EDAMAME SOUP WITH MUSHROOMS AND SPINACH
Steps:
- 1. Heat a medium pot over medium-high heat, add 1 tablespoon oil, the scallion whites, and garlic. Cook until softened, 1 minute. Add 7 cups of water, the edamame, and potato; season with salt and cover. Once the soup boils, remove the lid and cook until the edamame and potato are tender, 15 to 20 minutes. Cool slightly and then carefully blend with an immersion until smooth (or in a traditional blender in batches). Keep warm.
- 2. Meanwhile, heat a medium skillet over medium-high heat, add the remaining 1 tablespoon oil, then add the mushrooms, ham, if using, and scallion greens. Cook until the mushrooms brown, about 3 minutes, and then add the spinach, stirring until it wilts. Remove from the heat, season with salt and pepper.
- 3. When ready to serve, gently reheat the soup and add rice wine vinegar. Ladle soup into 4 bowls and spoon some of the mushrooms, ham, and spinach into each bowl. Drizzle in the hot sauce as desired. Serve.
MEDITERRANEAN SPINACH AND POTATO SOUP
Created for RSC #6. I've always been a big fan of spinach (thank you Popeye). I also love potato soup (thank you school lunches). Thanks to Susie D for putting both ingredients in the contest list so I could combine the two.

Steps:
- Melt the butter in a 4 quart saucepan
- Add the basil, coriander seeds and the leeks
- Cook until the leeks are tender, stirring often
- Add the cubed potatoes, broth and water
- Heat to boiling, reduce the heat to low
- Cover the pot and simmer for 25 minutes until the potatoes are tender, stirring occasionally
- Stir in the spinach, lemon juice and salt and pepper
- Simmer for 5 minutes
- Serve garnished with a dollop of sour cream or yogurt

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-12 minutes or until tender. Drain. Mash 2 cups potatoes; set aside., In a Dutch oven, saute leeks in oil until tender. Whisk the flour, bouillon granules and broth until smooth. Gradually stir into pan. Add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in mashed potatoes. Add spinach, salt, pepper and remaining potatoes; cook just until spinach is wilted. Sprinkle with cheese.

- Add onions and celery.
- Cover and cook until tender - about 15 minutes.
- Stir occasionally.
- Blend in flour, and add potatoes, water and salt. Stir constantly until boiling.
- Simmer 30 minutes.
- Add spinach cook 2 minutes.
- Then add cream.
- Top with grated cheese if desired.

SPINACH AND POTATO SOUP

Steps:
- Heat the oil (the recipe says virgin olive oil I must add).
- Saute the onione till translucent.
- Add the ginger and garlic and saute Add the spices and cook over medium heat for 2-3 mins stirring now and then Add the spinach, potatoes and coconut and stir till the spinach has wilted.
- Take care not to overcook the spinach.
- Pour in the stock and heat until it boils.
- Lower the heat and simmer for 15 mins till the potatoes are well cooked.
- Take off fire.
- Cool.
- Blend in a mixer until smooth.
- Return to the vessel and re cook.
- adjust the consistency to what you like (thick or thin).
- (add water or stock if need be) Serve in bowls with a swirl of the yoghurt.

- Caramelize the sliced onion with olive oil in a medium soup pot. Cook the onion at a medium heat and try to limit any blackening on the onion while it caramelizes as that can impact the colour of the soup when it is pureed.
- Add the chicken broth and the edamame beans. Bring to a boil and lower the heat so that it has a low boil. Cook for 15 minutes.
- Stir in the baby spinach, salt, pepper and mint. After about two minutes, remove the pot from the heat. The spinach should be wilted.
- Add the cream and puree in a blender until smooth and creamy. It may be necessary to puree in multiple batches.
