- Boil the tortellini to package instructions - 7 minutes and drain and add to a large mixing bowl.
- Next, add the tomatoes, parmesan cheese, parsley and a pinch of salt and pepper and toss to combine.
- In a small mixing bowl add all the vinaigrette ingredients and whisk well and then pour over the pasta salad and gently toss to coat. Transfer the pasta salad to a serving dish and enjoy! :)
