1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1/3 cup KRAFT Grated Parmesan Cheese
1/4 cup chopped walnuts, divided
1 clove garlic, peeled
2 Tbsp. olive oil
1 cup KRAFT Shredded Mozzarella Cheese
lower-sodium stoned wheat crackers

Steps:

  • Heat oven to 350°F.
  • Process spinach, Parmesan cheese, 2 Tbsp. nuts and garlic in food processor or blender until blended.
  • Add oil in steady stream to spinach mixture through pour spout of food processor container, processing continuously until mixture is well blended. Spoon into 2- to 3-cup baking dish; stir in mozzarella cheese and remaining nuts.
  • Bake 15 min., stirring after 8 min. Serve on crackers.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
2 large eggs, divided
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

1 tablespoon butter
½ cup finely chopped onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
¾ cup mayonnaise
1 (8 ounce) package shredded mozzarella cheese
1 ½ teaspoons ground nutmeg
salt and pepper to taste
1 (12 ounce) package refrigerated buttermilk biscuit dough

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a miniature muffin pan.
  • Melt butter in medium saucepan over medium heat. Stir in the onion and cook until tender and lightly browned.
  • In a medium bowl, mix together onion, spinach, mayonnaise, mozzarella cheese, nutmeg, salt and pepper.
  • Unroll buttermilk biscuit dough. Separate each biscuit into two. Place biscuit dough halves into the prepared miniature muffin pan, forming small cups that extend slightly beyond the rim. Fill the biscuit dough cups with desired amounts of the onion and spinach mixture.
  • Bake in the preheated oven 12 minutes, or until biscuit dough and filling are lightly browned.

3 tablespoons unsalted butter
1 ½ cups finely chopped yellow onion
3 pinches herbes de Provence, or to taste
salt and ground black pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and drained
butter-flavored cooking spray
8 cups cubed Italian bread
1 cup shredded reduced-fat mozzarella cheese, or more to taste
9 large eggs
1 cup skim milk

Steps:

  • Melt butter in a medium skillet over medium heat. Add onion and saute until soft, about 5 minutes. Add herbes de Provence, salt, and pepper; continue to cook for 1 minute more. Stir in spinach, remove from heat, and set aside.
  • Spray the inside of a 3-quart (9x13-inch) baking dish with cooking spray. Layer the bottom of the dish with 1/3 of the bread cubes. Top with 1/3 of the spinach mixture and 1/3 mozzarella cheese. Repeat these layers twice more with remaining bread, spinach mixture, and cheese.
  • Combine eggs, milk, salt, and pepper in a medium bowl. Whisk together until blended. Pour evenly over the bread and spinach layered in the baking dish. Cover with plastic wrap and chill for at least 8 hours, up to 1 day.
  • Remove from the refrigerator 30 minutes before baking to allow pan to get to room temperature.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake, uncovered, in the preheated oven until puffed, golden brown, and cooked through, 45 to 55 minutes. Let stand at least 5 minutes before serving.

½ cup spinach, cooked, drained
2 cups shredded mozzarella cheese
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
2 cups flour
4 eggs, beaten
2 cups seasoned breadcrumb
canola oil, for frying
marinara sauce, for dipping

Steps:

  • In a medium bowl, combine the cream cheese, spinach, mozzarella, salt, pepper, and garlic powder, stirring until thoroughly mixed.
  • Transfer the mixture to a square baking pan lined with parchment paper and spread the mixture evenly in the dish.
  • Freeze for 30 minutes.
  • Invert the frozen spinach dip onto a cutting board and remove the parchment paper.
  • Slice the block into 1-centimeter strips, then slice the strips in half into sticks.
  • Place the flour, eggs, and breadcrumbs into three separate bowls. Dip the spinach dip sticks into the flour, then the eggs, then the breadcrumbs, then back into the eggs, and finally back into the breadcrumbs. Set the breaded sticks aside on a plate.
  • Heat oil in a pot over medium-high heat. Fry the breaded sticks for about 30 seconds to a minute, until golden brown.
  • Cool, then serve with marinara sauce!

Frozen Pie Dough (thawed)
1/2 cup Ricotta cheese (strained)
1/2 cup Mozzarella cheese (shredded)
1/2 cup Parmigiano-Reggiano (grated and divided)
9 ounces Frozen Spinach (thawed and drained)
Salt and Pepper to taste
Olive Oil

Steps:

  • Preheat oven to 350 degrees F. Place spinach in a clean kitchen towel and wring out any excess liquid. In a large bowl, combine the ricotta, mozzarella, spinach & half of the Parmigiano-Reggiano. Season with salt and pepper to taste. Add a small amount of olive oil to help combine if necessary. Divide the dough in half. On a lightly floured surface, roll out the pie dough into two 4x12 inch rectangles, about 1/4 inch thick. Spread the mixture down the center of the dough, lengthwise. Brush the edges of the dough with water and roll crosswise to seal and encapsulate the filling. Slice into 1 inch bite-sized pieces and arrange, cut side up, on a parchment lined baking sheet. Drizzle with olive oil and sprinkle with the remaining parmesan cheese. .step 4ingredients instructions Bake for 15 to 20 minutes or until golden brown. Remove from oven and arrange on a platter.
