This is super simple, and even hard-core Texan meat eaters who have never eaten a vegetable in their lives like it. You can substitute yogurt for the sour cream if you want a lighter version.

1 cup light sour cream
1 (7 ounce) can green salsa
1 bunch fresh spinach, rinsed and thinly sliced
2 cups shredded Monterey Jack cheese
1 (10 ounce) package corn tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small bowl, stir together half of the sour cream and the green salsa. Spread enough to coat the bottom into a 9x13 inch baking dish. On each tortilla, spread a small amount of the salsa and sour cream in the center. Lay a small handful of spinach over that, and sprinkle with Monterey Jack cheese. Roll up, secure with a toothpick and place into the baking dish. When all of the tortillas are in the pan, pour the remaining salsa over the top and sprinkle with the remaining cheese.
  • Bake for 20 to 25 minutes in the preheated oven, until the enchiladas are browned and heated through.

1 1/2 lbs tomatillos
1 large onion
1/2 jalapeno
1 tomatoes
2 1/2 cups water
1 cup cilantro
1 1/4 teaspoons salt
1/2 large onion
1 bell pepper
2 garlic cloves
2 tablespoons vegetable oil
1/4 cup water
1 teaspoon salt
6 cups fresh spinach
12 corn tortillas
1 cup oil
3 cups monterey jack cheese

Steps:

  • For Salsa Verde:.
  • In a large stock pot, add tomatillos, chopped onion, chopped tomato, diced jalapeno, and water.
  • cover and simmer over low about 45 minutes.
  • Clean cilantro. remove the stems,.
  • Add cilantro, garlic and salt to blender and blend on high 2 minutes.
  • Add simmered salsa. Blend.
  • Set aside to cool.
  • For enchilada stuffing:.
  • Saute onion, bell pepper, and garlic in oil until tender.
  • Add remaining stuffing ingredients and simmer over low heat 8-10 minutes.
  • Drain excess liquid. Set aside.
  • For enchiladas:.
  • Heat vegetable oil over medium heat.
  • Dip each tortilla in hot oil until pliant.
  • Stack on a plate until finished with all 12.
  • Place 2 T of spinach mixture and 1 T shredded cheese into each tortilla.
  • Roll up with open side down in a baking pan.
  • Repeat until all tortillas are rolled up.
  • Pour tomatillo sauce over enchiladas and add leftover shredded cheese.
  • Bake at 350°F for about 10 minutes until cheese is melted.

1 tablespoon butter
½ cup sliced green onions
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
1 cup ricotta cheese
½ cup sour cream
2 cups shredded Monterey Jack cheese
10 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.
  • In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.
  • Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

16 ounces green salsa verde (1 bottle, divided)
1 cup sour cream
½ cup chopped cilantro (divided)
3 boneless, skinless chicken breasts (cooked and shredded)
8 flour tortillas
3 cups shredded Monterey Jack cheese
1½ cups shredded lettuce
2 tomatoes (diced)

Steps:

  • Preheat oven to 350 degrees.
  • Pour 1/2 cup salsa verde in the bottom of a 9 x 13 inch baking dish.
  • In a small bowl, mix together remaining salsa verde, sour cream, and 1/3 cup chopped cilantro.
  • On each tortilla place an equal portion of shredded chicken, 2-3 spoonfuls of salsa verde mixture, and 2 Tablespoons shredded cheese.
  • Roll up and place each tortilla seam-side down in 9 x 13 inch baking dish. Pour remaining salsa verde mixture over the top, then top with remaining cheese.
  • Bake for 20-25 minutes, until edges start to turn a golden brown. Remove from oven and top with remaining cilantro, shredded lettuce and diced tomatoes. Serve warm.

1 can (6 ounces) tomato paste
3 to 4 teaspoons chili powder
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 greens onions, chopped
1/3 cup sour cream
1/4 cup 4% cottage cheese, drained
1-1/2 cups shredded Colby/Monterey Jack cheese, divided
6 to 8 corn tortillas (7 inches)

Steps:

  • For the sauce, whisk the broth, tomato paste and chili powder in a saucepan. Simmer, uncovered, for 5 minutes. , Meanwhile, combine spinach, onions, sour cream and cottage cheese in a bowl; stir in 1 cup shredded cheese. Spoon 1/2 cup of the sauce into a greased 11x7-in. baking dish. 1 cup small-curd cottage or ricotta cheese
1/2 cup sour cream
6 oz. (1 1/2 cups) shredded Monterey Jack cheese
12 (6-inch) corn tortillas, heated
1 (10-oz.) can Old El Paso™ Mild Enchilada Sauce
Sliced green onions, if desired

Steps:

  • Heat oven to 375°F. Melt margarine in large skillet over medium-high heat. Add 1/2 cup onions; cook and stir 2 minutes or until crisp-tender. Add spinach; cook 1 minute or until spinach is thoroughly heated, stirring occasionally. Remove from heat. Stir in cottage cheese, sour cream and 1 cup of the cheese.
