND SPICY MEATBALLS

- Preheat the oven to 375 degrees F.
- Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.
- Add pepper jelly, orange juice and soy sauce to a small pan. Cook over medium-high heat until it simmers, then remove from the heat. Pour jelly sauce over the meatballs and toss to coat.
EASY SWEET AND SPICY MEATBALLS
I had these at a graduation party and they were wonderful. I was shocked when they told me the ingredients. I've made them ever since and they always go like hot cakes! Either hand roll meatballs using your favorite meatball recipe or purchase frozen prepared meatballs. If you use frozen, allow for more simmering time.

- For Spicy Meatballs, in a large bowl whisk together egg and milk. Add bread. Let stand 10 minutes, just until bread is softened. Add beef, garlic, black pepper, salt, and cayenne pepper. Mix thoroughly with hands or wooden spoon. Shape beef mixture in 48 one-inch meatballs.
- In a 12-inch skillet heat oil over medium heat. Cook meatballs, half at a time, about 6 minutes per batch, turning occasionally until brown and crusty on outside and no longer pink inside. Transfer meatballs to a covered dish; cover to keep warm. Drain fat from skillet; wipe out skillet.
- For Apple Glaze, in a small bowl combine apple juice, soy sauce, brown sugar, cornstarch, ginger, and cayenne pepper. In same skillet at meatballs were cooked, cook and stir mixture until thickened and bubbly (at full boil). Cook and stir 2 minutes more. Return meatballs to skillet to heat through and coat with sauce. Transfer glazed meatballs to a serving dish. Top with green onions.

SPICY APPLE GLAZED MEATBALLS
This one's from Better Homes and Gardens. Delicious spicy and a little sweet Chinese influence and flavor. Took these to a Memorial Day's party and had no leftovers.

- In large bowl, whisk together egg and milk. Tear bread slices into bite sized pieces and add to bowl. Stir to coat and let sit 10 minutes. Add ground chuck, garlic, pepper, salt, and cayenne. Make meatballs (I came out with 28).
- Place on a cookie sheet sprayed with cooking spray. Cook at 325 F for about 10 minutes. Turn once. Cook an additional 10 minutes. Drain.
- Combine every other ingredient except green onions. Add to a pan and cook until thickened stirring constantly. Pour over meatballs. Add chopped green onions.
- The original recipe called for frying the meatballs, but I like baking them instead and draining off the grease. Use whichever method you prefer.
SUPER SPICY GARLIC MEATBALLS
These aren't for the faint of heart. They are perfect to liven up the big game though. This recipe also calls for my own special hot sauce, which I use for the meatballs, hot wings, brisket, and anything else that needs a good swift kick.

- Super Secret Hot Sauce: I grow the peppers in my garden during the summer, dry them out, and save them just to make this sauce. It works good with fresh peppers too though. You can adjust the varieties to manage the heat but I make it in concentrated batches and then save it in the fridge to dilute and add to other marinades and sauces such as the meatball sauce below.
- To make the hot sauce, bring the chicken broth to a boil, add the onions, garlic, and peppers and then simmer it for about 20 minutes. Then pour it into your food processor and puree it until you have a thick red paste. This can be stored in the refrigerator for up to a couple weeks to make all kinds of good things. In it's concentrated state, 1 finger lick should be enough to set you on your hind end if you use good hot peppers.
- Mix all the meatball ingredients in a small dish and knead into the hamburger, the same way as you would do if making a meatloaf. When it is well mixed and of a slightly sticky consistency, make into medium meatballs about an inch and a half in diameter. Place the meatballs on a plate.
- In a medium pot bring the chicken broth, enchilada sauce, and 1 cup of the super secret hot sauce to a low boil over medium heat. Finely chop the onion, and pepper, and add with the minced garlic to the liquid. Now stir in the brown sugar. Let it boil for a few minutes, and then drop in the meatballs one at a time. Give it a gentle stir so as not to damage the meatballs, then cover and simmer for about 20 minutes. When it is about done, find a nice big meatball and cut it in half to make sure they are thoroughly cooked all the way through. Now give everybody a fork and a plate and have at it!
