MANDARIN ORANGE SALAD
This Mandarin Orange Salad is the summer side dish that goes with everything. Sweet oranges, crunchy almonds and a zingy bite from a quick homemade vinaigrette that comes together in minutes.

Steps:
- In a jar or salad dressing container, combine the 1/4 cup oil, 2 Tbs sugar, 2 Tbs vinegar, 1/2 tsp salt, a dash of pepper and a dash of hot sauce. Whisk to combine and stir up / shake right before serving as the oil and vinegar will separate.
- Heat a dry pan over medium high heat on your stovetop. Add 1/4 cup sliced almonds to the pan and move pan in circular motions so the nuts move around and get toasted evenly. Keep an eye on the almonds so they don't burn! Once toasted and fragrant, transfer the toasted nuts to a cup or plate until you're ready to assemble your salad.
- Combine 16 oz fresh spinach with 1 15oz can drained mandarin oranges in a large salad bowl. Add the toasted almonds to the salad. Add as much dressing as desired to the salad and toss to evenly coat the spinach leaves.
- Serve immediately!

- In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

WILTED SPINACH SALAD WITH BALSAMIC-HONEY VINAIGRETTE

- Trim, wash and dry the spinach thoroughly and place in a salad bowl.
- Coat a saute pan with 2 tablespoons olive oil and put over medium heat. Fry the prosciutto and garlic for a minute to flavor the oil, and then add the mushrooms and onions. Saute the mushrooms and onions until they are slightly brown and tender, about 3 minutes.
- Scrape the mixture on top of the spinach, return the pan to the stove. Add balsamic vinegar and scrape up the bits at the bottom of the pan. Add remaining oil and honey. Swirl pan around for a minute to warm the vinaigrette.
- Pour the vinaigrette over the salad, top with Gorgonzola. Season with salt and pepper, toss, and serve immediately.
SPINACH SALAD WITH MANDARIN POPPY SEED DRESSING
If you've never tasted toasted pine nuts before, then this recipe will make you a fan! (They can easily be found in any bulk food store). This is the recipe that also started my love affair with balsamic vinegar, all the different flavors blend marvelously well in this awesome salad!

Steps:
- Place pine nuts in a small frying pan and toast on medium heat until golden, stirring constantly to prevent burning.
- Cool and set aside.
- Core apple and cut into 1/2 inch chunks.
- Coat in lemon juice as you cut it up to prevent browning.
- Set aside.
- To prepare dressing: In large bowl, whisk together orange juice, balsamic vinegar, oil, honey, poppy seeds, mustard, salt and pepper.
- Add spinach and toss to coat well.
- Arrange spinach in individual salad bowls and top with apple chunks, drained mandarin orange segments, and toasted pine nuts.

- In a blender, or food processor, combine the Mandarin Oranges and the Italian dressing.
- Blending until smooth.
- Stirring in Poppy Seeds, if using them.
- In a large salad bowl, toss the Spinach leaves and the Fresh Orange Sections together.
- Add half of the dressing mixture, continue tossing gently, until mixed well.
- Serve and Enjoy.

BEAUTIFUL SALAD
A spur-of-the-moment creation when I wanted something with a great flavor punch and lots of color, plus quick to prepare---this one fills the bill, with baby spinach and colorful cranberries and mandarin oranges, plus the crunch of sweetened almonds and the pungent feta cheese---a new favorite at our house! You may substitute blue cheese for the feta and any kind of sweetened pecans or walnuts, if desired, for the almonds.
