CHINESE PEPPER BEEF STIR FRY RECIPE
Chinese Pepper Beef Stir Fry is a takeout favorite! It is so quick and easy to make at home you'll forget where you put the takeaway menu! Steps:
- Cut the beef into thin strips across the grain. (see the bulk of post for more about the grain of the beef)
- Place in a bowl and sprinkle with the baking soda.
- Let the beef marinade for 15 minutes then wash off the baking soda and rinsing it several times. (See note 3)
- Pat dry with kitchen paper and set to one side.
- Combine the ingredients for the sauce together in a measuring cup or jug.
- Set to one side.
- Heat 1 tbsp of the oil in a large frying pan over high heat, once the oil starts to shimmer add the beef and cook for 1 minute until almost cooked through. Remove from the pan.
- Add the remaining oil to the pan
- Keeping the heat high add the onion and fry for 1 minute.
- Add the bell peppers to the pan and cook for a further 2 minutes.
- Return the beef to the pan along with the minced garlic and stir to combine.
- Give the sauce another stir and then add it to the skillet and bring to a simmer, the sauce will start to thicken.
- Cook for 1-2 minutes until everything is cooked through and the sauce just coats the meat and veg.
- Remove from the heat and serve immediately.

YANG-YANG CRISPY BEEF
Steps:
- For the beef: Heat a wok over high heat and fill halfway up with peanut oil. Heat the oil to 350 degrees F, or until a cube of bread turns golden brown in 15 seconds and floats to the surface.
- Place the beef strips in a large bowl and add 2 tablespoons cornstarch. Toss until the beef has absorbed the cornstarch. Add the remaining 1 tablespoon cornstarch right before frying and toss to coat.
- Fry the beef in 2 to 3 batches until golden, 4 to 5 minutes. Drain on paper towels and season with sea salt.
- For the sauce: Set another wok or saute pan over high heat and add the soy sauce, chili sauce and orange juice. Bring to a simmer and cook until it becomes thickened and coats the back of a spoon, 1 to 2 minutes. Toss the beef in the sauce to coat thoroughly.
- Serve over a bed of the shredded lettuce and sliced cucumber that has been sprinkled with rice vinegar. Then garnish with the scallions and orange zest.
SPICY BEEF STIR-FRY

- Whisk the cornstarch with 2 tablespoons rice wine in a medium bowl; add the beef, season with salt and pepper and toss to coat. Set aside for 15 minutes.
- Mix the remaining 1 tablespoon rice wine, the oyster sauce and sesame oil in a large bowl; set the bowl near the stove.
- Heat a wok or large nonstick skillet over high heat until very hot, about 1 minute. Add 3 tablespoons peanut oil, then the ginger, garlic and chiles; stir-fry until fragrant, about 1 minute. Add the beef and cook, stirring or shaking the skillet occasionally, 1 to 2 minutes. Transfer the beef with a slotted spoon to the sauce mixture and toss.
- If the pan is dry, add 1 tablespoon peanut oil, then add the onion and stir-fry until just soft, about 2 minutes. Add the bok choy and sugar; stir-fry until just wilted, 1 to 2 minutes. Return the beef and any juices to the pan and stir to combine. Serve over the rice.
SPICY SICHUAN BEEF STIR-FRY
This beef and vegetable stir-fry takes its cues from dry fried Sichuan beef, which calls for browning strips of beef over high heat to ensure juicy, flavorful meat. Hot cherry peppers and spicy black bean sauce give this dish its fire, but you can use sweet black bean sauce for a mellower version. To get closer to the original dish, seek out Sichuan peppercorns.

- Toss the steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch in a large bowl. Combine the cucumber and celery in a separate bowl; set aside.
- Stir the black bean sauce with the remaining 1 tablespoon soy sauce and 1 teaspoon cornstarch, the cherry pepper brine and 1/4 cup water in a small bowl; set aside.
- Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the cucumber-celery mixture and cook, undisturbed, 1 minute. Toss and cook, stirring occasionally, until crisp-tender, 1 to 2 minutes. Transfer to a bowl.
- Heat the remaining 1 tablespoon oil in the same skillet. Add the steak in a single layer. Cook until browned on the bottom, about 1 minute. Toss and continue cooking, stirring, until just a few pink spots remain, 1 more minute. Add the garlic, ginger and peppercorns and cook, stirring, until the meat is cooked through, 1 to 2 more minutes. Add the black bean sauce mixture and cherry peppers and bring to a boil. Cook until glossy, about 1 minute. Toss in the cucumbers and celery.
- Serve the stir-fry over rice. Top with celery leaves.

- In a large bowl, toss beef with ginger, 2 garlic cloves, pepper and 1/2 teaspoon salt; let stand 15 minutes. STIR-FRY BEEF
This beef stir-fry is a little spicy...if you need a milder version reduce the crushed red pepper by half. This comes from "Plain & Elegant: A Georgia Heritage" . The original recipe does not call for any green vegetable, but I like to add some fresh asparagus when I cook the squash....but I posted it as originally posted.

- Trim excess fat from the steak; slice the steak diagonally across the grain into thin strips. Set aside.
- Place the chopped red bell peppers in a food processor or blender; cover and process until smooth, stopping frequently to scrape down the sides. Set aside.
- Pour 2 tablepoons oil around the top of a preheated wok or large skillet, coating the sides; heat at medium-high (375 degrees) for 2 minutes. Add the onion and minced garlic, and stir-fry 2 minutes. Add the squash, (and asparagus if using) and stir-fry for 1 to 2 minutes or until crisp-tender. Remove the vegetables from the wok and set aside.
- Pour 1 tablespoon oil into the wok; add half of the steak strips, and stir-fry 2 to 3 minutes or until browned. Remove the steak from the wok, and set aside. Pour the remaining 1 tablespoon of oil into the wok. Add the remaining steak strips, and stir-fry 2 to 3 minutes or until browned.
- Combine the soy sauce, crushed red pepper, and black pepper. Add the soy sauce mixture, red bell pepper puree, reserved vegetable mixture, and steak strips to the wok. Stir fry until thoroughly heated. Serve over rice.
- Garnish with green onion strips.

- Cut the beef in thin slices, place in a dish with the garlic and the 1/2 tablespoon of Dark Soya sauce and the 1/2 tablespoon of light soya sauce. mix well, cover and place in the fridge to marinade for half an hour.
- Cut up the vegetables of your choice, I use the vegetables I have mentioned, add the ginger and set aside.
- Place the light soya sauce, oyster sauce, sesame sauce and the hot bean sauce in the water, mix the corn flour with enough water to make a paste and add it to the water.
- Heat wok; add half of the oil and stir fry the vegetables. Place in warm oven. Add remainder of the oil to wok and quickly stir fry the meat for just a minute or two. Add the liquid, stir until it thickens.
- Toss the vegetables back in and quickly stir.
- Serve with fried rice or noodles of your choice.
QUICK AND EASY STIR-FRY BEEF
Great and EASY stir fry dish. I found this online in rec.food.recipes. I am planning to try it later this week with tofu for a veggie meal.

Steps:
- Rinse rice in pot, and cook (follow package directions).
- While the rice is cooking, slice flank steak in thin slices (approximately 2 inches long by a quarter inch wide) and place in marinade.
- Make sure that the steak is coated in marinade.
- Wash pea pods and pinch off the ends.
- Chop the green onions and slice ginger.
- Heat large skillet on high heat.
- Drop 1 tbsp olive oil onto skillet.
- Put meat and marinade in skillet and fry until brown.
- Add more olive oil if necessary.
- Add ginger and green onions to skillet.
- Fry 1 minute.
- Add the pea pods and water chestnuts.
- Fry until pea pods are hot but not soggy.
- The rice should be finished by now.
- Serve stir-fry over rice.
- NOTES: I use small package of Green Giant frozen Sugar Snap Peas so I don't have to wash and prepare the fresh vegetables.
- I microwave them for 2 minutes to defrost them.
- You could also substitute other vegetables for the pea pods such as chopped broccoli or chopped green peppers.
- You can also add more vegetables, such as carrots and/or peppers.
- I also buy the steak "thin sliced", and cut those slices up.
- Makes it cook really fast and a bit more fun to eat.
