8 slices artisan-style bread
3 tablespoons unsalted butter, softened
8 slices monterey jack pepper cheese
2 avocados, pitted, peeled, and sliced
1 large tomatoes, thinly sliced

Steps:

  • Saute bacon in a large skillet over medium heat until crisp.
  • Transfer bacon to a paper towel lined plate.
  • Spread butter on 1 side of each bread slice.
  • Assemble sandwiches on 4 bread slices, buttered side down, by layering 1 slice pepperjack cheese, 1/2 an avocado, 2 slices bacon, 2 slices tomato, and another 1 slice pepperjack cheese.
  • Top sandwiches with remaining 4 slices of bread, buttered sides up.
  • Cook sandwiches in a large nonstick skillet over medium heat until bread is crisp and browned on both sides.
  • Slice sandwiches in half; serve with red grapefruit wedges.

4 slices provolone cheese (1 ounce each)
4 slices tomato
4 bacon strips, cooked and halved
2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
2 tablespoons Italian salad dressing

Steps:

  • Top 2 slices of bread with a slice of cheese each; layer each with 2 tomato slices, 2 bacon strips, half of the basil and another cheese slice. Top with remaining bread. Brush dressing over outside of sandwiches., In a large skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

1 dash white pepper
8 slices multigrain bread (Toasted)
8 leaves romaine lettuce
2 heirloom tomatoes (Brandy Wine, Sliced 1/4-inch Thick )
2 English seedless cucumbers (Peeled, Sliced 1/4-inch Thick)
4 slices maui onions (Sliced Thin)
1 Hass avocado (Sliced Thin)
2 cups large-curd cottage cheese
24 dill pickle slices (Dill Chips)

Steps:

  • Sprinkle black pepper over bacon, cook bacon crisp and set aside.
  • In a bowl wisk together mayonnaise, fresh fine herbs, salt and white pepper.
  • Toast bread and spread 1-tablespoon Herbal mayonnaise on each slice.

1 onion, quartered
1 1/2 cups distilled white vinegar
1 cup ketchup
1/4 cup apple juice
1/4 cup firmly packed dark brown sugar
1/4 cup vegetable oil
2 small garlic cloves, chopped
1 sweet pickled gherkin, chopped
2 tablespoons bottled sweet pickled gherkin juice
2 tablespoons Dijon-style mustard
1 1/2 tablespoons ground celery seeds
1 1/2 tablespoons Worcestershire sauce
2 tablespoons Tabasco
1 1/2 teaspoons cayenne, or to taste
1/2 teaspoon turmeric

Steps:

  • In a blender or in a food processor fitted with the steel blade purée the onion with the vinegar, add the ketchup, the apple juice, the brown sugar, the oil, the garlic, the gherkin and gherkin juice, the mustard, the celery seeds, the Worcestershire sauce, the Tabasco, the cayenne and the turmeric, and blen the mixture until it is smooth. Transfer the mixture to a stainless steel or enameled saucepan, bring it to a boil, stirring, and simmer it, stirring, for 20 minutes. Let the sauce cool. (The sauce may be prepared up to 1 week ahead and kept covered and chilled.)
