Broccoli and Tomato Flatbread Pizzas image

1 large bunch broccoli (about 1 1/2 pounds), cut into florets, stalks peeled and thinly sliced
1/4 cup olive oil, plus more for drizzling
1/4 teaspoon red pepper flakes, plus more to taste
Kosher salt and freshly ground black pepper
1 pint red and yellow grape tomatoes, halved
1 clove garlic, minced
6 naan flatbreads
1 1/2 pounds fresh mozzarella, thinly sliced
3 tablespoons chopped pitted green olives
3 tablespoons salted roasted pepitas

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the broccoli with 3 tablespoons olive oil and the red pepper flakes on a rimmed baking sheet. Sprinkle with salt and pepper.
  • Mix the tomatoes with the garlic in a small bowl. Sprinkle with salt and pepper.
  • Roast the broccoli until it begins to turn brown, 16 to 18 minutes. Add the tomatoes to the baking sheet, then toss with the broccoli and roast until tender, about 6 minutes.
  • Meanwhile, divide the flatbreads between 2 baking sheets. Top with the mozzarella, leaving a 1-inch border, then top with the broccoli and tomatoes. Sprinkle with the olives and pepitas. Brush the edges of the breads with the remaining tablespoon olive oil.
  • Bake until the mozzarella is melted and the flatbreads are very warm, about 8 minutes. Drizzle a little olive oil on the tops and sprinkle with more red pepper flakes if you like it spicy. Cut into wedges and serve.

1 pinch dried oregano, or to taste

½ cup very thinly sliced zucchini
½ tomato, thinly sliced
1 cup baby spinach leaves
¼ cup sliced green olives
¼ cup freshly grated Parmesan cheese
1 pinch red pepper flakes

Steps:

  • Preheat the oven to 435 degrees F (225 degrees C).
  • Place tortilla on a pizza stone and brush with 1 tablespoon olive oil. Sprinkle with oregano, salt, and pepper. Layer with zucchini slices, tomato slices, spinach, olives, and Parmesan cheese. Add more oregano, salt, and pepper, then sprinkle with red pepper flakes. Drizzle with remaining olive oil.
  • Bake in the preheated oven until tortilla is crispy and cheese is melted, about 15 minutes. Remove from the oven, slice, and eat.

  • Prepare pizza dough according to package directions. With floured hands, press dough onto a greased 12-in. pizza pan. , Spread Alfredo sauce over dough to within 1 in. of edges. 2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Heat oven to 425°F. In medium bowl, place grape tomatoes and vinaigrette; stir to coat. Set aside.
  • Cook spinach as directed on box. Squeeze to drain well.
  • On ungreased cookie sheet, place pizza crust. Spread spinach evenly over crust; sprinkle with pepper. With slotted spoon, remove tomatoes from vinaigrette; arrange tomatoes over spinach. Top evenly with mozzarella cheese.

For the flat bread:
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. black pepper
2 tbs. canola oil
1 1/4 cups warm water
Dusting of cornmeal
For the Spinach and Tomato Topping:
10 oz. box of frozen chopped spinach
3 cloves of garlic chopped fine
1/4 cup Italian style bread crumbs
2 vine ripe tomatoes - sliced
6 oz. Roth Gran Cru Cheese - grated (or any cheese)
2-3 tablespoons of olive oil

Steps:

  • For the flat bread: Preheat Oven 400 degrees: Place the flour, baking powder, salt and pepper in a bowl. Make a well in the middle and add the oil and stir. Slowly add the water while stirring. Bring the dough together and place on a floured surface. Knead the dough two or three times; do not overwork the dough. Flour a rolling pin and roll the dough out to fit your pizza pan. Dust the pizza pan with cornmeal before placing the dough on the pan. Bake the crust for approximately 8 - 10 minutes before putting the topping on. For the Spinach and Tomato Topping: Heat a frying pan and place the frozen spinach in the pan. Cook on a low heat, until the spinach is thawed and the moisture is evaporated. Add the bread crumbs and garlic; toss and turn the heat off. Top the baked pizza crust with the spinach and bread crumb mixture followed by the tomato slices then the grated cheese. Drizzle the pizza with olive oil. Bake 12 - 15 minutes or until the cheese is slightly golden.
