GREEK PIZZA WITH SPINACH, FETA AND OLIVES
Sun dried tomatoes, spinach, and Kalamata olives boldly flavor this easy pizza.

Steps:
- Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
- Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

- Unroll crust into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Brush with oil; sprinkle with garlic. - In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Knead for 1 minute. Cover and let rest for 15 minutes., Roll into a 12-in. circle. Transfer to a greased 12-in. pizza pan. Cover and let rise in a warm place until puffed, about 20 minutes., Sprinkle with garlic and garlic salt. Top with the spinach, onion, mushrooms, cheeses and basil. This was a result of craving pizza but not having the 'traditional' ingredients on hand. I'd like to think this is a bit healthier than most pizzas. I listed the avocado as optional because some people can't imagine that on pizza, but it's really good.

- On top of pizza crust, spread the alfredo sauce evenly.
- Sprinkle the Italian seasoning and garlic on top of the sauce.
- Add feta, parmesan, mozzarella cheeses.
- Spread the spinach across the pizza.
- Top with thin tomato slices, and finally, the avocado slices.
- Bake at 425 for about 20 minutes, depending on the type of crust you're using.
SPINACH FETA PIZZA II
For this, I decided to scale down one of my dough recipes (and put it in here) to make one thin crust 10" pizza, using my crisp-perfection method, and the same spinach filling used in Recipe #425059. I like Enrico's Natural Pizza Sauce the best, feel free to use whatever sauce you like. This uses more vegetables and less cheese than most pizza recipes and gives a nice Mediterranean flair. Could pair nicely with some shrimp or chicken for a one-dish meal. 3/4 cup AP flour + 2 1/4 tsp vital wheat gluten = 3/4 cup bread flour

- Proof the yeast with the honey and warm water in a bowl. Let it sit 10-15 minutes, or until foamy.
- Add the olive oil and salt.
- Add the flours and knead by hand until elasticy, about 5 minutes.
- Cover loosely with a dish towel and let rise for 20 minutes.
- Grease a 10" pie pan with cooking spray or a little olive oil and lightly dust with flour.
- Stretch the dough to fit the pan and make sure it plunks down in there well, and that it's puffier at the edges than the middle. Poke holes in the dough with a fork, then let it bake at 400F for 5-8 minutes.
- While it bakes, make the spinach feta topping by running the spinach through a food chopper/processor until it has about the same consistency as tabouleh, then put into a mixing bowl.
- Finely grate the feta cheese with a grater or food chopper then mix with the spinach.
- Add all the other ingredients on the list for the topping to the bowl and mix thoroughly.
- After the crust has prebaked, add the sauce of your choice. Then spread the spinach feta topping on evenly. Feel free to add more oregano, cracked red pepper, other toppings like artichokes and/or mushrooms, etc.
- Bake for another 15-20 minutes. Turn on the broiler for about 5 minutes to get a nice crispy crust.
